Bean Roast Level
Different regions have different classification systems for the roast levels of coffee beans.

In the USA, the roast levels are classified as:

- Cinnamon roast

- Medium roast

- City roast

- Full City roast

- French roast

In Pacific regions, the roast levels are classified as:

- Light roast

- Medium roast

- Medium Dark roast

- Dark roast

- Southern Italian roast

In 1996, SCAA (Specialty Coffee Association of America) introduced a quantitative measurement of roast by using spectrophotometer (i.e. Agtron
device) to measure the reflection of colour on the bean surface and expressed in Agtron unit.

With reference to the Agtron value classification of SCAA, our shop defines the roast levels as follows:

Beans grown at different locations and altitudes have different characteristics and taste.

In order to taste the specific characteristics of the coffee beans, it is important to roast the beans to the desired level and brew it correctly.

The specified roasting level can be achieved by monitoring the bean temperature, the sound of bean cracking and the bean colour. The bean colour
can also be cross-checked with the reference roasted bean samples which are calibrated with Agtron values.
