1) Sales - Your individual sales compared to the overall club's sales and your co-worker's performance. 2) Paperwork - Your overall familiarity, competence and consistency in completing the required daily and weekly paperwork. 3) Ordering - Your competence and ability to determine what you kitchen uses, the number of deliveries you receive each week and the ability to order enough product to last through until your next order. 4) Receiving - Your knowledge of what was ordered the previous day and to match what is brought in and check it with the invoice. Proper marking of returns and to insure the product is fresh and the temperature is correct. 5) Inventory - Ability to properly identify all products in your unit and to mark them down accordingly on the inventory sheet. 6) Cost Awareness - Your ability to identify cost changes on your invoices from food purveyors and to take note of the changes. 7) Current Inventory - Your familiarization of your current product levels and to utilize specials to take advantage of overstocks. 8) Menu Knowledge - Your knowledge of the menu and descriptions of the menu items therein. 9) Menu Costs - Your knowledge of the costs of items on the menu. 10) Food Safety Knowledge - Your knowledge of food safety temperatures, storage, handling and cross-contamination. 11) Perpetual Awareness - Your knowledge of food pack sizes and the perpetual counts that pertain to them. 12) Cooking Skills - Future use of comment cards and customer feedback. 13) Cleanliness - Judged mainly on your manager's evaluation and randomly conducted pop-in inspections. 14) Specials Creativity - Your ability to utilize as many in-house products as possible in creative and appetizing ways. 15) Personal Hygiene - Every aspect of the way you groom, dress and manicure yourself.
