Broccollini Wilted
STORAGE:
Store at 5°C or 41°F or Below
PROCEDURE:
Cut the edges of the broccolini and reserve it with stalk .
In a heavy sauce pot add the water al;ong with salt and allow to boil.
Add the brocollini and allow to boil until the stalk or stem is cooked and light crunchy
Once cooked remove with the laddle
In a mixing bowl add the other ingredients and before serving the dish when the broccolini is hot mix it together
and cot the seasoning on broccolini and serve hot
NOTES:
Follow the recipe card do not ‘eye ball’
Prepare all ingredients before starting
Donot over boil the broccolini
Don’t use the white part of the lime which is very bitter
Use only zest
The excess stalks of broccolini can be used for the preparation of soups
