BAKERY / CENTRAL KITCHEN CLEANING PROCEDURE

WEEKLY TASK

A Hoods and Filters


1. Hood filters must be cleaned weekly. Wash in hot Food Service Degreaser solution.
Rinse thoroughly and allow to air dry before replacing.
2. Donut and oven hoods should be cleaned weekly with Food Service Degreaser.

Storage Shelving and Floor Pallets


B 1. Remove product from storage shelves and wash shelves with hot detergent
solution, rinse and sanitize with Quat Rinse.
2. Move pallets to allow areas under them to be cleaned.

C Reach-In Retarders and Freezers


1. The inside should be cleaned thoroughly. Remove the metal shelves and wash in the sink.

D Walk-In Freezer
1. Scrape using a metal bench scraper and follow with sweeping.

E Sheeter
1. Dismantle and clean inside thoroughly.

F Racks
1. Donut rack should have sheet pans put on the bottom frame to catch donut glaze from the
glazing screens.
2. All racks should be washed with pressure hose/washer and sanitized.

Bake Ovens

Weekly Spray Cleaning Procedure - Interior
1. Preheat oven to 150ºF - turn heat off.
2. While oven surfaces are still warm, spray interior walls with strong solution of hot water
and Food Service Degreaser solution and let soak in.
3. Let solution stand on soil for two to five minutes to permit chemical cleaning action to take
place.
4. Baked-on grease or carbonized food soil may need to be loosened with a
stiff brush or scraper.
5. Use a damp cloth to pick up the dissolved and loosened soil.
6. Rinse with clear water and let air dry.

H Deep Fryer Cleaning Procedures


1. Consult manufacturer's recommendations on cleaning schedule and procedures for filtering oil and maintenance.

I Range Hoods with Removable Filters


Weekly Spray Degreasing
1. Range must be cool enough to permit your hand to touch any part of the top.
2. Remove filters and clean in the dishwashing machine or by manual method (see following procedure).
3. Fill hand held sprayer with warm Food Service Degreaser.
4. Spray all inside and outside hood surfaces.
5. On heavily soiled areas or where grease is baked on, loosen soil with a brush until the grease and soil is
dissolved and loose. Clean out drain trough around the lower inside edge of the hood as well as the channels which hold the filters.
6. Flush off soil and solution with clear, hot water. Allow inside surfaces to air dry and wipe dry outside surfaces.
7. Replace clean filters.
