Recipe: Cherry Jam

Ingredients: Measure Preparation notes:


Sour Cherries 466 g
Lemon juice 16 g In pot, cherries, LJ , pectin.
Fruit Pectin 19 g
Sugar 495 g Bring to boil, add all of the sugar. Return to
rolling boil that cant be stirred down. Boil hard
1min, stirring costantly. Remove from heat
skim off any foam.

Set in fridge, cover with saran to prevent skin

Water 250 g
sugar 250 g bring to boil until sugar is fully dissolved,
simmer for 5 mins, mash cherries, strain
cherries 525 g cherries out. Cool. Use cakes.

Sugar 220 g Bake @ 180C
Vanilla 0.5 tsp

AP Flour 260 g
Baking Powder 3.5 tsp With paddle beat butter sugar and
Milk 125 g vanilla until light ad fluffy. Add eggs one
at a time. Making sure not to slpit, beat
well between additions. Add half sifted
dry ingredients, add half milk, add rest of
the dry, add remaining milk

*to make chocolate, replace 10% of AP


flour with cocoa powder, 26g for this recipe

Icing Sugar 480 g
Cocoa Pwd 22 g combine in heat proof bowl
Butter 15 g
Hot water 150 g

whipping cream 300 g heat cream. Pour over chocolate. Blitz
white chocolate 100 g set in fridge. Whip to med peak
