NUTRITION IN THE LIFE STAGES

LABORATORY RECIPE TEMPLATE

Recipe Calamansi Juice Prepared by: Ardina, Joyce

Yield 4 serving Time duration 15 mins.

INGREDIENTS
½ cup sugar
2 ½ cups water
½ cup calamansi juice

PROCEDURE:
1. In a saucepan, combine sugar and 1 cup of the water. Cook, stirring regularly, until sugar is
dissolved. Remove from heat and allow to cool completely.
2. Halve the calamansi fruit and extract the juice by hand or a juicer. Using a fine-mesh sieve,
strain and discard seeds and skin.
3. In a pitcher, combine calamansi juice, simple syrup, and the remaining 3 cups of water. Stir
well to combine.
4. Chill in the refrigerator for a few hours or serve over ice.

Recipe Melon Chiller Prepared by: Ardina, Joyce

Yield 4 servings Time duration 15 mins

INGREDIENTS
½ pcs. Melon
2 ½ cups cold water
14 oz. condensed milk
Ice

PROCEDURE:

1. Cut melon into half. With a spoon, scrape seeds and pulp.
2. Place pulp and seeds in a bowl, add 1 cup of the water, and repeatedly press down with the
back of a spoon to extract the juice. In a fine-mesh sieve, strain. Discard seeds and reserve the
juice.
3. Using a melon shredder, shred cantaloupe meat.
4. In a pitcher, combine shredded cantaloupe, the reserved juice (from straining pulp), and the
remaining 3 cups water.
5. Add condensed milk and stir to disperse. Serve in glasses over ice. Consume immediately.

Recipe Homemade Mango Nectar Prepared by: Ardina, Joyce

Yield 4 servings Time duration 15 mins.

INGREDIENTS
4 large mangoes
1 cup water
1 cup sugar

PROCEDURE:
1. In a saucepan, combine sugar and water. Over medium heat, bring to a simmer, stirring
regularly, until sugar is dissolved and syrup is clear and no longer cloudy. Remove from heat
and allow to cool completely.
2. Slice mangoes and scoop flesh, discarding pit and skin.
3. In a blender or food processor, process mango until smooth and well-blended.
4. In a pitcher, combine mango pulp and simple syrup. Stir until combined and refrigerate to chill.
5. Serve in glasses over ice.

INGREDIENTS
4 cups milk
7 ounces tablea de cacao
2 tablespoons peanut butter

PROCEDURE:
1. In a saucepan over medium heat, heat milk just until bubbles begin to form around the edge
and steam begins to rise from the milk. Stir regularly to prevent a film layer from forming.
2. Add the tablea and continue to cook, whisking with the batidor, until completely dissolved.
3. Add peanut butter and whisk until dissolved.
4. Remove from heat and twirl the batidor in the chocolate mixture for about 1 to 2 minutes or
until frothy.
5. If using a mechanical frother, insert frother whisk into the serving pot and holding at a slight
angle, turn on and move up and down for about 30 to 40 seconds or until frothy.
6. Pour into individual mugs and serve immediately.
