Nonconformance (problem) description


On December 31, 2022, a food safety incident occurred at BRT and as part of the review, compliance with the BRT catering agreement and
food safety requirements / expectations were checked. Gaps were identified related to some food items (e.g., prawns, suya spices) delivered at
BRT without being jointly inspected by Contractor and Company representatives, concerns around sourcing of food items and instance(s) where
freezer doors are kept open for an extended period impacting on maintaining the right storage temperatures consistently.
Cost or Characterized Impact of NCR:
• Noncompliance to contract service requirements:
‒ Exhibit A, Description of Services, Section 2.0 (p) requiring all deliveries of food and sundry items to be jointly inspected by
Contractor and Company representatives
‒ Freezer doors within the kitchen are sometimes kept open for an extended period not allowing proper temperature to be
maintained
• Food safety concerns
• Client service delivery / customer dissatisfaction
Immediate corrective (problem fix/disposition) action taken
• Communication issued to Courdeau to:
‒ Provide detailed waybill to E&PS QA/QC representative on site for each shipment so it can be compared with the receiving
checklist prior to sign off to ensure no items are missed
‒ Ensure their representative reviews the receiving checklist for completeness before signing off
• Courdeau to ensure all doors for temperature-controlled storage are not kept open for extended periods so appropriate temperature
can be maintained for food safety
Long term (sustainable) corrective or preventative action (if applicable)
• Courdeau to declare all food items brought into BRT to the E&PS QA/QC representative on site for inspection prior to use
• Courdeau to provide veterinary / health certificates for all meats to the E&PS QAQC representative on site
• Courdeau to provide list of all their pre-qualified sub-contractors used on this service, indicating items supplied by each vendor
• Courdeau to ensure that all spices and other processed/packaged items come in proper packaging with content labels, brand,
NAFDAC # and manufacture/expiry dates printed, as applicable
• Courdeau to conduct food safety refresher training for all their personnel at site and provide E&PS Catering Supervisor with the signed
attendance sheet
• Courdeau to perform periodic inspection of their supplier’s facilities and provide copies of the inspection reports to E&PS Catering
Supervisor:
‒ Semi-annually, for all frozen food, including meats, poultry, seafood, and dairy products; and
‒ Annually, for all other items, including dry/canned/bottle, fruits and vegetables, and housekeeping/cleaning items
• Courdeau shall not directly purchase any items for Company use from the local market. Courdeau shall procure food and other items
required for the provision of services from approved pre-qualified suppliers only. Approval shall be obtained from Company
representative prior to Contractor engagement of the suppliers
• Courdeau Management to visit BRT/LC quarterly (at a minimum) to reinforce safety (“boots on ground”), for inspection / audit and
boost employee morale
