Beyond Meat Meatloaf

Ingredients
• 2 12oz packs Beyond Meat Ground Round
• 1/2 cup Oatmeal
• 1 1/2 cup Panko Breadcrumbs
• 2 Egg – whisked
• 1/2 cup Tomato Paste
• 2 tsp Horseradish
• 2 tbsp Worcestershire Sauce
• 1 tbsp Parsley – fresh, chopped fine
• 2 Green Onion stalks – chopped fine
• 1/2 tsp Pepper - ground
• 1 Onion
• 3 cloves Garlic – minced
• 1 tbsp Olive Oil
For the Glaze…
• 1/3 cup Tomato Ketchup
• 1 tbsp Brown Sugar
• 1 tbsp Mustard
• 1 tbsp Maple Syrup

Directions
Preheat oven to 375°F

1. Sauté the onion in the oil until translucent, then add the garlic and sauté for another minute.
Set aside to cool.
2. Thoroughly mix the first ten ingredients together with the sautéed onion and garlic in a suitable
bowl.
3. In a separate bowl mix the four glaze ingredients.
4. Line an 8” x 4” bread pan (or similar) with parchment paper, empty the contents of the meat
mix bowl into the lined pan, pat to an even layer.
5. Spread the glaze mixture over top of the meat mix.
6. Cover the pan with aluminum foil.
7. Bake at 375°F for 45 minutes, then uncover and bake for an additional 15 – 20 minutes.
