Food Recipes & Cuisines
Vegetable Semolina Paneer Nuggets - Mrs. Pratima Jain
W/O Inder Jit Jain (Mech.)
Ingredients:

1. 2 tablespoons butter
2. 2 cloves of garlic chopped
3. 50 gm. grated carrot
4. 50 gm. finally cut beans
5. 50 gm. sweet Corn
6. 50 gm. chopped coriander
7. 100 gm. grated paneer
8. 1/2 cup semolina (sooji)
9. 1/2 cup flour(maida)
10. 1/2 cup full cream milk
11. salt to taste
12. 1 teaspoon red chili powder
13. 1 cup breadcrumbs
14. Oil for frying

Method:-
Add butter and garlic in a pan and sauté for 1 minute.
Now add cut beans, carrot and sweet corn and sauté it lightly.
Transfer sautéed mix to a bowl.

Lightly roast semolina in a pan, add milk to the semolina and


cook it for about two minutes and turn off the stove.

Add the sautéed combination of vegetables and the grated


paneer to the semolina mix.

Add salt to taste, chili powder and chopped coriander. Mix well to
form a dough.

Make oval shape nuggets from the dough & roll these in flour.
Dip each nugget in water and quickly take it out so that the
nugget is slightly wet.
Now roll wet nuggets in the crumbs.

Deep fry these nuggets (or shallow fry) till they are golden brown.

The Nuggets are ready to be served.

You can serve with either curd mint (pudina) dip, or tomato ketchup or
coriander chutney or mayonnaise dip to your preference.

Caramel Chicken Smt. Savita Luthra Spouse of Ashok
Luthra (Elect.)
Ingredients:
1. 500 grams Chicken
2. 1.5 tbsp Worcestershire sauce
3. 1 tbsp lemon juice
4. 1 tbsp cooking oil
5. 1 tbsp Sugar
6. Salt to taste
7. Pepper to taste

Method:

Make long slits in the chicken pieces.

Apply the mixture of Worcestershire sauce, lemon juice,


salt and pepper and marinate for 3-4 hours.

You can add more or less of the marinate mix according to


your liking.

Heat 1 tbsp oil in a pan on slow fire, add 1 tbsp sugar and
stir on slow fire till the mixture turns golden brown.

Add half cup of water to the caramelized sugar.

Add marinated chicken and cook till the chicken is cooked


and tender and the sauce is of thick consistency.

Serve with boiled or roasted vegetables.

LagaNu Custard - Mona Rekhi Daughter of Manohar Lal
Sidhana (Aero.)

Ingredients:

1. 1.3 liters (51/4 pints) milk


2. 200gms (7 oz) sugar
3. 6 egg yolks
4. 3 egg whites
5. 1 tsp rosewater
6. 3 tbsp ground almonds
7. pinch of nutmeg

Method:

Boil the milk in a saucepan.


Add the sugar and continue boiling until the sugar has dissolved and
the milk has reduced to half.

Remove milk pan from the heat and allow to cool.

Beat the egg yolks and egg whites separately and add to the cooled
milk.

Add rosewater, ground almonds and nutmeg to cooled milk.

Blend well and pour into a greased baking dish and bake in a hot
oven at 350 F for approximately 30 minutes.

Serve hot or cold.

Healthy Boneless chicken Mrs. Sumeena Chohan
Daughter in Law of Sukhdev Chohan (Elect.)

Ingredients:
Boneless chicken thighs1 kg
Hung curd 5-6 tablespoons
Malai /cream 2 tablespoons
Whole Cashews 7-8 pieces
Green chilies 3-4
Coriander leaves a few

Mix all together

Add

Salt according to taste


Black pepper 1 teaspoon spoon
Oregano 1 teaspoon
Dried Basil 1 teaspoon
Chili flakes 1 teaspoon
Lemon - half of lemon
Refined oil 2 spoons

Method:

Grind cashews, green chilies and some coriander in a


mixer.

Mix well all the ingredients together and keep aside


for at least 2 hours.

Put some oil in a pan and place the marinated thigh


pieces, start cooking on slow flame for 5-10 minutes
or you can cook it in oven.

To have a full meal platter, you can serve with boiled


and sautéed vegetables and garlic bread.

Stuffed Bell Peppers Ms. Meganne Kaul Daughter in

Ingredients:
1. 4 Bell Peppers
2. 1 teaspoon Olive Oil
3. ½-1 Onion diced
4. 1 teaspoon chili powder
5. ¼ teaspoon salt
6. 1.5 Cups Chopped mushrooms
7. 1 Cup Cooked tomatoes chopped
8. 1 Cup Frozen corn
9. 2 Cup Rice
10. ½ cup chopped walnuts
11. ½-1 Cup shredded cheese

Method:
Pre-heat oven to 350 degrees F. Cook rice in rice
cooker till done.
Cut off the tops of the peppers (So they look like a
hat). Scoop out the seeds and membranes and leave
peppers intact.
Steam peppers in microwave with 2 tablespoons water
for 4-6 minutes, drain and cool.
In a skillet, heat oil on medium heat, add onion,
oregano, chili powder, salt and cook until onions are
translucent (about 5 minutes). Add mushrooms and
cook until mushrooms release their liquid (about 5
minutes) add tomatoes, corn and cooked rice until
liquid is absorbed
Add walnuts and cheese if desired and mix well.
Fill each pepper with the rice mixture. Top with the
pepper hat and bake upright in a round or square dish
for 30 minutes.
