Stuffed Spicy Jalapeno Sensations

Ingredients:

● 8 slices bacon.
● 8 large jalapeno peppers.
● 3 oz cheddar cheese (grated).
● 3 oz cream cheese.
● Cooking spray.

Instructions:

● Preheat oven at 400.


● Slit each pepper lengthwise; remove a few seeds (depending on spiciness required).
● In a bowl, mix together cheddar and cream cheese and stuff each pepper with the
mixture. Close each pepper as much as possible.
● Wrap each pepper with a slice of bacon and spray with cooking spray.
● Place on a baking tray and bake for 20 minutes; grill for an additional 5 minutes until
golden brown.

Chilli Bacon & Cheese Bites

Ingredients:

● 5 oz cheddar cheese.
● 5 oz cream cheese.
● 5 oz bacon (chopped).
● 2 oz butter (room temperature).
● 1 tbsp butter (for frying).
● ½ tsp chilli flakes.
● ½ tsp black pepper.

Instructions:

● In a frying pan, heat 1 tbsp butter and fry the bacon until golden brown. Set aside and
allow to cool.
● In a large bowl, pour in the remaining fat from frying the bacon and mix in the rest of the
ingredients until well combined.
● Place in the refrigerator for 20-25 minutes.
● Make 24 bite sized balls and roll them in the chopped bacon.

Sizzling Sausage Nibbles

Ingredients:

● 12 small chorizo sausages.


● 5 oz bacon.
● 2 tbsp butter.
● 1 large onion.
● 12 toothpicks.

Instructions:

● Chop onion into long chunks and place a chunk on each sausage.
● Wrap half a slice of bacon around each sausage and bake in the oven until bacon and
sausage are thoroughly cooked and golden brown.
● Place a toothpick in the centre before serving.

Spicy Stuffed Mushroom Boats

Ingredients:

● 12 large mushrooms.
● 8 oz bacon.
● 7 oz cream cheese.
● 3 tbsp fresh chives (chopped).
● 2 tbsp butter.
● 1 tsp paprika.
● ½ tsp chilli flakes.

Instructions:

● Preheat oven at 400.


● In a large frying pan, fry bacon until very crispy; cool and crumble.
● Take off mushroom stems and finely chop. Add butter to frying pan with remaining bacon
fat and fry the chopped mushroom stems. Set aside.
● Place mushroom cups on a greased baking tray.
● Mix together bacon, mushroom stems, cream cheese, chives, butter, paprika and chilli
flakes until well combined.
● Add mixture to each mushroom cup and bake for 20 minutes until golden brown.

Aubergine Pizza Party Pieces

Ingredients:

● 1 large aubergine (chopped into thick slices with skin on).


● 1 cup mozzarella cheese (grated).
● ⅔ cup tomato passata.
● ¼ cup baby spinach.
● ⅓ cup cherry tomatoes (finely sliced).
● 1 tsp oregano (dried).
● ½ tsp salt.

Instructions:

● Preheat oven at 425.


● Cover a baking sheet with greaseproof paper and place the slices of aubergine on,
ensuring they do not touch each other.
● Sprinkle with salt and bake for 15 minutes.
● Turn over the aubergine slices and turn the oven on to grill.
● Spread each slice with 1 tbsp passata, add layers of spinach, tomatoes and mozzarella.
● Sprinkle over oregano and grill 4-5 minutes until cheese is melted.

Heavenly Halloumi Crostinis

Ingredients:

● 2 tomatoes (chopped).
● 2 x 7 oz packs halloumi.
● 2 garlic cloves (grated).
● ¼ cup fresh basil (finely chopped).
● 2 tbsp olive oil.
● Salt and pepper.

Instructions:

● In a bowl, mix together tomatoes, olive oil, garlic, basil and salt and pepper until well
combined. Allow to chill in refrigerator.
● Slice halloumi into 12 equal slices (½” thick). Grill on medium heat for 2-3 minutes per
side until dark grill lines appear.
● Top with tomato and basil mixture.

Salmon & Mozzarella Skewers

Ingredients:

● 12 cherry tomatoes.
● 12 mini mozzarella balls.
● 1 slice smoked salmon (cut into 12 pieces).
● 6 basil leaves (halved).
● 2 tbsp olive oil.
● Salt and pepper.
● 12 toothpicks.

Instructions:

● Push tomato onto each toothpick, add a slice of salmon, basil leaf and a mozzarella ball;
drizzle with olive oil and sprinkle with salt and pepper.
