BRIEF ABOUT PANEER UNIT

Introduction
Paneer or Indian cottage cheese is a popular dairy product that is widely consumed
in India and other parts of the world. It is a rich source of protein, calcium, and other
essential nutrients and is used in preparing various dishes. The Paneer Industry in

Process to Make Paneer from Raw Milk: The following is a step-by-step process
of making paneer from raw milk in a milk-based food processing unit:

Step 1: Milk Collection and Testing The first step in the process is to collect raw milk
from dairy farmers and suppliers. The milk is then tested for quality, purity, and
other parameters to ensure that it meets the required standards. Any milk that
does not meet the required quality standards is rejected and not used for
production.

Step 2: Milk Pasteurization The raw milk is then pasteurized by heating it to a


specific temperature (typically 72°C to 75°C) for a specific time period (15 to 30
seconds). This process helps to destroy any harmful bacteria and microorganisms
that may be present in the milk.

Step 3: Acidification and Coagulation After pasteurization, the milk is cooled down
to room temperature and then an acidifying agent, typically vinegar, is added to
the milk. This helps to lower the pH of the milk, which causes it to coagulate and
form curd. The curd formation typically takes around 45 minutes to an hour.

Step 4: Draining and Pressing Once the curd has formed, it is drained and pressed
to remove excess moisture and obtain the final product. The curd is typically placed
in a muslin cloth and pressed under a heavy weight for several hours. This helps to
remove excess whey (the liquid part of the milk) and give the paneer its
characteristic texture.

Step 5: Cutting and Packaging The paneer is then cut into blocks or cubes of
desired size and shape and packaged for distribution and sale. The packaging is
typically done in vacuum-sealed pouches or containers to ensure freshness and
prevent spoilage.

9. Brine liquid filler to fill brine solution into various packings while packing the
final product

11. Vacuum packaging machine - for packaging the paneer in airtight pouches or
containers
12. Electrical panel to distribute and manage the electricity
13. Fittings & accessories electrical and substantial metal fittings of all machinery
