Alejandro’s Puerto Rican Food:

Caribbean Rhapsody Chicken

Serves 6 (use large frying pan)

Ingredients:

 3lbs. of boneless/skinless chicken thighs


 10 leaves of fresh basil
 1 cup of fresh cilantro
 ½ a stick of butter
 ½ cup of capers

Seasoning
 6 garlic cloves)
 1 ½ tsp of kosher salt
 1 tbsp of dried oregano
 ½ tsp of black pepper
 ½ tsp virgin olive oil.
 ½ tsp of white vinegar
 ½ inch piece of fresh ginger

Directions:

1. Cut chicken in small cubes (about 1”)


2. In a mortar smash ingredients in B to season chicken. (In case you don’t have a mortar you
can use a food processor to prepare seasoning). Let marinate for at least 30mins.
3. Finely chop the fresh basil and cilantro in equal parts.
4. In a big frying pan in high medium heat add butter to sauté chicken about 4mins. on each
side.
5. Add cilantro and basil to the skillet. Continue to sauté until chicken turns golden. Add
capers and stir for 2mins.
6. Remove chicken and add cover with the basil, cilantro, and capers from the pan.
7. Serve.
