Introduction:
• The Argentine lemon agro-industry maintains a place of importance worldwide.
During 2013, Argentina was the main producing and industrializing country and
the third exporter of lemon (Paredes et al., 2014), as has been the case for some
years. Tucumán annually concentrates around 87% of the production and 86% of
the total area of Argentina devoted to lemon cultivation, which positions the
province as the most important producing center of this citrus (Paredes et al.,
2013
) . Lemon processing consists of three well-defined primary stages: the extraction
of oil and juice from the fresh fruit by mechanical means, the washing of the peel
and its drying. At present, no available records of evaluations of the industrial
processing of lemon in the specified sectors have been found in the bibliography.
Production process
• Plantation: It would begin with the planting of 144,000 hectares of lemon and
pink grapefruit trees in a tropical area (Michoacán). This produces around 720,000
tons of lemons per year
• Quality filter: By our farmers, the damaged or bad lemons would be filtered on the
harvest date and the best quality lemons would be separated in the warehouse.
• Washed sector: At this stage the lemons would be processed in a machine that
washes and purifies the lemons to be able to transfer them in the most optimal
presentation.
• Dried sector: Here the lemons will continue in the production process to be
transferred in a drying machine to nourish the properties of the fruit.
Supply chain
• The fruits will be transferred in wooden boxes of 5
kg each box for packaging.
• Supply: The trailers will be supplied from Apatzingán,
Michoacán to send 24 tons by land to different wholesale
customers where the main recipient is Limon's) Limon's,

• It is planned to make 5 shipments per month.
Improvement of the efficiency and
productivity indexes of the organization.
• It is planned to buy agricultural machines that are capable of cutting and
washing the lemon harvest in order to make our time and harvest more efficient
and to place more monthly orders and therefore more customers.
• Reaching to work in more harvest plants to be able to work more orders in low
harvest seasons, since currently this process is started in the winter season
and finished in the summer season.
