Grilled Beef Steak with Chimichurri Sauce

Ingredients:

2 beef steaks (e.g., ribeye or sirloin)


2 tablespoons olive oil
2 teaspoons ground cumin
2 teaspoons paprika
Salt and pepper to taste
Chimichurri Sauce:

1 cup fresh parsley, chopped


1/2 cup fresh cilantro, chopped
3 garlic cloves, minced
1/4 cup red wine vinegar
1/2 cup olive oil
1/2 teaspoon red pepper flakes
Salt and pepper to taste
Instructions:

Mix olive oil, ground cumin, paprika, salt, and pepper in a bowl. Rub the steak
with this mixture and let it marinate for 30 minutes to an hour.
Preheat the grill to medium-high heat. Cook the steaks for about 4-6 minutes per
side for medium-rare, or adjust the time according to your preferred doneness.
While the steaks are cooking, prepare the chimichurri sauce. In a separate bowl,
combine parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper
flakes, salt, and pepper. Mix well.
Once the steaks are done, remove them from the grill and let them rest for a few
minutes. Slice the steaks against the grain and serve with a generous drizzle of
chimichurri sauce.
