Banana Peel Shanghai Recipe
INGREDIENTS
10 pcs banana peel
1 medium-sided carrots, grated
1 large onion, minced
4 cloves of garlic
30 grams oyster sauce
a bunch of spring onions, minced
1 piece egg
salt and pepper to taste
15 to 20 pieces lumpia wrapper
oil for frying
DIRECTIONS
Peel the bananas. Separate the peels from the fruit. Use the fruit for other purposes. Remove the black
spots on the skin and the ends of the peels.
Transfer the banana peels in a pot with water. Cover the pot and boil for 3 to 5 minutes.
Drain the banana peels and let it cool down. Slice the peels into tiny pieces. Chop until finely minced.
For the lumpia filling, transfer the minced banana peels in a large bowl. Add the grated carrots, minced
onions, minced garlic, spring onions, oyster sauce. Season with salt and pepper. Add the egg. Mix well
until the ingredients are well-combined.
Scoop one full spoon of the lumpia filling on one side of the wrapper ang carefully arrange the filling.
Wrap and roll the lumpia, ensuring that the sides are closed. Brush the other end with water to help seal
the edge.
Heat some oil in a pan. Fry the banana peel shanghai in batches until golden brown. Flip the other side
to cook.
Transfer the cooked shanghai in a strainer or paper towel to drain excess oil.
Place the banana peel Shanghai in a serving dish and serve with your favorite dip. Enjoy!

Banana peel Curry Recipe
INGREDIENTS
2 banana peels
1 onion yellow
2 cm fresh ginger
1 tablespoon mustard
300 ml water
black pepper
salt
INSTRUCTIONS
1. Start in the morning and keeps the peels of two bananas aside. Put them in a bowl with water and
add some turmeric (¼ tablespoon). Let them soak at least 1 hour, but you can leave them there also for
the rest of the day.
4. Halve the red chili pepper and remove the seeds. Then also slice it into fine pieces.
5. Take the banana peels out of the water. Remove the wooden parts and cut them into fine slices of
app. 3 cm long.
6. Heat the coconut oil in a wok. Then add the onions, ginger and chili pepper. Bake them for a few
minutes and then add the spices: red curry paste, the rest of the turmeric powder, the mustard, the
cumin powder, some pepper and salt.
7. Then add the banana slices and the roughly chopped walnuts and bake for a few minutes while
constantly stirring.
8. Pour in the water and let it simmer for 15 minutes, until you have a smooth curry paste. Taste and
season with extra salt or pepper if needed.
NOTES
A good advice: don't throw away the water in which you soaked the banana peels. They are a perfect
fertilizer for your plants.
