ABE325 Narrative Report for Milk Processing Cold Storage at USTP Claveria

I. INTRODUCTION

The Milk Processing Cold Storage facility at USTP Claveria is a cutting-edge


facility dedicated to the processing and storage of milk products. Located at the
University of Science and Technology of Southern Philippines (USTP) in Claveria,
this facility is designed to meet the standards of hygiene, quality, and efficiency.

The primary objective of the Milk Processing Cold Storage facility is to ensure
the safe and optimal processing of milk from its raw state to the final packaged
product. It incorporates advanced equipment and technology to maintain the integrity
and freshness of milk throughout the entire production process.

II. DISCUSSION

Milk Processing Operations:


The first step in the milk processing operations involves the pasteurization of the
raw materials. Two pasteurization tanks with a volume capacity of 250 liters each are
utilized, resulting in a total capacity of 500 liters. The raw materials, upon being
dumped into the pasteurization tanks, undergo a controlled heating process to
eliminate harmful bacteria and pathogens while retaining the nutritional value of the
milk.

After pasteurization, the milk mixture is then directed to the homogenizer. The
homogenizer further processes the mixture by subjecting it to high pressure, resulting

in the uniform distribution of fat particles throughout the milk. This process enhances
the texture and stability of the milk product.

They said that although there are currently just six milk flavors offered, there
were originally seven. This year, they plan to reintroduce and market their milk
flavor, durian. They currently offer original milk fllavor, chocolate, mocha, pandan,
strawberry, and manga flavors. The red tubes in the tanks are for hot water, the white
ones are for raw or plain water, and the blue tubes in the tanks are for cold water,
according to Sir John who was assigned to the production.

Following the homogenization process, the milk product is passed through an in-

line filter. The filter effectively removes any impurities or particulate matter present
in the milk, ensuring a high-quality end product.

Once the milk has been filtered, it is cooled down to a temperature of 10°C to
maintain its freshness and extend its shelf life. The cooling process takes place in the
cooling tank, where the milk is stored until it reaches the desired temperature.

Packaging and Labeling:


After the milk product has been cooled, it is ready for packaging and bottling. The
facility is equipped with appropriate machinery and equipment for efficient packaging
operations. The milk is carefully filled in the bottles, ensuring accurate measurements
and maintaining hygienic conditions throughout the process.

Additionally, the packaged milk products undergo labeling to provide consumers


with essential information, including nutritional content, expiration date, and product
identification. The labeling process ensures compliance with regulatory requirements
and facilitates easy identification and traceability of the milk products.
The milk is processed for nearly the whole day, with bottling being the final stage
within the cold storage section in the afternoon after everything is finished.

Once the milk have been packaged and labeled, they are transferred to the display
area. Flavored milk products are typically stored in the refrigerator section of the
display area, maintaining the appropriate temperature is crucial to preserve the
quality, taste, and nutritional value of the milk products.

III. CONCLUSION

The facility's infrastructure and storage facilities appear to be well-designed and


suitable for milk processing and storage operations. The cold storage units were
observed to be properly maintained, ensuring the preservation of milk products. The
facility is equipped with modern machinery and technology required for milk
processing, such as pasteurization equipment, refrigeration systems, and quality
control instruments. This indicates a commitment to maintaining product quality and
safety standards.

The facility appeared to have a skilled and knowledgeable workforce. The staff
demonstrated proficiency in their respective roles and displayed an understanding of
industry best practices. This expertise contributes to the efficient and effective
functioning of the facility.

Based on the observed capacity and available resources, the facility has the
potential for future expansion to meet growing demands. The existing infrastructure
and facilities can be scaled up to accommodate increased production or
diversification of product offerings.

The Milk Processing Cold Storage facility at USTP Claveria plays a vital role in
ensuring the safe and efficient processing of milk products. The pasteurization tanks
and homogenizer contribute to the production of high-quality milk, while the in-line
filter ensures the removal of impurities. The cooling tank facilitates the cooling
process, while the packaging, labeling, and proper storage of finished products
guarantee their freshness and longevity. The facility's commitment to maintaining
accurate temperatures ensures that the milk products retain their desired quality until
they reach the consumers.
