Introduction
Kolhapur Zilla Sahakari Dudh Utpadak Sangh Ltd Well
known with its popular brand “Gokul” is an Operation Flood
cooperative dairy project established on 16th March 1963.
Since then achieved many land marks in Milk Procurement,
Extension, Animal Health, Breeding, Milk Processing, Product
making and Marketing. At present Gokul has modern 17 Lakh
Litters/day capacity dairy plant , satelite dairy at udgaon , tal
shirol and 4 owned chilling centers having 7 Lakh Liters/day
milk handling capacity with modern Packing Unit at Navi
Mumbai.

successfully completed our visit.
Our deep gratitude to our Director Dr. S.N.Sapali and our Program
Coordinator of ECT Department Dr. S.B. Chavan, Department of
Technology who always been playing a great role in all round development
of the student. We would also like to thank our Faculty In charge Prof.
A.A. Shirolkar and Class coordinator and subject in charge Ms.Pooja
H.Mane. and all teaching and non-teaching staff for their kind support, help
and assistance, which they extended as and when required particularly for
taking keen interest in us to give us excellent and unforgettable facilities. Last
but not the least we wish to thank our friends for cooperating with everyone.
We hope that this industrial report would meet the high standards of all
concerned people and for their continuous co-operation during the whole
period of visit that helped us in enhancement of our knowledge.
Milk Collection :

The milk collection area is called the "dairy dog," and milk cans with
a capacity of 40 liters are used to transport the milk. The cans are labeled with
red and blue colors, with red indicating buffalo milk and blue indicating cow
milk. The empty cans are washed with 90°C water before reuse. The dairy
collects milk from 12 talukas in Kolhapur district and neighboring districts. The
"dairy dog" is open only from 7 a.m. to 11 a.m..
Milk Processing:

For milk pasteurization, milk is heated to 78°C and


immediately brought down to 0°C in a few moments, thus destroying all the
germs in the milk. In order to maintain quality, it is necessary to reach the dairy
dog within one hour from the milking of the cow or buffalo.
Milk Packaging:

The manufacturing milk machine used is the "NICROME


FILPACK CMD ALPHA", and there are eight machines in total. Each
machine can manufacture two 500ml packs per minute. The milk temperature
at the time of manufacturing is nearly equal to 0°C or less.
Capacity:
The milk reception capacity at Gokul Dairy is 5 lakh Liters/day (raw) and
12 lakh liters/day (chilled). The milk process capacity is 15.0 to 17 lakh
liters/day, and the powder manufacturing capacity is 52 MT/day.

Butter Production:
Butter is the largest production after milk in Gokul Dairy,
where 25% of the total milk product is butter. Two types of butter are
produced here, one is yellow-colored cow milk butter, and the other is white-
colored buffalo butter. Gokul Dairy produces approximately 10 tonnes of
butter as per demand.

Milk Powder :
godowns for storing milk powder, and the storage capacity of each godown is
1000 bags.

Pricing :
The 500ml milk price at MRP is around ₹33 to ₹34, while the milk
powder price at MRP is around ₹400 per kg.
Technology:
Pastesurization :

Pasturization is a process by which milk is heated to a specific


temperature for a set period of time to kills harmful bacteria that can lead to
diseases like as listeriosis, typhoid fever, tuberculosis, diphtheria and
brucellosis. Research shows no meaningful difference in the nutrient content of
pasteurized and unpasteurized milk, despite claims to the contrary.
While pasteurization has helped provide safe, nutrient-rich milk and cheese for
more 120 years, some people continue to believe that raw milk is a safe
healthier alternative. Here are some common myths and proven facts about milk
and pasteurization from foodsafety.gov:
 Raw milk DOES NOT kill dangerous pathogens by itself.
 Pasteurizing milk DOES NOT cause lactose intolerance and allergic reactions.
Both raw milk and pasteurized milk can cause allergic reactions in people
sensitive to milk proteins.
 Pasteurization DOES NOT reduce milk's nutritional value.
 Pasteurization DOES NOT mean that it is safe to leave milk out of the
refrigerator for extended time,particularly after it has been opened.
 Pasteurization DOES kill harmful bacteria
 Pasteurization DOES save lives.

Need of Cooling of milk:


The members are facing the problem of
hygienic and timely supply of milk to the society and the society in turn to the
Milk Union. It was also observed that the transportation cost of the collected
milk and the cans used, and its maintenance is a drain on the profits of the
society. These factors are hampering the growth of the society and its capacity
to produce more milk and reach the 1000 liter per day capacity. The members
are mainly women who must take care of household coarse and can devout
only part time for the work of growing cows for milk production. They are
dependent on professional milking man for extraction of milk and for taking it
to the society in the morning and afternoon. 2.2 Objectives of Bulk Milk
Cooler . To arrest bacterial growth, retain freshness and enhance the keeping
quality of milk .To avoid economic losses to the producers due to spillage/
curdling of milk. To make available quality milk for production of quality
products for export as well as to meet the domestic requirements.
Milk Packaging Process:

FILPACK CMD Alpha is another efficient packaging solution for milk and
other liquids. Built substantially shorter than conventional machines, it also
occupies less floor space as no side opening is required.
The impulse seal system is controlled through solid state control technology,
and there is a specially designed film roll unwinding mechanism for smooth bag
pulling.
FILPACK CMD Alpha offers twin heads so you can pack two different
products at the same time. You can even conduct maintenance on one track
while the other is in operation.
This machine pack the 2 half litter pouch of milk in one minute
Automatically.It help the reducing the time of workers to packing the milk
fastly
Accurately.In one hour this Machine pack the 60,000 litter milk.
Milko Tester :
Milko Tester is a device which electronically determines
the Fat % rapidly in milk. Milko Testers, Auto SNF Indicators & Milk
Analyzers are used at primary Dairy Cooperative Societies (DCSs) in villages.
The milk supplied by producer is tested before acceptance and payment is made
on the basis of milk quality. This helps to good quality milk at primary dairy
cooperative as well as at Union level. The transparent process results in
strengthening faith of milk producer on Village Society and Union.
Our Union provides Milko Testers, Auto SNF Indicators & Milk
Analyzers to the DCSs on subsidized rate. Also we provide required Chemical,
Sachet powder & Cleaning solution on subsidized rate. During the year 2021-
22, we have distributed 287 Eco Ultra milk analyzer Machines , 212 ltrascan
Kurian Machines, 12 Aceteroca machines, 77 Akashganga milk analyzer
machines to 468 DCSs.

Conclussion
The Presentation on Gokul Dairy, Kolhapur Zilla Sahakari
Dudh Utpadak Sangh Ltd., provided valuable insights into the
milk processing industry. The report highlighted the company’s
history, milk collection, processing, packaging, and butter and
milk powder production. The report concluded by thanking the
company and individuals who facilitated the visit and provided
valuable assistance. The visit provided a great learning
opportunity for the student, and the knowledge gainedwill be
beneficial in their future career endeavors
