Introduction
In January 2020, who would have thought that we would all be on a stay-
cation, in our homes for 5 weeks, cooking and cleaning all day, without our
helpers. Now that it's a reality, it doesn't sounds hilarious. 

Last year this time, we did not imagine that we would be launching our 2nd
edition of Quick, Simple n Easy Cuisine.

Our 1st edition was launched in February 2020. All profits from the recipe
book go towards the Al Imdaad Foundations project, Make Breakfast
Possible. Over 2000 learners are given a bowl of porridge daily at 37 schools
in South Africa. Our 1st print was sold out within the 1st 10 days of being
launched.

The aim of our recipe books are to provide you with a collection of Quick,
Simple n Easy recipes using ingredients that are easily available in most
homes. Ingredients should not be mysterious in any way. "Quick" meaning
preparation should take on average 20 minutes (excluding marinating,
cooking or baking time). "Simple n Easy" meaning novice and expert cooks
alike should find the recipe melodious and not furious at the tedious
methods.

The selection criteria for recipe submissions was that it should not contain
any fast food brand sauces, nor any branded spices, nor anything dubious
etc. We simply wanted to avoid recipes that were labourious and notorious,
so that you could make something glorious! We are serious when we say,
recipes on this book are really Quick, Simple and Easy.

This introduction is meant to make you smile. Let your smile be
contagious. Smiling is a form of charity.

The COV-19 pandemic has taught us that life is short and unpredictable.
If someone asks you for your "secret" recipe, don't be malicious and share
a recipe that's fictitious. We do not take our recipes to our graves. Aspire
to inspire before you expire.

If others are curious to know why you are victorious at preparing meals in
minutes - we encourage you to be generous. Share this FREE pdf with
others. Screenshot recipes and post on social media platforms without
doing anything dubious.

Make Breakfast Possible

As it is often said, a healthy body is a healthy mind and a hungry stomach


is not conducive for the absorption of information. Hungry learners often
struggle to concentrate in class and visit the school nurse daily with head
and stomach aches. Due to pangs of hunger, learners often feel sick
resulting in poor grades and a low pass rate.

In order to address this problem, the Al-Imdaad Foundation, in


consultation with food technologists, dietitians and nutritional experts
have formulated a porridge called “Siyasutha”. This porridge has all the
necessary nutrients and is served to students every morning before the
beginning of classes. This enables them to focus on learning and not
hunger (www.alimdaad.com).

Profits from the sale of volume 1 will go towards the Make Breakfast
Possible project. This book has been compiled by Umm Yusra Noor M, an
independent volunteer who is not employed by Al Imdaad Foundation.
May the Almighty accept all our small efforts and take the Al Imdaad
Foundation to new heights in their quest for uplifting humanity -
Aameen.

Cleaning Tips during Lockdown

▪Make your bed and tidy up as soon as you wake up (kids as well) 
▪Establish a routine. Schedule chores for everyone including the kids. 
▪Clean up as you go along. Don't leave things for later.
▪Wash & wear the same clothes. Don't stress if the washing doesn't get
ironed. Fold it as soon as it comes off the washing line & iron as required.
You wont be going out anyway. 
▪Keep a spray bottle with clean green, savlon or dettol & water with a
top cloth for easy wiping of table tops, basins etc 
▪Use minimal dishes in the kitchen. Prepare easy meals. Get the whole
family involved.
▪Wash dishes as they get used & leave to drip dry. Piling them makes
more work for you.
▪Use newspaper for working surfaces before cooking, cutting etc.
▪Pots- while your stove is hot, pour boiling water, bicarb & vinegar in
pots and simmer. It will get rid of grime & make it easier to wash pots.
▪Have snacks, tea time & even meals outside as it eliminates cleaning up
after kids. 
▪Leave left over lemon from cooking or from lemon water in the sink to
keep it fresh & odorless 
▪Keep a bucket with soap & water ready at all time so if kids mess you
can spot clean. 
▪ Use wet wipes for cleaning the toilet
▪Keep detergents in the bathroom with a roll of paper towel... Clean as
u use. Then just mop /sweep on alternate days
▪At night drop domestos/ toilet duck in the toilet & leave overnight

Leaving your shoes outside means bringing less dirt inside and then you
don’t have to sweep and mop so often (although with kids  u always have to
sweep)

*Meal prep ideas*


▫wash & cut meat & leave in containers ( e.g. cubed chicken, steak,  strips
etc)
▫grate onions & tomatoes & freeze in ice cubes & use as needed
▫ freeze chopped peppers & cubed mushrooms & used as needed
▫when making pasta sauce, mince, dhals make extra & freeze for another
days meal
▫when making chicken, chicken fillet,  steak, chops marinate an extra
portion for easy cooking on another day. Remember to label your
containers properly. e.g 'marinated chicken-cook with butter'

▪Most importantly let's not forget our *Sunnah* and recite Tasbeeh-e-
Fatima
This would then serve as an ENERGY BOOSTER.

Radhaa bil Qadhaa...
Inspiration during Lockdown

It has been a few months since I've posted on here (Instagram), and that has
predominantly been due to managing my life in Venezuela as well as adapting
to the new journey of pregnancy. To say this year has been one of immense
growth is an understatement.

We are all in lockdown here in Venezuela and have been for some time.
Approximately three weeks or so. But the reality is that this lockdown isn't
much of a shift from our regular lives. And I don't really feel as if much has
been taken away from us. You see, coming to Venezuela over seven years ago,
stemmed from a deep need, a need for deeper meaning a sense of stillness in a
busy world. In South Africa my life was full. So full that I had no time. I spent
hours shopping, curating, creating, talking and meeting people. I miss that so
much. But living in Venezuela has taught me so much. I think many people
living in Quarantine may feel the same. These lessons have led to a deep sense
of identity and a sense of self acceptance and radaa bil qadaa, things that I
would never have learnt on the trajectory that my life was moving at.

At first when we came to Venezuela we tried to replicate our South African


life. We shopped and filled all the holes of family and shopping malls with
shopping and buying things that's seemed oh so important. Then came the
first of many lockdowns, food became scarce. It was a shock. We didn't know
how to cope. We too stockpiled until there was nothing left to do, there was
nothing to stockpile. We didn't have milk or bread or flour or sometimes eggs.
Luxury items were not even a priority. At first, like many in the world we
panicked. We complained, we asked for people to send us stuff from SA and
then we realised that reality had set in, this was now a way of life. Slowly we
began to adapt. 11
We learnt to make yoghurt, we learnt to make bread, we learnt to find
replacements for everything. But most importantly I learnt how not to waste.
We were so used to finishing things and using things up, but slowly we
understood the ayaah (verses of Qur'aan) that those who waste are the
brothers of Shayaateen (the devil). In those times we found an immense level
of barakah (blessing). It humbled us to understand that barakah was never
meant as alot.

Somehow overnight all the weddings and family gatherings and beautiful
beaches and all the things that we were used to in South Africa were gone. We
had one mall and two smaller shopping centers. We had one park that after a
time also closed down. We would often hear the children sigh, there was
nothing to do. In South Africa you could go paintballing, go Karting, malls
galore and the list goes on and on. I moved to a smaller town and was now
forced to slow down. It almost killed me. I needed busy. I needed people. I
needed to fill the space of my mind. At first we used crafts and hobbys and
cleaning my home and face time. Until slowly when it became a reality, I
finally understood the lesson. The lesson was not the removal of people or
hobbies the focus was to find a stillness that drowns out the world and allows
you to connect in a way that we never have before. It allowed me to learn to
be by myself, sometimes for months on end. To not need to be constantly
entertained and to understand that in that stillness we can find our Rabb
(Creator).

This quarantine might seem like a punishment, but if we can still our senses,
our wants, our needs, our desires we learn to control our nafs (desires) and we
understand why our Prophet (Peace be upon him) loved sitting in the Cave of
Hira. Why he would spend so many hours in a graveyard all alone,
contemplating and understanding that business is this world yet in the
slowing down of our lives we can focus on our real goals and objectives.

Radha bil qadaa, happiness at the decree of God. Such a large concept. The
last few years have begun my journey and I think we have a lifetime to go. We
sometimes would go to a shop searching for items, filling out trolleys and
elated to find so much of things only to be told by the cashier that there was
no money in the banks so no purchases could be made, other times we had all
the money in the world but no expenses were allowed more than a certain
amount. We laugh at it now. It seems hilarious that life could actually be that
crazy. However imagine having money and all the things you need in front of
you, yet not having the ability to buy it.

We used to shake our head at first and say Venezuela, like many people are
currently blaming the lockdown. Yet after a while I learnt what the people
who live in these dusty jungles have already understood, contentment- that
whatever is to reach you will never miss you. Contentment in the decree of
God.

In South Africa we used to say "maak a plan" . That if you can't find it here a
few calls will get you exactly what you need. In Venezuela I have learnt that
only what the Almighty has decreed for you will come to you. They have a
word here in Venezuela 'tranquilo' people are able to stand in the hot sun for
hours, in bank lines for hours and they do without if they don't have, there is a
sense of calm. There is no need to shout to fight to complain and the amazing
thing is that with that quiet acceptance all the things you need and are
looking for come to you without the sense of urgency or the complete focus
on it.

Your taqdeer has been written out and God will move mountains to bring it
to you, if we just calm down and understand that Radhaa bil qadaa -
happiness with the decree of God is the end goal.

Sweetcorn Bhajia

Ingredients Method
1 tin creamstyle sweetcorn 1. Mix all ingredients to form a batter.
1 x large egg or 2 small ones 2. Fry spoons full in deep hot oil.
1 tsp salt
3. Drain on paper towel.
1 tsp crushed green chillies
4. Serve with chutney or sauce of your
1 bunch chopped dhania
(coriander) choice.
1 ½ tsp baking powder 5. Best enjoyed immediately.
1 ½ cups flour

Patta / Pateria Filling

Ingredients Method
2 onions, chopped 1. Sauté onions in oil or ghee.
¼ tsp jeero (cumin) 2. Add jeero and garlic. Braise well.
1 tsp garlic
3. Add chopped patta roll. Mix well until

¼ cup vinegar 
¼ cup sugar  4. Add vinegar, sugar, green chillies, salt and
green chilies sweetcorn.
salt to taste  5. Remove from heat and allow to cool.

Potato and Cheese Croquettes

Ingredients Method
5 potatoes 1. Boil potatoes with turmeric.
¼ tsp turmeric 2. Mash potatoes and add remainder of

1 tsp fresh green chillies
3. Flatten potato mixture in your palm and
1 tsp crushed jeero (cumin)
2 Tblsp mayonnaise add the block of cheese.
1 tsp crushed garlic 4. Roll into a ball or ovals.
fresh dhania (coriander), 5. Freeze until firm then dip in egg and
chopped bread or cornflake crumbs (I prefer to
cheese cubes double coat so it doesn’t burst at all when
frying).
6. Fry in shallow oil over medium heat and
serve

Chicken Pie Filling

Ingredients Method
1 kg chicken fillets (6 pieces), 1. Sauté onions in oil or ghee until golden.
cubed 2. Add cubed chicken, salt, turmeric, green

and red masala. Allow to cook for few

1 Tblsp ginger garlic
1 tsp green chillies, crushed 3. Add in the rest of the ingredients
2 tsp chilli powder excluding the chilli sauce. Do not dry or
salt to taste over cook the chicken.

½ tsp ground jeero (cumin) and dhania. Sauces and spices can be

Coloured sesame seeds
Coloured sesame seeds: 1. Seperate sesame seeds in 4 or 5 different
1 cup sesame seeds bowls.
4 - 5 different food colourings 2. Colour each batch a different colour.
3. Place the different coloured seeds in rows
on a baking tray lined with wax paper.
4. Bake on 110 degrees for a few minutes.
5. Leave to dry completely. Store in an
airtight container

Ingredients Method
3 slices bread, buttered 1. In a non-stick frying pan, fry burger
1 burger patty patty, polony and egg (turnover-style).
1 slice polony
Use the same pan for everything.
1 egg
2. Fry the chips separately.
1 potato, sliced into chips 
grated cheese 3. Place 1 slice of bread on the frying pan.
tomato sauce Top it with polony, egg, some chips and
mustard sauce grated cheese.  Add tomato sauce and
lettuce mustard sauce. Top with another slice.
4. Flip the sandwich over. 
5. On the slice of bread facing upward, place
a piece of lettuce, the burger patty, some
chips, grated cheese, tomato and mustard
sauce. Top with the third slice of bread.
6. Flip the whole sandwich over and serve
once golden brown.

Tuna Lagan

Ingredients Method
2 slices bread 1. Braise together bread and milk like a
1 cup milk porridge with butter.
2 Tblsp butter or ghee
2. Squeeze all water out from grated onion.
1 tin tuna, drained
3. Mix all ingredients together.

1 cup cheese 4. Bake at 180°C for 25 mins in a greased
salt and pepper to taste oven proof casserole.

Ingredients Method
¾ cup flour 1. Mix the flour, baking powder, garlic, salt

½ tsp crushed garlic
2. Add in the milk and egg.

Dhall and Rice

Ingredients Method
1 cup pea dhall, washed 1. Boil the washed dhall in 1 litre water,
1 tsp salt scoop out the scum that collects on top.
½ tsp turmeric powder
2. Add all the ingredients to the dhall.
1 tsp crushed red chillies
3. Simmer on medium heat until dhall is
½ tsp sugar
cooked and mushy.
Tempering 4. Add more water if needed.
2 Tbls ghee 5. When the dhall is thickened and almost
1 tsp whole jeero (cumin) smooth, blend with a stick blender.

1 whole dried red chilli

1 Tbls fried onions or 1 small
onion 1. Heat the ghee in a saucepan, add the
mustard and jeero seeds and allow to

4. Pour over dhal and stir well.

Chicken Chana Dal

Ingredients Method
1 ¼ cup chana (gram) dhal, soaked 1. Soak chana dhal for a few hours or you
3 Tblsp oil can, par boil.

2. In a preheated pot pour in oil, add the
cinnamon sticks

1 tsp jeero (cumin) seeds 3. Cook onions until golden.
1 chicken cut into pieces 4. Add chicken and ginger garlic paste. Mix
2 tomatoes and cover with pot lid. Allow to cook

1 Tblsp ginger garlic paste 5. Slit a cross at the bottom of the tomatoes.
1 Tblsp dhania (coriander) powder
Blanch the tomatoes in hot water until
1 tsp jeero (cumin) powder
1 tsp turmeric powder the skin can easily be removed. 
1 tsp chilli powder 6. Chop the tomatoes and add to the
salt chicken, also add in the tin tomatoes,
fresh dhania (coriander), chopped spices and salt to taste. 
7. Add chana dhal and enough water to
cover the chana and chicken. Stir gently. 
8. Cover and cook on low to medium heat
for 20 minutes, checking and stirring
occasionally. 
9. When water has reduced and the oil
comes through to the top you are ready to
serve. Garnish with chopped coriander.

Garlic Roast Chicken

Ingredients Method
1 kg chicken (leg quarters) 1. Marinate the chicken with all the
1 Tblsp ginger garlic paste ingredients (excluding garlic butter) for a
1 Tblsp lemon juice

2. Set the chicken on an oven tray lined with
¼ tsp turmeric powder
1 tsp chilli powder foil.

Butterless Butter Chicken

Ingredients Method
1 kg chicken fillets, each fillet 1. Heat coconut oil in flat pot.
cut into 4 or 5 cubes  2. Add ginger-garlic and garlic. Allow to

Detailed Method:
1. Combine step 1 & 2 to form a marinade.
2. Marinate chicken for 1 hour (if possible).
3. Soak wooden skewers in water for 15 minutes to prevent from burning.
4. Thread chicken cubes through skewers.
5. Put oven on grill setting and grill skewed chicken for +- 20 minutes,
turning every 5 minutes to get even cooking.
6. Remove chicken from oven and set aside.
7. In a pot add ingredients from step 3 and braise until onion are browned.
8. Add in ingredients from step 4 and braise for a few minutes.
9. Add fresh cream and cook for a further few minutes.
10. Add in grilled chicken and simmer for 10 minutes.
11. Garnish with freshly chopped dhania and serve with roghni naan.

1 Tblsp whole jeero (cumin) 1. Dry roast the whole jeero in a pan, until

Homemade Naan

Ingredients Method
1 cup warm water 1. Combine the dough ingredients in a mixer
10 g instant yeast and blend for a few mins until a soft dough
(green packet) has been formed.
1 tsp sugar 2. Place dough in a greased bowl. Cover and let

rise in a warm place until doubled.
3 Tbsp olive oil
3. Preheat a tawah or a pan to medium heat.
¼ cup plain yogurt
2 ½ - 3 cups flour 4. Divide dough into 15 pieces.
Garnish: 5. On a floured surface, roll out each piece into

Ingredients Method
2 cups flour 1. Combine flour and salt into mixing bowl.
½ tsp salt 2. Add oil and mix until it forms breadcrumbs.
3 Tblsp oil
3. Pour in boiling water which has just reaching
+- 1 cup boiling water
boiling point. The amount of water required
depends on the humidity. It's always best to add
a little at a time.
4. Mix until well combined using a spoon.
5. Once it forms a ball, place onto a clean, floured
surface and knead very well for about 5 - 7
minutes until smooth. The kneading process is
important as you should be able to poke the
dough with your finger without it sticking to it.
6. Roll out into a rectangle shape and make
indentations using your fingertips.
7. Smear with ghee and sprinkle liberally with
flour.
8. Roll into a Swiss roll and slice 10 even slices.
9. Shape into bun shapes and roll out thinly on a
floured surface. Heat up non-stick frying pan
and fry using ghee until golden brown spots
form on both sides.

crushed garlic for pizza. Sprinkle mozzarella, zaatar spice and a

Italian seasoning or sea
Focaccia - Grease a pan and spread the dough -

herbs use a pan where the dough can fit into it. Make
rosemary dents with your fingers. Sprinkle fresh crushed
olive oil garlic, sliced olives, Italian seasoning or sea salt,
herbs, rosemary and olive oil. Bake for 25 minutes
and drizzled olive oil thereafter.

Kheeraj (Rice Pudding)

Dalgona Coffee

Ingredients Method
3 Tblsp coffee or milo 1. Dissolve the coffee, sugar and water in a
3 Tblsp sugar deep bowl, large enough to be used during
3 Tblsp hot water
whipping.
2. Boil milk and keep aside.
1 ½ cups milk
hot chocolate (optional) 3. Using a hand-held beater, beat the
ice cubes (optional) dissolved coffee mixture, until toffee
coloured, airy and thickened. (May take
about 3-8 minutes)
4. Pour the hot milk into mugs, and top
with the toffee coloured coffee cream. 
5. Dust with a little hot chocolate and serve
immediately.
6. Cold Dalgona Coffee: Use cold milk
instead of hot milk and add a few ice
cubes. Makes for a great iced coffee.
