HISTORY OF BAKING
Baking may be a method of preparing food that uses dry heat, normally in an oven, but also can be tired hot ashes,
or on hot stones (Wikipedia). This method could even be applied to cooking different forms of food products, like
fruits or meat dishes. In this module, baking refers to the method of cooking most importantly breads, cakes and
pastries.

How Baking Started as an Industry


During the time of man’s primate ancestors, though they were hunters, grass and
grass seeds were used as their main food together with other wild plants. Because
these were eaten raw, the primate teeth and digestive organs suffered plenty. Their
growing need for better foods caused them to create some technical innovations.

These innovations included milling stones, control of fireplace and therefore the
discovery of meal mixed with water and subjected to heat which produced palatable
foods. Initially it had been all flat, hard on the skin and soft within the inside. With the
changes of time, cooking utensils are continue improving as well. That’s because of
the creative hands of our descendants.

During the last year of 11th century, however, when the Muslims were driven to Asia and
commerce was re-established, baking flourished and become an honored profession. Farmers
were encourage by the govt. to lift wheat for bread making. The bakers then organized their
guilds and set standard for the standard, production, and pricing of products. Since then baking
become a strong entrepreneurs.

Talking about baking with in the Philippines. Base on the


records, the 2 possible founders of baking within the
Philippines are said to be:

Spanish missionaries - Wheat was often utilized in food, by


missionaries, who introduced the diet, moreover because the
preparation and process to the locals.
Mr. Aquaver Natividad Uy – a Chinese baker who also
contribute knowledge and skill to the Filipinos. He believes that
introducing bakery to the Philippines would be very beneficial
so set the full baking process, and therefore the materials and
ingredients needed.
Both made their mark on how baking developed within the
Philippines. Like many introductions it took outsiders to
indicate the way and also the importance of baking within the
lifetime of every Filipino’s.

According to old reading materials, proved that wheat was grown within the province of Cavite, Laguna and Cagayan
Valley. During the days of Spanish galleon’s trade with Mexico, wheat become foodstuff of the many Filipino’s. In

convenience of the many people.

Growth of Baking Industry within the Philippines


Baking within the Philippines goes back to a minimum of k years ago. Cakes, pies, bread, biscuits, cookies and
crackers were first baked by the 19th century bakers. By 1958, the Philippines had become the second largest flour
importer. The baking trade the country was rated same level as baking within the U.S. To grow and further
strengthen the link of the 2 countries, the United States Wheat Association Inc. (USWAI) established an office within
the Philippines in 1962.

Within the late 1990’s almost everything


was operated using automated
machines. The utilization of enzymes
and dough conditioners helped extend
the period of time of the merchandise.
2004 the robotic systems were used for
the storage, retrieval, and makeup
systems of various baked products.
Baking industry become a productive enterprise today as
shown by the growing number of bakeshops. Some have engage in small scale business by
operating bakeshop at their small community. Schools in Metro Manila and other provinces offer
a baking courses as field of specialization.
Baking has indeed become a profitable commercialism.
