Introduction

Background of the Study

A beverage is any type of drink. It's something you might offer a guest in your house; it's also the
favorite moniker of companies that manufacture both soda and juice — they’re known as
beverage companies.
The concept of using fresh edible flowers in cooking is not new. Today, many restaurants
use different flowers in their ingredients for an exotic taste and for a touch of elegance. Some
flowers are used for dessert.(Lyla 2019) There are many foods or product that can be used as
beverage or flavoring example: Lavender, jasmine,Rose, etc.but can santan flower extract be used
as a beverage or flavoring? Santan flower is a type of flower that contains a liquid that can be
used as a flavoring it is commonly found growing in natural places, apart from having medicinal
qualities, santan flowers are edible. Foragers regularly talk of plucking the flowers in the wild
and sucking on the sweet nectar. The petals also make great snacks when tossed into batter and
mixed thoroughly.  you can choose to grow santans for their beautiful flowers, for medicinal
reasons or culinary purposes. Whatever the reason that drives you to grow these beautiful
flowers, your efforts will be richly rewarded when they come into bloom.
Ixora coccinea is a species of flowering plant in the family Rubiaceae. It is a common flowering
shrub native to Southern India, Bangladesh, and Sri Lanka. It has become one of the most
popular flowering shrubs in South Florida gardens and landscapes. It is the national flower of
Suriname.

Calamansi (Citrus × microcarpa), also known as kalamansi, calamondin, Philippine

lime, or Philippine lemon, is an economically important citrus hybrid predominantly cultivated in
the Philippines. It is native to the Philippines; parts of Indonesia, Malaysia,
and Brunei (Borneo, Sumatra, and Sulawesi); as well as parts of southern China and Taiwan.
Calamansi is ubiquitous in traditional Philippine Cuisine. It is naturally very sour, and is used in
various condiments, beverages, dishes, marinades, and preserves. Calamansi is also used as an
ingredient in Malaysian and Indonesian cuisines.

Stevia is a sugar substitute made from the leaves of the stevia plant. It's about 100 to 300 times
sweeter than table sugar, but it has no carbohydrates, calories, or artificial ingredients. Not
everyone likes the way it tastes. Some people find it bitter, but others think stevia tastes like
menthol.

Question or Problem:

Alternative: Santan flower extract is an alternative ingredient for beverage

Review Related Literature

The santan flower, also known as the Ixora coccinea, is a popular ornamental plant in tropical
countries such as the Philippines, Malaysia, and Indonesia. Its flowers come in various colors,
including red, orange, yellow, and pink. While it is commonly used as a decoration, the santan
flower has also been traditionally used for medicinal and culinary purposes.
In some parts of Southeast Asia, santan flower tea is a popular beverage. The flowers are boiled
in water to make a fragrant tea that is believed to have various health benefits. According to
traditional medicine, the tea is said to have anti-inflammatory, anti-microbial, and anti-cancer
properties.
A study published in the Journal of Agricultural and Food Chemistry found that the Ixora
coccinea flowers contain high levels of flavonoids, which have been associated with a range of
health benefits, including reducing the risk of cardiovascular disease, cancer, and
neurodegenerative disorders. The study also found that the flowers have antioxidant properties
that may help protect the body against free radical damage.
In addition, the santan flower has been used in traditional medicine to alleviate various health
conditions such as fever, cough, and headache. Its tea is also believed to have calming effects
and is sometimes used as a remedy for insomnia.
While there is limited scientific research on the use of santan flower as a beverage, the traditional
use of the flower suggests that it may have potential health benefits. However, more research is
needed to fully understand the properties and potential benefits of santan flower tea. It is also
important to note that some people may be allergic to the flower, so caution should be taken
when consuming it.

Procedures for Preparation of Product

Collection and Preparation of Materials Ixora Coccinea Linn flowers (santan) were collected
from neighboring residences. The petals were washed thoroughly and dried by the researcher.
Three cups of distilled water are heated in a pan or any utility that you can use to boil water. As
soon as the water began to boil, the flowers of santan was added, and the researcher boiled the
santan flower for ten minutes in low temperature. Afterwards, the researcher allowed the petals
too steep for ten minutes for another ten minutes. The mixture was poured from the pan to a
pitcher and add a little bit of ingredient like stevia and calamansi so that it has a little bit of taste
and sweetness and pour in a glass of cup, and it is ready.

Testing and Data Collection Procedures

We are going to gather 20 volunteers to try our product. We have four types of santan flower
extract beverage. First, santan flower beverage with no ingredients, second, santan flower
beverage with stevia plant, third, santan flower beverage calamansi beverage, lastly, santan
flower beverage with both calamansi extract and stevia plant. 5 volunteers will try the santan
flower beverage with no ingredients. 5 volunteers will try the santan flower beverage with stevia
plant. 5 volunteers will try the santan flower beverage calamansi beverage. And, the remaining 5
volunteers will try the santan flower beverage with both calamansi extract and stevia plant.
