Hello Northland! Katie Currid | katie.currid@lifestylepubs.com

EDITOR

AD DESIGNER
I’M KATIE, THE NEW EDITOR OF NORTHLAND LIFESTYLE. I cannot begin to tell Rachel Chrisman
you how excited I am to dream up all the things you’ll see in this magazine, and boy, L AYO UT DESIGNER
we’ve got some great stories to tell. I have huge shoes to fill after Rachel’s tenure at the Emily Lisenbee
helm of this institution, but I just know you’re going to love what we’ve got in the works. CONTRIBUTING WRITERS
Katie Currid
A little about me: I went to high school in Lawson, a place that’s so north in the CONTRIBUTING PHOTOGRAPHERS
Northland that the reaction I often get is “Oh, I think I’ve heard of that.” I currently live in Katie Currid, Ashley Elwell, Aaron Leimkuehler
Weston with my husband, Tyler, and two boys, Fox, 3, and Finn, 1. This is the last month
that we’ll be a military family, so veteran stories always have a special place in my heart.

I’ve worked as a photojournalist for a decade and often shoot for national newspapers
and local restaurants. I also own a crazy little Italian bartending truck called Fizzolino
that was actually on the cover of this magazine back in November of 2018. I swear it’s
not a requirement for working here!

My passion has always been community journalism. I spent years away from the
Kansas City area doing internships or working at newspapers or with my husband on CORPORATE TEAM
military assignments, but this is our chosen home, and I care deeply about telling the

stories of and for the people who live here. CHIEF SALES OFFICER Matthew Perry

ranch in Weston, about all the great ways you can make a steak (the best way? All of them).

But I most loved the men we profiled in our “Men of the Moment” feature, interviewing
four men in the Northland about their passions and the realizations they’ve come to
over the past year. The thing I noticed most about all of them — and they all come from
quite different walks of life— is their absolute passion for their family and their children, 514 W 26TH ST., KANSAS CITY, MO

and how they’re raising the next generation to lead with kindness. In a time when this
world can feel so dark, that gives me a lot of hope.

It’s nice to meet you, Northland readers. I’m excited to tell your stories and can’t wait ARIZONA | CALIFORNIA | COLORADO | CONNECTICUT | FLORIDA | GEORGIA

NORTH KANSAS CITY HAS A WHOLE LOT
OF BREWERIES FOR A TOWN SO SMALL

ACCORDING TO FOOD & WINE

MAGAZINE IN 2019, THE CITY WITH
THE MOST CRAFT BREWERIES
PER CAPITA IS PORTLAND, MAINE,
WITH 18 BREWERIES PER 50,000
PEOPLE. But it looks like they may
have overlooked North Kansas City in
their research.
With a population of less than 5,000
(North Kansas City is not Kansas City,
MO, as basically any resident with the
proper amount of hometown pride
will tell you), it has five  breweries, so
one  brewery per 895 people. I’m not a
mathematician, but that data says NKC
has them beat. So take that, Portland
Maine. You still have us beat in lobster
rolls, and probably always will.

The brewery is tucked away in the industrial area of
North Kansas City, next to the railroad tracks, and is
neighbors with Hawg Jaw Que and Brew. Their bright
red building features a large parking lot and concrete
patio, but inside is something new. While their bar
was closed during the pandemic, the owners built a
log cabin, complete with a porch — inside! Local artist
Joanna Comstock (@artofthejoannasaurus) painted a
woodland mural with sci-fi references throughout the
room, and the backroom now looks like the outside, but
in. It will be perfect for those hot summer days where
you just want to sit on the porch, but don’t want to suffer
in the humidity or mosquitoes. Big Rip will be our refuge
then, and thankfully, they’ve got plenty of cold beer.

Calibration Brewery’s logo, which features gears,

pays homage to its roots as the auto body repair shop
that the building housed before it was a brewery. The
large space, with its garage bay doors that open out
onto the expansive patio, is a great place to enjoy a
beautiful summer day.
Calibration was closed throughout most of 2020,
but they’re back with a full kitchen, thanks to a part-

have a dog-friendly patio and live blues music every

beer so much that, after a $25,000 Kickstarter campaign, he
moved his garage operation to a brewery open to the public

Steve, an Air Force veteran, names his beers after the call-

Cinder Block is probably North Kansas City’s

most well-known brewery. With their urban-indus-
trial vibes, large patio, big screens and frequent
rotation of food trucks, it’s a great place to spend
an afternoon watching the game and grabbing some
beers with friends.
They’re the only brewery in Kansas City that
brews their own seasonal ciders, so if you’re not
huge on beer but your buddies are, there’s some-
thing there for everyone. Last year, their cans of
cherry limeade cider sold out in less than 3 minutes
online. If you missed your chance then, don’t miss
out this year when it’s back — in the can or on tap,
now that they’re open again. It’s the perfect com-

IT’S HERE, FOLKS: GRILL SEASON. It’s time for

potato salad, cold beers, and, of course, steaks. But
here in the Midwest, we can’t be guaranteed grill-
ing weather every day from now until winter again,
though I wouldn’t be surprised if there was someone
out there who had tried to finish off a steak during a
tornado warning.
Pat Montgomery, owner of Waygu cattle ranch
Kansas City Cattle Company, sat down with us to give
tips on how to properly cook a steak, whether you’re
indoors or out. As a man who slings steaks for a living,
he’s got a few tricks up his sleeve.

Kansas City Cattle Company is a veteran owned

and operated cattle ranch based out of Weston.
They deliver beef and pork products, such as their
“world famous Waygu hot dogs” to doorsteps in the
Kansas City metro area, and also ship nationwide.

If you didn’t get your dad a
sous vide for Father’s Day,
Sous vide there’s still time.

1. Pull steak from fridge and cover in kosher salt

(if you don’t like salt, you can always wash it off
before searing. The salt tenderizes the steak).
2. Place steak inside a plastic storage bag or BPA-
free reusable silicone bag, along with one table-
spoon of butter per steak. Fill up a large pot with
water and place the bag in the water, clipping the
bag to the side of the pot. Place sous vide inside pot.
3. Set sous vide for time and temperature for
desired doneness.
4. Once the sous vide has finished, finish off the
steak on a hot cast iron skillet or grill, 45-seconds
to a minute per side. The goal is not to cook the
steak for long, but to sear it. Let rest 5-10 minutes
before cutting.

PROS: Easiest to get desired temperature cor-

rect. You can also set it and forget it while you
prepare the rest of dinner without worrying about
overcooking.
CONS: Takes the longest, is the least amount of
fun, needs special equipment.

Cast iron

1. Remove steak from the refrigerator and allow

it to reach room temperature. Season both sides
generously with kosher salt, and let sit for 30 min-
utes. Turn the oven to 325 degrees F.
2. Heat the cast iron skillet on top of the burner
on high heat. Skillet will most likely begin to smoke.
Add one tablespoon of butter per steak.
3. Add steak and cook for 2-5 minutes per side,
looking for a good crust on each side.
4. Check internal temperature, and if steak is not
finished, place it in the oven until you’ve reached
desired doneness. Use a meat thermometer if
you’re unsure.

PROS: Most fun, and you can experiment with dif-

ferent ingredients in your butter
You’re a pro at making a
CONS: Tough to get desired doneness, and if you

Make sure you get those grill
marks perfect!

Smoker & Grill

Indirect/smoker/grill

1. Remove steak from the refrigerator and allow it to reach

room temperature. Season both sides generously with
kosher salt, and let sit for 30 minutes. Start your smoker.
2. Place your steak on the smoker, and cook indirectly
to 20 degrees below desired doneness. Turn on direct
heat/grill while you’re waiting.
3. Move steak to direct, hot heat for 1 minute per side
(expert level: get the nice grill marks).

PROS: Best flavor

CONS: Toughest method to get desired doneness, and you
need to pay pretty close attention to the steak while cooking CONTINUED >

WE INTERVIEWED FOUR DIFFERENT

NORTHLAND MEN ABOUT THEIR
PASSIONS AND THE THINGS THEY’VE
LEARNED OVER THE LAST YEAR.

WHO STOPPED A GUNMAN IN LEAVENWORTH.
Men
WHAT IS YOUR PASSION?
I am most passionate about my children. It is very
important to me that they know they are loved, that of the
moment
they feel good about themselves, and that I do my best
to set them up to be successful, happy adults.

WHAT WOULD YOU SAY FROM YOUR SOAPBOX?

There are too many people talking from their soap-
boxes nowadays. If I found myself with a soapbox, I
would just use it to have a better view at the next KC
Chiefs Super Bowl parade.

WHAT’S YOUR FAVORITE SMALL BUSINESS IN

THE NORTHLAND?
I was lucky to be able to work for KC Cattle Company
last year. They were there for me during my rigorous
transition from the military to the civilian sector and I
consider all their employees as good friends.

WHAT IS YOUR FAVORITE HOBBY?

Woodworking has always been a way for me to step
out of the day’s stress and create something with my
hands that I can be proud of.

WHAT DO YOU HOPE PEOPLE THINK OF WHEN

THEY THINK OF YOU?
I know this is an unpopular opinion, but I don’t mind
what people think of me. I just want to see people get
along and treat each other with respect.

TODD BEARDMAN
CHIEF MEDICAL INFORMATION OFFICER
AT NORTH KANSAS CITY HOSPITAL

WHAT IS YOUR PASSION?

The intersection of technology and healthcare. I enjoy
finding creative solutions to healthcare problems by lever-
aging technology.

WHAT DO YOU DO ON A FREE NIGHT?

During the pandemic, a free night has been ordering food
in and enjoying a movie.

WHAT’S YOUR FAVORITE SMALL BUSINESS IN

THE NORTHLAND?
Priority Care Pediatrics, LLC, which is my wife’s prac-
tice.  We started the practice in 2004 with Dr. Alan Grimes.
It has been a labor of love and we have watched it grow
like our children.

WHAT IS YOUR FAVORITE HOBBY?

Anything sports related. Photography. Sometimes together.

WHAT IS YOUR PROUDEST ACCOMPLISHMENT?

Recently, I would have to say Operation Safe, which
was a beautiful public/private coalition of hospitals, cities,
Clay County and private companies who came together to
vaccinate Missourians.  We had 4 days to stand up a high
throughput vaccination center. The joy of everyone volun-
teering and patients coming through to be vaccinated was
palpable and inspiring.

WHAT’S THE MOST IMPORTANT THING YOU

HOPE YOUR CHILDREN TAKE WITH THEM OUT INTO

Kindness. I hope that they understand and exhibit kind-
ness to others in all that they do.  CONTINUED >

J A M I E G R AY S O N
FOUNDER AND CEO OF THE NONPROFIT
ORGANIZATION, PEOPLE OF ALL COLORS SUCCEED

WHAT ADVICE WOULD YOU GIVE TO YOUR

YOUNGER SELF?
To be courageous sooner in life and stand up for the
voiceless often. It’s something that I was raised to do,
but would probably be more vocal about those oppor-
tunities. I would also tell my younger self that you are
GREAT and can do GREAT things despite the environ-
ment you come from.

TALK ABOUT SOMEONE WHO HAS INSPIRED OR

TAUGHT YOU SOMETHING.
My mother, Marcy Grayson, who I lost nearly five
years ago, and my sister Tonya, who passed away from
Sickle Cell Anemia at the age of 16 and I was nine.  Their
lives and passion for people was embedded in me, and
I have made it my life mission to carry their torch since
they can no longer carry it for themselves.

WHAT DO YOU HOPE PEOPLE THINK OF WHEN

THEY THINK OF YOU?
When people think of me, I hope they know or see
that I am a “game changer,” a person who stands for
inclusive change for all people. I hope for people to
live their best life no matter where they start in life.
They control the outcome and the story of what others
someday will share.

WHAT IS YOUR PASSION?

My passion, hands down, is being a dad. Everything
else is a hobby.

WHAT WOULD YOU SAY FROM

YOUR SOAPBOX?
Love is love. Hate is hate. And kindness is viral.

HAVE YOU HAD ANY REVELATIONS FROM

THE PAST YEAR?
Getting back into yoga with my friends at Honor
Yoga, I’ve remembered that no matter where I think
I should be, I’m already where I’m supposed to be.

WHAT DO YOU DO ON A FREE NIGHT?

If there’s a free night, I’m in the driveway with my
family. There will be no shoes, and probably an iced
coffee in hand.

WHAT DO YOU HOPE PEOPLE THINK OF WHEN

THEY THINK OF YOU?
Man…that dude seems happy with his life.

WHAT IS YOUR PROUDEST ACCOMPLISHMENT?

I’m the most proud when I see my daughter exude
kindness – specifically in the face of tough situations.
