CHUTNEY

RAW MATERIALS (FOR MANGO CHUTNEY)


 Mango pieces – 1 kg
 Ginger – 5 gm
 Garlic – 5 gm
 Chillie powder – 5 gm
 Vinegar 1 bottle
 Sugar – 500 to 800 gm
 Salt – 10 gm

METHOD
1. Wash and clean the fruits, ginger and garlic
2. Peel and remove seeds from the fruit.
3. Cut the fruit into small pieces. (Use only stainless steel knife)
4. Peel and cut ginger and garlic into small pieces
5. Mix all the ingredients together and cook in vinegar in a stainless steel vessel. While
cooking stir constantly with a stainless steel spoon or ladle.
6. When the fruit pieces become tender and the mixture attains a thick jam like
consistency, remove from fire and fill into bottles.
7. Seal the bottles while hot.
