Chapter I
INTRODUCTION
Background of the Study
Coconut products are some of the major products that are export in the
Philippines. There are various ways to press the coconut which is done manually
mechanically and by machines as well.
Throughout the year, coconut have serve different purposes in the
household in terms of cooking in the certain factors who are into producing goods
such as cooking oil and as raw materials which cause its demand to rise. The
traditional way of extracting coconut milk is means of squeezing the presser
coconut with, as the defined as the time consuming and it involves with the use of
your hand.
A conceptual design of machine capable of grating coconut and further
extracting the milk was evaluated for its milk extraction efficiency. The grating
mechanism was equipped with rotary shredder whilst the extracting mechanism was
designed as screw-barrel assembly with variable pitch. Factors such as the motor
speed, gear, and speed ratios, size and number of grater bumps, geometry of
hoppers, and pitches of the extractor shaft were carefully considered.
In order to improve its quality a coconut presser with coconut grater
machine use to fully extract the milk from the coconut that has been developed. This
machine in the present time occurs as manually and mechanically operated ones. In
relevance to these machines, different studies have been made with different
purposes at hand.
Recent studies available have commonly focused on designing or modifying
the coconut machine in order to improve its performance quality and quantity of the
product or to have comparison into existing machine.
Given this situation, the researchers have been the opportunity to pursue this
study that will cater the well-being of the users of such machine.
The aimed of this study was to designed and manufacture a power squeezer
for the collection of the coconut milk in to this coconut grater with coconut presser
machine.

Review of Related Literature


This chapter presents that related studies undertaken by the researchers. The
study first shown was about the Coconut Presser with Coconut Grater Machine and
it uses, as this can supply the researchers with much needed additional information
on the methodologies available and used by other research counterparts.
Automation has played a vital, not only in modern industrial processes, but
also in agriculture crop processing system, it is characterized by self-acting machine
and devices with integrated control system that are often arranged in complex
industrial processes or systems, the necessary of automation is to reduce the human
effort and to save time, as the world is emerging with various type of technology for
better quality of life and efficient production of food, automation and mechanization
technology for agricultural machines are used for faster, lesser labor agricultural
production for sustainable agriculture, the agricultural industrial is already adopting
the modern way of crop production and processing, one of the agricultural crops
that need modern machines for more efficient production and processing is the
coconut ( (Walke, 2017).

COCONUT PRODUCTION
Coconut (Cocos nacifera L..) is widely cultivated in tropical and sub-tropical
countries , in the Philippines, statistics indicated that areas planted with coconut
covers 3..517 M hectares equivalent to 26% of the total agricultural land
(PSA,2015). Sixty-eight 68) out of 81 provinces are considered coconut areas,
representing 1,195 coconut municipalities, in 2015, the recorded number of bearing
trees reached 329.9 million with an average production of 14.902 billion nuts in the
last three years (PCA, 2017).
(Dar, (2017) ) stated that the coconut lands reached $2.0 billion in 2016.
Coconut can be considered as one of the major crops in many provinces in the
Philippines because of its abundant supply in the market, many surveys conducted
and have shown the entire parts of the coconut may be used for different purposes.
Its fresh grated meat has many uses to food processing and households particularly
in preparation of pastries, cakes, production of coconut milk and oil to be used as
important ingredients for many goods that can be seen in the markets.

According to Obefemi Awolowo (University, 2019) this study has to


developed a device to grater the coconut kernel extracts its milk and evaluated the
performance of the device. This was with a view to simplifying the process of
coconut milk production. Design related properties of the coconut kernel, such as
the pressing measure, moisture content and compression ratio were determined
using standard procedures.

TECHNOLOGY DEVELOPMENT FOR ORGANIC PRODUCTION OF


COCONUT
According to Imam Santosa, Endah Sulistiawati, Ika Dyah Kumasalari
Technology Development for Organic Production of High Quality of a Coconut
2019 Indonesia is a country that that has the largest coconut plantation in the word,
with its main copra products. The quality of copra produced from rural areas is low
and complained by the international market because its thought to contain aflatoxin.

FABRICATED COCONUT MILK MACHINE


According to Imam Santosa, Endah Sulistiawati, Ika Dyah Kumasalari
Technology Development for Organic Production of High Quality of a Coconut
2019 the purpose of this research was to develop and fabricate this coconut milk
machine.

EXTRACTING COCONUT
According to SA Odumi, OJ Ramunu Imperial Journal of Interdisciplinary
Research (IJR) 3 (9), 2017 the conventional traditional method of extracting from
coconut is stressful, inefficient and takes longer time. From the results obtained
from the wet basis and dry basis, it was noticed that the machine can perform better
when the coconut is dried to 10%-12% moisture content before extraction.
However, it is confirmed that, more coconut could be obtained from un-matured
coconut flesh.
COCOS NUCIFERIA L.
Umesh Patil, Soottawat Benjakul Journal of Food Science 83 (88). 2019-
2027, 2018 stated that coconut palm ( Cocos nucifera L.) is an economic plant
cultivated in tropical countries, mainly in the Asian region. Coconut fruit generally
consist of 51.7% kernel, 9.8% water, and 38.5% shell. Coconut milk is commonly

manufactured from grated coconut meat (kernel). Basically, coconut milk is an oil-
in-water emulsion, stabilized by some proteins existing in the aqueous phase.
Maximation of protein functionality as an emulsifier can enhance the coconut milk
stability.

PRESSING MECHANISM
According to I Wayan Surata, Tokorda Gde Tirta Nindhia, D Budyanto, AE
Yulianto IOP Conference Series: Materials Science and Engineering 201 (1),
012015,2017 the process of cooking oil production generally started with the ripe of
coconut meat and pressing the grated meat to obtain coconut milk. Pressing
mechanism to obtain coconut milk is a very important step decisive in the process of
the producing milk. The amount of milk produced depends on the pressure applied
at the time.

DESIGNED OF A COCONUT MACHINE


According to Obefemi Awolowo University, 2019 this study has to
developed a device to pressing the coconut. Some commercial mechanical pressing
tools that are available in the market are not efficient due to to the working steps to
much and take longer time per cycle of work. This aim of study was to design the
manufacture of a power squeezing the coconut milk.

PROCESS ON A COCONUT MILK


Coconut milk is the main raw materials needed for processing galamai.
Galamai quality is strongly influenced by the quality of the milk used. In
mechanical processing of coconut milk, coconut produced is influenced by the
amount of additional water and frequency milling. The process of adding the
coconut milk in the manufacture of galamai there are two phases to dissolve “saka”
and thick coconut to dissolve rice flour and Glutinous rice flour. Not yet known how
much additional water volume and frequency and mechanical squeezer milling
machine to produce coconut milk that is suitable for manufacture of galamai ( I
Roza, RA Fadri IOP Conference Seies: Earth and Environmental Science 327 (1),
012018, 2019).

QUALITY OF A COCONUT MILK


According to NS Zafisah, YA Yusof, MA Ali, NS Roslan, A Tahir, MG
Aziz, NL Chin Journal Food of Process Engineering 41 (1), e12602, 2018) Good
quality of coconut milk can provide with all the benefits of coconut but it is difficult
to store due to less shelf life. By converting coconut milk into powder, it shelf life
can be increased without using preservatives. The findings of this research work
provide basic fundamentals for food industry to produce better quality coconut milk
which is easy to handle, store and further use in combination with different dishes.

SQUEEZING MACHINE
Evawati Evawati, Irwan Roza, Rince Alfia Fadri International Conference
on Sustainable Agriculture (IOP Conf. Series: Earth and Environmental Science
2019) The mechanical squeezing machine is to produce coconut milk that is suitable
for the manufacture of galamai.

COCONUT MILK COMPOSITE SYSTEM


According to Xu Lu, Jinghao Chen, Mingjing Zheng, Juanjuan Guo,
Jingxuan Oi Yingtong Chen Ultrasonic sonochemistry 55, 135-148, 2019) In this
paper, a coconut milk composite system (glycerin monostearate as an emulsifier)
with different maize additives (e.g., maize kernels and starch with different amylose
contents) was treated with high-intensity ultrasound irradiation (HIUS, frequency 20
KHz). However, coconut milk with high proportion of amylopectin had the best
stability.
According to Laura Patricia Martinez-Padilla, Floover Steven Hernandez-
Roias Maria Guadalupe (Journal Food Science and Technology, 1-10, 2022)
Coconut milk was prepared by milling the pulp (5:1 water to coconut pulp ratio),
further destablished at pH 4 and centrifuged to obtain the cream and cream protein
fractions (control process).
According to Patil, Benjakul, Prodpran, Senphan, and Cheetangdee (2017)
reported that different maturity stages had the marked impact on the chemical
composition of coconut meat and milk. Coconut milk can be prepared at home from
grated meat by squeezing with hand, whereas industrial or commercial scale
employs the screw press or hydraulic to extract the milk.

According to Patil et al. (2017) carried out a comparative study to evaluate


the physicochemical properties and emulsion stability of coconut milk obtained
from the coconut at three different maturity stages.
Coconut milk proteins play a role as the emulsifier to stabilize the oil droplets in
the emulsion. After enzymatic hydrolysis of those coconut proteins, the emulsion
was unstable with concomitant release of oil from the emulsion (Patil &
Benjakul, 2017). 
Arado (2017) coconut production is not competitive. Thereby discouraging
the farmers to continue venturing into coconut farming. As a result, coconut
production has declined over the past decade. In order to increase coconut
production and increase the exports of raw and processed coconut products,
scientists and policy-makers require a comprehensive assessment of the current state
of coconut production and coconut supply chain in the Philippines as well as an
assessment of a barriers in increasing production coconuts.
Chemical Engineering (Journal 316,506-513.2017) stated that the coconut
shell derived mesoporous carbon (CS-AC) is explored as prospective supercapacitor
component in Li-ion and Nation capacitors (LIC and NIC) along with
prelithiated/sodiated natural plant devised hard carbon (HC) as battery component
in single electrode configuration.
Industrial Crops and Products 109,134,-140,2017 stated that the objective of
this study was to prepare and evaluate activated carbons from coconut shell and
babassu coconut, a waste biomass highly available.

NUTRITIONAL COCONUT
Journal food of science and technology (2022) stated that fresh coconut
products are valuable for many food preparations owing to their nutritional and
flavor properties. Coconut is also known for its by-product namely coconut flour,
which is rich in protein and dietary fiber could be used in the preparation of
functional foods.

DEHUSKING MACHINE
South Asian Journal of Technology and Science 1 (2) 42-47, 2020 stated that
coconut dehusking is one of the procedures that take numbers of time and efforts.
Mostly they involve human labor with the help of manual tools that made from steel

or wood crowbar. However, most of them, only focus to dehusk only the coconut.
Therefore, objective of thus paper is to determine the conceptual designs of dual
operating dehusking machine.

EXTRACTED COCONUT MILK


Drying Technology 35(1), 76-87,2017 stated that the objective of this work
was to optimize the spray dying babassu coconut milk, an oil in water emulsion
extracted from babassu kernels, using maltodextrin 10DE and modified starch as the
carrier agents.
According to Italian Journal of Food Science 29(1),2017 based on chemical
analysis, mature coconut (MC) milk had the highest moisture content, followed by
immature coconut (IMC) and overlay mature coconut (OMC)milk respectively.
According to Feti Fatimah, S Gugule, T Tallei J.Appl.Sci.Res 13(6). 34-44,
2017 coconut milk plays important role in Asian traditional foods. The milk is the
natural oil inwater emulsion extracred from mature coconuts endosperm, in order to
extend its retention period, then one of the efforts is to make it to powder.
Food Research International 101,198-202,2017 stated that the influence of
cooking on the nutritional value of king mackerel when cooked in coconut milk or
pan fried in coconut oil was verified from the alternations in the fatty acid conten;
formation of cholesterol oxides and nutritional quality indicesof the lipids.

COCONUT HUSK
Results in Physics 11, 1-4, 2018 stated that in this work, waste coconut husk
was explored a potential raw material for silica production. Coconut husk was
burned in controlled environment inside electrical furnace.

COMMERCIAL CROP
Biomed Research International 2018,2018 stated that the coconut palm
(cocos nuciferia) is an important commercial crop in many tropical countries but its
industry generates large amounts of residue. One way to address this problem is to
use this residue coconut husk, to produced second generation ethanol.
Arabian journal of chemistry 10, S3381-S3393, 2017 stated that the
conclusion of coconut milk may not be suitable as an interim transport media due to
poor maintenance of cell viability.

Dental Traumatology 33 (3), 160-164,2017 stated that the purpose of the


study was to compare and analyze the ability of a coconut milk and probiotic milk
to maintain PDL cell variability.

Objectives of the Study


Generally, the objective of the study is to develop a Coconut Grater and
presser. Specifically this research endeavor aims to;
1. Design the Electric Coconut Grater with Coconut Presser with its
necessary equipment
2. To develop the Electric Coconut Grater with Coconut Presser machine
3. To test its functionality

Significance of the Study


This study is significant to the following;
This study will help housewives, chefs, and person who are in the field of
coconut production business in terms of the use and efficiency.

To the researchers, this study will help them provides baseline data for
those who are manufacturing food preparation machines

To the Cagayan State University Lasam Campus, this study will help
student’s easy, safe, use and rapid to operate this coconut grater with coconut
presser machine.

To the students, this proposed study will serve as one of their references in
innovating more machines that can truly help humankind. This study will help the
students to think beyond their capabilities that there is so much more they can do to
the existing thing around them.

To the agriculture industry, this is will serve as a help for faster, lesser,
labor agricultural for sustainable agriculture.

Scope and Limitation of the Study


The scope and limitation of this study is only applied to a specific good
which is the coconut. This study will focused on a production process through a
conventional integrated machine. The study will add up new process and then

integrated to the current researchers which are vital for research innovation and
essential time and energy convenience. This study limits itself to the development
and innovation of the coconut grater with coconut presser machine. Furthermore,
the enhancement of the waste plans for the machine is safety and efficiency.

Definition of Terms
The following are defined operationally:
AFLATOXIN – refers to a group of closely related metabolities produce by
Aspergillus flavous and Aspergillus parasiticus.
AMYLOPECTIN – refers to a component of starch that has a high
molecular weight and branched structure and does not tend to gel in aqueous
solutions.
AMYLOSE –refers to an anunbranched long polysaccharide, or sugar,
chain. A polysaccharide is molecule made up of multiple sugar molecules bonded
together.
AREACACEAE – refers to a family of perennial flowering plants in the
monocot order Arecales. Their growth form can be climbers, shrubs, tree-like and
stemless plants, all commonly known as palm. Those having a tree-like form are
called palm trees.
AUTOMATION – refers to an automatically controlled operation of an
apparatus, process, or system by mechanical or electronic devices that take place of
human labor.
CATER – refers to a variety of practical equipment and products created
and design in various colors, material, mechanisms, shapes, sizes, and style.
CENTRIFUDGE –refers to a machine with a rapidly rotating container that
applies centrifugal force to its contents, typically to separate fluids of different
densities (e.g., cream from milk) or liquids from solid.
EFFICIENCY – refers to the ability to do something or produce something
without wasting materials, time or energy; the quality of being efficient.
EMULSIFIER – refers to any of numerous chemical additives that
encourage the suspension of one liquid in another, as in the mixture of oil and water
in margarine, shortening, ice cream, and salad dressing. A number of emulsifiers are
derived from algae, among them algin, carrageenan, and agar.

EXTRACTOR – refers to a machine or device used to extract something.


GALAMAI – refers to a local name for three different species of genus
Schefflera, distinguished from each other by the leaf numbers and features.
MACHINE – a apparatus using on applying mechanical power and having
several parts, each with a definite function and together performing a particular task.
MALTODREXTRIN –refers to any of various carbohydrates derived from
the partial hydrolysis of starch and used in prepared food especially as a filler and to
enhance texture and flavor.
MECHANIZATION – refers to normally defined as the replacement of a
human task with a machine.
MESOPOROUS – refers to a nanoporous material containing pores with
diameters are other solid based heterogenous catalysts also being widely
investigated for biomass conversion.
MONOSTEARATE – refers to ingredient is widely used nonionic
emulsifier in food with the European food additive number E471. It belongs to the
emulsifier category of mono- and diglycerides of fatty acids.
NUCIFERIA – refers to a member of the palm family tree (Areacacea) and
the only living species of the genus cocos.[
PRESSER – refers to a tool used in the manufacturing industry to deform a
workpiece under high pressure.
SQUEEZER – refers to a press (something) together or from all sides
tightly.

Chapter II

This chapter deals with the used of Researcher design locate of the study, sampling,
materials and the chapter illustrated the steps for material and specification, product
development procedures, and testing procedures, the researcher will use this as a
starting points to conceptualize the electric coconut presser with coconut grater and
develop the method for coconut presser with coconut grater and also identify the
standardize, capability and test the coconut presser with coconut grater before
commercialization.

A motorized hydraulic pressing device and coconut grater for coconut milk
extraction is designed and developed, design considerations include higher
production rate in extracting coconut milk, high quality of milk, maintenance
friendliness and ease and safety of operation, the device is composed of a hydraulic,
motor, drill assembly, it has a variable pressing force which can be controlled by a
control switch, the pressing and grating device is expected to help the form-level
producers and cooperatives in enhancing the production efficiency and product
quality of virgin coconut oil, actual testing of the device shows that the amount of
milk that can be extracted is considerably increased at a shorter time.

RESEARCH DESIGN METHODOLOGY

The conduct of the study utilized experimental research design specifically food and
agriculture product development, the researcher was developed an innovative
product, the electric coconut presser with coconut grater, the product went through a
variety of tests, safety, friendliness of the electric coconut presser with coconut
grater machine.

LOCALE OF THE STUDY

The standardization of electric coconut presser with coconut grater, the researchers
was conducted in Cagayan State University Lasam, Campus. The electric coconut
presser with coconut grater machine was obtained from food machine at Cagayan
State University Lasam Campus.

MATERIALS

1. Steel Bar

It is mesh steel wires used as a tension dense in reinforced concrete and


mansoy structures to strengthen and aid the base material under tension which is
usually concrete.

2. Hydraulic Jack

Is a device lifting heavy objects especially one for raising the axle motion
vehicle off the ground so that a wheel can be changed or underside inspected.

3. Angle bar

An iron or a steel structure bar that has L- shaped cross section. It is often
installed within or along the edges of the beams and other platforms that may not
have enough capacity to carry the expected load.

4. Spring wire
A spring is an elastic object that stores mechanical energy. In
everyday use the term often refers to coil springs, but there are many
different spring designs. Modern springs are typically manufactured
from spring steel although some non-metallic objects like the bow are
also springs.

5. Coconut Grater Blade


This tool is used to grate coconut by placing the blade attached to it
front in the half-cut coconut and then twisted to take out the fine
shavings.

Electric motor is an electrical machine that converts electrical


energy into mechanical energy. Most electric motors operate through the interaction
between the motor's magnetic field and electric current in a wire winding to
generate force in the form of torque applied on the motor's shaft. And electric
generator is mechanically identical to an electric motor, but operates with a reversed
flow of power, converting mechanical energy into electrical energy.

Stainless container have long term valve. Its durable and does not break, so
there is no need to buy a replacement if you drop them on a hard.

PRODUCT DEVELOPMENT PROCEDURES


Fabrication Procedures
STEP PROCEDURE

1 The length and breadth of the coconut presser were used to construct
the frame. Electric welding was used to create the frame and install
the electric motor.

2 By turning on the clamp stepper motor and moving the clamp


forward for contraction, it is possible for the rotating grater blade to
cut through the initial section of the coconut flesh.

3 By turning on both the stepper motor in the clamp mechanism and the
stepper in the blade mechanism, the scraping blades are spread apart.

4 The wire spring is used to regulate the hydraulic jack and pressurized
machine using an electric drill.

MACHINE PROCEDURE

STEP BY STEP HOW TO OPERATE THE MACHINE

Here are the steps on how to operate the Electric Coconut Presser with Coconut
Grater.

 Plug in the outlet to start the electric motor


 Turn on the switch to start the engine
 Take the cracked coconut, begin to grate it with the grater
 Put the scraped coconut and then put the container in the middle and
then start squeezing with the hydraulic jack using electric drill and
push to release its juice
 Place the coconut container below so that the coconut juice flow is
placed in its container
 Turn it off and unplug it

CLEANING PROCEDURES

STEPS BY STEPS ON HOW TO CLEAN THE MACHINE

 Unplug the electric motor before start to clean and also lets wait for
our electric motor to cool down
 Then researchers get a clean towel or wipe and then researchers will
start cleaning for the grater blade
 Clean the basin
 Start cleaning our coconut presser
 Clean the electric motor ,hydraulic jack
 Clean the body of the base

TESTING PROCEDURE

In testing the grated coconut, the researcher used grater blade to determine
which blade is fitted to purpose of grating.

1. COCONUT
a. Remove the coconut shell
b. Crack the coconut
c. Remove the coconut water
d. Grate the coconut
e. Plug and switch the electric motor simultaneously
f. Grate the coconut
g. Turn off the switch and remove the plug

While to squeezed the coconut milk the researcher used hydraulic jack to
operate the machine.

2. COCONUT MILK
a. Put the coconut milk to the center of machine
b. Start squeezing with the hydraulic jack
c. The coconut begins to be squeezed
d. The coconut milk comes out

Over all with the use of this automated machine it is highly efficient as it
involves less effort and quite easy to use just in a short minute compared to manual
devices which consumed time and effort. Therefore the machine was fine and our
device was able to shred the coconut and there was no problem on it.

CHAPTER III

RESULT AND DISCUSSION

The Components of Grater and Electric Motor

The grater blade is fit in ¾ with 20 mm shafting that is used to grate coconut
by placing the blade attached to it front in the half cut coconut and then twisted to
take out the fine shavings. It is design mainly to grate the coconut while operating
through with the use of electric motor. The electric motor has 220v
/60HZ/1740r/mm which motors operate through the interaction between the
motor's magnetic field and electric current in a wire winding to generate force in the
form of torque applied on the motor's shaft.

The Components of Hydraulic Press

The hydraulic press has 5tons which lifting heavy objects especially one for
raising the axle motion vehicle off the ground so that a wheel can be changed or
underside inspected. The spring is an elastic object that stores mechanical energy
which have 27.2mx4mm and supported by hydraulic jack.

The Components of Electric Drill

A power drill is a tool with an electrical motor that rotates a replaceable drill
bit at your choice of speeds to create a hole in a variety. It composed of 880W, 10
mm, 220-240v, 50-60 Hz speed and 0-2800 r/min.

The Performance Test Using the Coconut Milk

The factors considered in this experiment were machine speed, and time. The
performance result reveal that the weight of coconut milk graterted at 240 grams (g)
was relatively the same with the extracted of 250 grams (g) but were significantly
higher compared to the other two levels which is shredded a ½ cup of coconut milk
is (50g) and 2/3 cup is (66g). TTT

CONCLUSION

Hence, the researchers studied about the coconut grater and presser machine
learned about the difference existing machine with their working application. To
conclude with, a final design of dual purpose grater and presser machine have been
decided in this paper. Several research and development work needs to be done for
further task. This will introduced to the community with a new product that may
help dealing with coconut presser and grating operation. There are so many types of
machine been invented but the innovation still comes with new ideas. Therefore, the
creation of this dual purpose coconut grater and presser machine just a part of
innovation to help the human being.

RECOMMENDATION

Base on the conclusions presented, the following recommendations are suggested:

1. The researchers recommend that milk extracted from this coconut presser
and coconut grater machine be subjected to other tests as related to nutrition
and also will reduce time, effort, and efficient.

2. The researchers recommend that the future researchers work will provide
clarity about this coconut presser and grater machine used. And the size of
all components that suitable for this machine.

3. The researchers recommend that the coconut presser and grater machine
should be scaled up to suit industrial production in related to innovative
research for national development.

4. The researches recommend that the designed and fabricated machine tested
multi- purpose grating machine be used for the purpose.

5. The researchers recommend that grating machine be extended to the


community especially to the identified areas where coconut is abundant.

6. The researchers recommend that coconut grater and presser machine be


commercialized
