DISCUSSION

Based on the denaturation of egg white protein result, white egg in test tube 1 was
heated and turns from transparent to white solid. It is because heat denatured the
proteins in the egg white causing some of the bonds that held the proteins in their
original shape to break apart. The egg white in the test tube 2 was mixed with NaCl-
ionic compound and did not have changes. It is because the protein was not
denatured.
Next, the egg white in test tube 3 was mixed with NaHCO3-base and turn the
transparent to clear orange. This protein also was not denatured. The egg white in
test tube 4 was mixed with lemon juice-acid and it is turns transparent egg white to
murky and a bit clot while the egg white in test tube 5 was mixed with AgNO3-heavy
metal and it is turns transparent egg white form three layers, which is the upper layer
was harden white, the middle layer was clot and the lower layer was clear. It is
because there were the proteins has been denatured.
