As for the future of the Australian joinery industry, Nick
believes that curated colour options along with modular
offerings is the direction in which it’s heading. “Instead
of offering any colour you want, we really pride ourselves
on curating a colour palette,” he says. “I think the number
one mistake people make is that they get scared of choosing
something wrong, so they go really safe. What we try and
do is introduce colour into people’s lives, because we bring
the experience that allows them to take that risk.”
In line with this, Ensemble offer a full design service for
clients – no matter whether it’s residential or commercial.

for your new addition. “In so many areas of life, you have an
expert telling you what to do – but for some reason at home,

Much of Emma’s home is influenced by her hospitality career,
and not just the kitchen. “So many of the fine-dining restaurants
I cooked at had banquettes or booths, and I remember loving
the sense of feeling tucked away but still part of a larger space,”
she explains about the seating. “A banquette is also a good use
of space. It takes up less space than a table with chairs on all
sides, which was important here as we were trying to squeeze
a lot into a relatively small footprint.” There’s also storage beneath
the bench that runs along the kitchen wall, and deeper cabinets
below the bench that run along the half-wall, for extra storage.
“I love the subtle zoning this creates, and when we have
friends over for dinner, the light from the huge pendant casts
a glow over the banquette area,” says Emma. “It feels lovely.
It’s still connected to what’s going on in the kitchen, but with
a bit of a room-within-a-room vibe. I also didn’t want to be able
to see the kitchen from the lounge room. I spend so much time
in the kitchen from a work perspective that it’s good to have the
visual separation when I’m trying to relax.”
The kitchen’s integrated appliances and cabinetry create
a visually calm eyeline, but behind it Emma has indulged in
some bespoke additions. A multi-use fridge drawer sits snugly
under the stairs and acts as a freezer, a wine fridge or a dry store
area. “At the moment it’s basically my condiment drawer filled
with nuts and pickles,” she admits. As well, a double-drawer
dishwasher creates cleaning shifts when dealing with a high
volume of cookware on busy days, and a silent-pull spice drawer
revealing alphabetical jars sits opposite a plumbed-in La Marzocco
coffee machine. “For two ex-cafe owners, good coffee is really
important, and this machine is also really beautiful,” says Emma.
But there was one non-negotiable for Ed – a gorgeous reverse
osmosis filtration system paired with an alkaline filter.
The island bench has been reserved as a clear space for prep,
with no sinks or space-stealers in sight, and has turned out to be
one of Emma’s favourite elements. “Everyone ends up around
the island bench,” she says. “It feels so connected, and so social
and lovely.” So what would be her measure of a successful
renovation? “I think it’s that we do use all the spaces we’ve
created in the way I thought we would.” Job well done.

hen owners Pricillia and Ashley
walked into this four-bedroom
Federation bungalow on Sydney’s
lower North Shore in early 2021,
they instantly fell for its period
charms. Sinuous ceiling roses,
cornicing and luminescent stained-glass windows, all blissfully
intact, wove a special spell for this couple looking for a new
home. “It ticked all the boxes, with its cottage-like feel, and
all its detailing gave it so much character,” says Pricillia.
But the tired decor – vintage 1990s, with expanses of shiny
knotted pine – marred the magic, and they knew the house
would require work to make it their own. And despite the airy
open plan on the rear, the result of an earlier renovation, when
they walked in the door, rooms flanking the hallway created
a closed-in feel. “While it had lovely high ceilings, it was not
as open as we would like,” says Pricillia. “And it all felt dated.”
Through Instagram, Pricillia encountered the work of Bone
Made principals Leah and Fliss Pitman, which encapsulated the
look she was after. “We liked their portfolio’s warm, earthy feel,
with neutral colours, breezy and airy, using lots of white but not
clinical due to the timber and textures. We felt they could neatly
combine a period cottage feel with the contemporary.”
According to Leah, “Pricillia and Ashley wanted to preserve
the charm and the character, while making everything fresher,
with a light palette and plenty of natural light”. With a young 1 Entry

In a similar vein, the new kitchen serves up Shaker-style 11

joinery – “it needed that extra layer of classic detail so it didn’t
look too contemporary” – and marble-look benchtops echo the 4

The three bathrooms sport terrazzo tiles on the floors and
up to the dado rails. “The clients were set on terrazzo, with its
Art Deco associations, and it blends beautifully with stained-glass
windows,” says Leah. Kit-kat tiles above the rails lend texture.

“Light fittings add depth.


The simple modern pendant

a fascinating fusion of styles”

Pendant lights create statements throughout. The most
striking are the angular lighting strips in the dining area,
up-to-the-minute counterpoints to the flamboyant ceiling rose
directly above. “Bold and contrasting, the light fittings add
depth,” says Leah. “The simple modern pendant in an ornate
ceiling rose creates a fascinating fusion of styles.”
For the furniture, the designer specified a classic, uncluttered
look. This is exemplified in a custom solid-oak dining table,
together with curvaceous Thonet chairs with woven backs that
deliver a nod to the past but without fussiness. “Curves recur
throughout, in the oval dining table, dining chairs, occasional
tables, joinery, main bedroom bedhead and mirrors, creating
a relaxed elegance,” says Leah.
Every space is used. “We spend most of our time in the living
area at the back,” explains Pricillia, “while the front room is used
as a playroom and the study is used by Ashley for WFH. And,
with a second study and appliance nook behind closed doors,
we can shut the clutter away when we have people round.
We wanted a modern, sophisticated home while retaining the
heritage character – and Bone Made have delivered just that.”
Adds Leah: “It was so enjoyable to align a design back to an
earlier period and create a fusion of styles, which is our favourite
type of project. I absolutely love the fireplace. It injects soul and
warmth while referencing the heritage detailing. Once in that
room, you never want to leave.”

more than you think — in this case, 50
per cent more. We thought our budget
was plenty, but there are always variations,
so you have to plan for those.”

solar system,” says the owner. “It was the
largest system we could get in this area and
is linked to an electric heat pump which
helps heat and cool the house.” The house
also features hydronic heating, and is mainly
made of rendered foam, which helps with
insulation. “All the windows are double glazed
and tinted for greater efficiency,” adds the
owner, “with the front north-facing windows
heavily tinted to combat the afternoon sun.”

of his own, Shaun Caton assumed he
would do it again when he and fiancée
Phoebe Simmonds began looking for
a place in Melbourne to transform into
the perfect family home. But when they
found a not-so-perfect house on a tree-lined street in their
preferred suburb of Murrumbeena, they realised knocking
it down and starting from scratch might be a better option.
“We were really keen to buy somewhere in Murrumbeena
because we loved the feel of it – and as soon as we turned into
the street, we knew it was the one for us,” says Phoebe. “The
red-brick house wasn’t in great condition, but it was on a good
700-square-metre block so we knew we could build something
that would work for us, as well as giving us a sizeable yard.”
As co-founder of construction firm The Melbourne Builder,
Shaun turned to their in-house architectural designer, Nuru
Jammeh, to design a single-storey house that would work for the
couple and their children, Tyler, now six, and Remy, nine months.
However, there was an important stipulation. Eschewing
a modern-style home, Shaun and Phoebe wanted a “contemporary
Edwardian” home that blended in with other period homes on
the street. “It was important that our home reflected the street’s
integrity, and we also love the Edwardian style,” says Phoebe.
“We wanted a home with classic character that wouldn’t date.”
Other items on their wishlist included a light-filled kitchen
and living area with space for entertaining, a second living space
for the kids, a private guest retreat for family and friends, and
a mud room with space for shoes, schoolbags and coats.

ometimes, even the best of renovating intentions
falls quickly by the wayside. Dutch stylist Leonie
de Boer knows this all too well – although now,
as she casts an eye around her spacious, light-filled
family home in Aerdenhout, the Netherlands, she
is rapt that her original plans went out the window.
Four years ago, Leonie, her husband Bart and their three
teenage sons made the move to this small but popular village,
located on the edge of Haarlem and less than 20 kilometres west
of Amsterdam. The wish was simple – to find a move-in-ready
home with a villa aesthetic that would suit their lifestyle. One or
two updates, or a few cosmetic touches? Not a problem. Perhaps
some things could change upstairs, and the kitchen could use
a spruce-up. Anything more than that? Not a chance.
“When Bart and I bought the house in 2019, we didn’t really
have the intention of changing much,” insists Leonie. Suddenly,
another voice pipes up: “That didn’t quite work out, did it?”
That voice belongs to local interior designer and furniture maker
Jikke Snelleman, who, with her partner Floor Siteur, founded
Format Furniture around the same time. Leonie had already hired
an interior designer to take care of her proposed minor changes,
but once she spotted Jikke’s work on Instagram and expressed
an interest, the first step to an adventurous collaboration that
has now blossomed into a strong friendship was taken.
The result is that Jikke and Floor have measured, designed
and ultimately created custom-made furniture for the home
down to the centimetre, achieving a bespoke masterpiece.
“When we decided to work together, Floor and I invited
Leonie and Bart to our home on a Saturday afternoon,” says
Jikke. “We did not yet have a showroom, so they were allowed
to open and feel everything themselves in our home. That
conversation felt very good and positive. Leonie and Bart know
very well what they want and what they like – not only in terms
of design, but technically. We really worked as a team.”
One of the first interventions was exchanging the former
conservatory for a new annex made of durable Accoya wood,
which houses the kitchen. “We wanted to bring back something
that would keep the house in balance,” says Leonie. “The annex
creates a spatial and natural transition between inside and outside.”
Much of the credit for what you see belongs to Floor, who
was originally a furniture maker and remains a craftsman in heart
and soul. As Jikke explains, “Put a quarter in it and he’ll tell you
for hours how something is made.” This devotion is best seen in
the kitchen’s custom cabinets. “The design was carefully thought
out,” says Jikke. “There are 41 refined, milled-out cabinet handles,
as well as the interplay of lines and the colour in combination
with the choice of marble. We don’t just build something
without having thought through the aesthetic consequences
in detail. It can really make or break a project.”

The organic process of this renovation meant that once


Leonie saw what Jikke and Floor could whip up in the kitchen,
she was more than happy to let them loose elsewhere. “More and
more things were added, then more still,” she says. An example is
the ensuite to Leonie and Bart’s bedroom. “Together with them,
Floor and I decided to remove the bathroom ceiling – again,
it was not planned – and see what would come out,” says Jikke.
Adds Leonie: “It was a very strange room, but it was only
after the ceiling was taken down that the old beams came out
and we got a feel for the space. There are now walk-in closets
in the middle of the routing between the ensuite and our
bedroom, too. This bathroom now makes sense.”
Although there is the peace and cleanliness of a minimalist
villa, this family home is used intensively daily. “Our sons are
14, 16 and 18, and all still live here,” says Leonie. “In addition,
because of the pandemic, we started to work at home more and
more, and I have just started my own business in the retail sector.”
By making innovative, customised furniture, Format Furniture
were able to help with all that. But do things always stay this tidy?
“Not always,” says Leonie with a laugh. “But three adolescent
sons baking an egg in the evening or having a beer with friends
at the kitchen bar is, of course, very cosy. It is a very nice house
and, in terms of energy, it is just right for us.”

own kitchen from drab to fabulous

Carmel Wylie of GIA Bathrooms & Kitchens based the look
of her renovated kitchen in Melbourne’s bayside suburbs on
its location. “The palette came from our local beach,” she says.
“Natural doesn’t always mean white and timber. The ice blue
is such an easy palette to live with.” The kitchen was relocated
from another part of the house to “make it feel like an
outdoor kitchen with a close connection to outdoors”.

of this kitchen’s client – it was her sister Jinan. “She’s full

These clients of Five Foot One Design were a Sydney couple
with a passion for Venetian glass. They wanted the kitchen of
their small apartment updated with colour and vibrant objects
to reflect their eclectic, high-end aesthetic, and bulk storage.

According to Five Foot One director Kat Thompson, the Fizi
triple ball pendant light from Articolo Lighting was the starting
point. “It’s a perfect feature light to sit above the island bench,”
she says. “We were brave with our approach to colour, selecting
a two-tone kitchen using Dulux Coriole for the lower cabinets
and Dulux Amazon Vine.” Caesarstone Excava was chosen for

eople are looking for more interest in their homes and
are using natural stone to bring that decorative edge.
Though white, grey and beige are still popular choices,
colour and pattern are the order of the day now. But
before you pick out a strongly coloured statement stone, there
are a few things to consider. First, let’s address the basics of our
most common natural stones:
Travertine Usually in a cream, beige or reddish colour,
travertine was formed through the accumulation of calcite
(fossils and shells) in hot springs and contains lots of holes caused
by water running through the stone. You can buy it filled with
resin or cement or unfilled. It’s important to note that extra
maintenance is required by travertine that is not filled.

Granites and quartzite Granites are primarily made of quartz,


feldspar and potassium. They are usually darker in colour and
contain very little calcite. Instead, they have a granular
appearance and heavy crystalline structure, making them very
hard and durable. Quartzite ranges in colour from blues and
greens to pinks. Varieties we like to use include Blue Roma,
Cosmopolitan, Esmeralda and Palomino.
Onyx marble Onyx is made up of calcite and formed similarly
to travertine, being its cousin if you will. It comes in many
colours, including white, blue, brown, red (pink) and black.

HOW AND WHERE TO USE IT


Walls A piece of stone is like a piece of original artwork – there
will never be another the same! Using stone on vertical surfaces
can be a great way to add depth and texture in a timeless
manner. While cladding a wall in stone will not be the most
cost-effective finish, it will certainly impact the space. Common
areas we see stone-clad walls in are powder rooms and in
kitchens on splashbacks and the uprights of island benches.
Floors Natural stone has been used in many important
buildings over the centuries, starting with the amazing palazzo
floors of ancient Italy. Natural stones are hardwearing and can
add depth as well as durability. You can use them in the form
of slabs or tiles, or lay in a more natural organic pattern.
If you’re using any of these products in wet areas such
as bathrooms, make sure you seal them as some products
commonly used in bathrooms can stain stone surfaces.
Benchtops Kitchen countertops (and splashbacks) are probably
the most common applications for coloured stone. But as these
are generally high-use areas, you’ll need to consider all the pros
and cons. Other horizontal surfaces where you might want
to see natural stone include vanities, fireplace surrounds and
bars, where they can add a lovely, luxurious element.
More applications If your budget doesn’t stretch to large
areas of stone or you wish to have a play with some gorgeous
stone types before you buy, consider using it in furniture
pieces such as tables, plinths and doorway jambs, or even
accessories such as lamps, lights, sculptures and coasters.

Gavin explains that many people go for a double sink out

client is different,” he points out. “But on most projects, we’re

adapt to most situations. “If my client has babies, for example, 5

they can use a separate device as an accessory to put in a larger
sink,” says Gavin. “I see a lot of power in relying on accessories,
especially if you’re in an apartment or you’re starved for bench

The three main installation styles are top-mount, under-mount
and flush-mount. Top-mounted sinks are the traditional choice,
but more homeowners are opting for under-mounted sinks

because they create a more streamlined appearance.
Sometimes called inset sinks, top-mounted sinks are inserted
into the bench from above, with the ‘lip’ of the sink resting on 11
the bench. A flush-mount sink is a sink installed with the lip 10

of the sink flush-mounted into the benchtop. This achieves


a seamless flow between the benchtop and sink, with no break 14

or bumps in the design. Under-mounted sinks are often paired
with stone benchtops. They are installed underneath the kitchen

benchtop, leaving the surface undisturbed.
Another increasingly popular option is to integrate the sink
as part of your benchtop. This is a popular choice for stone,
a solid surface (such as Corian) or stainless steel, as these
materials can be moulded into the shape of your choice. 13
If you have a classical style of kitchen, you could select
a ceramic butler sink. Also known as fireclay sinks or farmhouse
sinks, butler sinks work well with a traditional aesthetic and are
often used in butler’s pantries and laundries as well.

The most common material chosen for kitchen sinks is stainless
steel, because it is so hard-wearing and affordable. “If you are
looking for a sink that will last a long time but is still also within
your budget, I would suggest a stainless steel sink,” says Colin
Jones, “as this material is durable and able to withstand heavy

pots and pans and also resist scratches from knives.
“Alternatively, granite sinks are great as they are heat-resistant,
do not scratch and come in a variety of colours, configurations CERAMIC
and installation options. They require minimal maintenance,
making them perfect for a sink you want to last.”
Jimmy Tang, the owner of Buildmat, reveals that they only
manufacture stainless steel sinks. “We like stainless steel because 3
we’re able to manufacture different sinks quite easily in terms of
production time,” he says. “Granite sinks, for example, can crack
whereas a stainless steel sink can’t crack. They are so resilient.” 2
Buildmat offers stainless steel in three finishes – classic
stainless steel, a gunmetal grey matt finish and brass. The
gunmetal finish in particular has grown in popularity, partly
because tapware now also includes brass and grey options and 4
many homeowners want to match their sink to their taps.
Bathroom trends have also filtered through to the cooking
zone. “What we’re finding is that people have been adventurous
in the bathroom and they want to bring it into the kitchen,” says GRANITE
Jimmy. “We’re finding that more and more people are trying to
match the whole theme in the wet areas. So the kitchen, 5
laundry and bathroom have got to be matching.”
Alexandra Devine of Reece explains that while stainless steel
is still the most common material, several other choices are now

available. “We’re really seeing a lot more variation in sinks,
which is fantastic for the kitchen,” she says. Granite sinks, which
are made of a mix of quartz stone and resin, are very popular.
“It creates a really hard surface that’s non-porous, and you can
get it in a range of colours including matt black and matt white,” 7
says Alexandra. “They’re scratch-resistant, dent-free and don’t
stain, so it’s a really durable, beautiful material. A black sink
looks stunning in kitchens. It’s a real statement piece.”
Fine fireclay sinks are also popular, she adds, mentioning that
Reece has recently introduced a farmhouse style of sink available 8
in a matt black as part of their Memo Harper range. “It’s such
a statement and a really bold move, but it’s really an interesting
way to bring your kitchen to life, and we’re seeing that one
being widely accepted,” says Alexandra.

Be realistic with your expectations
about maintaining your sink. Sinks
work hard and most will scratch over
time, so developing a patina is normal
– and part of their charm.
“Stainless steel is bound to scratch,”
says Jimmy Tang of Buildmat. “We say,
‘Use your sink, don’t try to change your
habits just because you don’t want the
sink to scratch.’ We have this very nice,
brushed-finish sink, but that brush
finish doesn’t last forever.”
For cleaning sinks, he recommends
a product called Magic Stainless Steel
Cleaner & Protector (you can find it at
Woolworths supermarkets), which is
made of chemicals that won’t rust
stainless steel. Jimmy warns against
using steel wool, which removes the
top hardened layer of stainless steel
and exposes fresh stainless steel,
leaving it vulnerable to rust.

to protect your stainless steel sink, as
these will help protect the sink from
damage if you drop something heavy.
“Roller mats are also a great way to
protect your sink,” adds Colin. “Stainless
steel will start to lose its shine over
time, so buying suitable cleaners and
polishers will help to enrich the sink
and remove any tough stains to bring
your sink back to life.”
As for granite sinks, they’re basically
maintenance-free and a popular choice
with customers. “Simply give them
a wipe-down after use,” says Colin.

with devil’s ivy (Epipremnum spp.) as a cascading counterpoint.

his handsome hideaway in Sydney’s eastern
suburbs is invitingly green in more ways than
one. It cleverly repurposes an existing deck,
pool and even a wall of bamboo to deliver
a luxuriant retreat for a young couple
with a toddler and their dog.
When its creator, Henry Chapple-Cox, design manager at
Secret Gardens, first visited in 2018, he was met with a jarring
study in contrasts. A hardwood deck abutting the house was
exposed to full sun and offered no respite – while in the dark
garden below, grass struggled to grow under untamed bamboo
along the back boundary. “The lower area was unloved and
claustrophobic, and not where you would want to spend time,
thanks to the overpowering bamboo, while the deck was open
and uncovered,” says Henry. In the blink of a dazzled eye, the
garden went from one extreme to the other – “glary to dark”.
It was little wonder the owners rarely used the rear garden and
were, ahem, bamboo-zled about what to do with it.
When they upgraded the interiors of the home they had
bought in 2017, they put the garden on notice, too. “In their
brief, they needed a space to complement the renovated
interiors,” says Henry. “They wanted to be enticed into the
garden, where they could fully enjoy an inside-outside space.
The pool, deck and lawn were all there, but they wanted
to use them more and team them with thriving, healthy plants
that worked where they were.”
Using an existing open steel structure repainted black as the
framework, Henry enclosed the hardwood deck in spotted gum
battens on the top and two sides, with a motorised retractable
awning to cater for hot and rainy days. The battens screen the
space from the neighbours, offering privacy, but also let in
filtered light, while the timber adds warmth. “We left it unoiled,
so it turns grey and needs little maintenance,” he says. “The
pergola frames the outdoor space and gives it intimacy.”
Meanwhile, an off-form concrete bench was installed, with
white oxide in the mix to complement the new light and airy
interiors, for a barbecue with storage underneath. Taking its
design cues from the kitchen inside, the bench also flows into
the courtyard below, where it morphs into an informal seat for
entertaining. “Concrete is often misinterpreted as being too
industrial or hard-edged for garden areas,” explains Henry, “but
it has an almost rustic quality when surrounded by greenery and
you can form it into anything you like.” Bluestone steppers add
depth and interest to this lower area. “Bluestone wears well,
darkens with age and teams nicely with concrete.”
To promote a sense of enclosure and hide pool equipment,
Henry inserted a blade wall painted a rich teal beside the pool.
It’s supplemented by three plant troughs suspended along the
adjoining wall, to “green up” the area and soften the view from
the living area. He also trimmed the bamboo to create a screen
that bathes the area below in dappled light. “We lifted the canopy
to give the space depth, while making it less unruly,” he says.

ABOVE Thanks to the revamp by Secret Gardens, this is now an enticing


indoor-outdoor space and a fitting complement to the home’s interior,
designed by Woods & Warner. A motorised awning ensures the deck can be
used rain or shine. The concrete bench was poured on site, with white oxide
added, to create a unified line of vision. It extends from the garden to the
deck, and indoors to a bench under the TV and the kitchen bench beyond.

This lush, secluded spot is a particular favourite of Henry’s, with its concrete
bench and dappled light a dramatic contrast to the jarring darkness and
glare he was originally confronted with. Foxtail fern (Asparagus densiflorus

(Alpinia zerumbet), Swiss cheese plant (Monstera deliciosa) and a stand
of existing giant bamboo (Dendrocalamus spp.) neatly trimmed and

Below her, Henry replaced failed turf with kidneyweed
(Dichondra repens), a tough-as-nails alternative to conventional
lawns with few of the hassles of upkeep. “It likes water and both
shade and sun,” says Henry. The bamboo is underplanted with
swathes of lush ferns including Japanese holly fern (Cyrtomium
falcatum), button fern (Pellaea rotundiflora) and hen and chicken
fern (Asplenium bulbiferum), all at home in a shaded area that
retains water. “It’s a match made in heaven,” says Henry.
Swiss cheese plant (Monstera deliciosa), Dracaena deremensis
‘Janet Craig’ and shell ginger (Alpinia zerumbet) sit behind the
bench, with their large, luxuriant leaves “chosen for the colours
and shapes”. A mistletoe cactus (Rhipsalis spp.) plays against the
spotted gum battens “to bring the garden into the pergola”.
Beside the pool, a mix of foliage plants in the troughs,
including succulents snake plant (Sansevieria spp.) and fishbone
cactus (Cryptocereus anthonyanus), are teamed with devil’s ivy
(Epipremnum spp.) and “stick up and over the green wall”, while
a statuesque candelabra tree (Euphorbia candelabrum) dominates

he Lake House Daylesford was one of


Australia’s first destination dining experiences,
and 40 years later it is still one of our most
loved and awarded. It is a passionate labour
of love for Alla and Allan Wolf-Tasker and
their family. The couple started with an
empty plot of land on a lake and transformed it into an Italian
Agriturismo-inspired restaurant that grew to include hotel
rooms, a tennis court and, now, a wet edge pool, which in turn
transformed loyal customers into staying guests.
Alla is regularly recognised as one of the most influential
people in Australian food. The draw of her passion for locally
grown food that is sustainable also drew similar-minded people
to Daylesford and the Macedon region in Victoria’s central
highlands – rich in volcanic soil and mineral springs. Now it’s
a creative hub of food and wine lovers, producers and growers
creating craft cider, award-winning wines and excellent produce.
It’s also massage mecca, with its energetic vibrations making
this spot on the map the (supposed) home of more massage
therapists than anywhere else in Australia.
The newest addition to the Lake House family is Dairy Flat
Lodge & Farm, 10 minutes’ drive away. They had been looking
to support the kitchen with more locally grown, organic produce
– and already this lush, regenerative farm is providore to the Lake
House restaurant and Wombat Hill House cafe in Daylesford,
and is productive all year round with a full-time farm staff.
A tour with farm manager Pedro is recommended to get
your head around the enormity of the lodge and farm, with its
olive groves, citrus orchard and burgeoning vineyard embracing

the plots and greenhouses nurturing zucchini flowers, artichokes,


all manner of greens and herbs destined for Alla’s kitchen. The
beehives, bakehouse and rambling alpacas add to the romance.
The idea for a stay at Dairy Flat Farm is to bring everyone
with you and gather under one roof together at the table. The
main house has four double chambers and two vineyard suites,
so a party of 12 would fit neatly. It’s seriously luxe cottage core
here – fully serviced, big overstuffed armchairs, fantastic roaring
fires and freestanding baths with views. On the ground floor,
a sumptuous shared dining, lounge and library are served
by a well-stocked kitchen where concierge Mariana will pull
together an extraordinary breakfast – local fruits, a reverie of
croissants, signature sourdough and the excellent rhubarb strudel
made downstairs in the bakery, yoghurt, granola, eggs any way
and jars of sticky compotes, jams and chutneys.
Dairy Flat Farm is the kind of perfect place that was made
for weddings, important birthdays and house parties, whether
those occasions are civilised or perhaps not so much.

Mercedes-Benz electric SUV
Heading to Daylesford from Melbourne’s
Tullamarine airport in the new Mercedes-
Benz EQB all-electric SUV felt like the right
thing to do when setting out to cover
a sustainable family farmhouse.
The one-and-a-half-hour drive was well
within the pre-charged car’s range of 371
kilometres — which was hugely comforting
when tackling a freeway for the first time
in an electric SUV. No chance of running
low on charge here!

us and our Vodafone coverage in rural
Victoria. it meant we couldn’t access any
public charging stations. That turned out
to not be a problem with the excellent
range on this Mercedes, and we sailed
back into Melbourne with plenty of
kilometres to spare.
The Mercedes-Benz EQB 250 is
priced at $87,800 (plus on-road costs)
in a standard five-seat configuration,
with a third row of seats adding $2900.
The EQB 350 4MATIC is priced at
$106,700 (plus on-road costs).
