Apple Bread
"Golden Delicious or Granny Smith apples seem to work best for this breakfast bread. Four
medium apples will yield about 3 cups when shredded. This bread is very good in the morning
warmed in the toaster oven and served with butter. Also makes great French Toast!"
3 cups flour, 1 teaspoon baking soda, 1/4 teaspoon baking powder, 1 teaspoon salt, 1 teaspoon
ground cinnamon, 3 eggs, 3 cups peeled and shredded apple (about 4 apples), 2 cups white
sugar, 2/3 cup vegetable or canola oil, 1 teaspoon vanilla
Apple Muffins
"A delicious cinnamon apple buttermilk muffin. The ingredients specify McIntosh apples, but
you can use your favorite kind."
2 or 3 McIntosh apples, 1/2 cup (1 stick) butter at room temperature, 1/2 cup brown sugar, 3/4
cup sugar, 2 eggs, 2 and 1/4 cups buttermilk, 4 cups flour, 3 Tablespoons ground cinnamon, 1
Tablespoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon vanilla extract, additional brown

Apple Nut Muffins
"An easy-to-make apple walnut or apple pecan muffin depending on your choice of nut.
Vanilla adds a little more flavor. You could also add a teaspoon of cinnamon or a little fresh
nutmeg."
