2. Wash with water 3. Parboil ribs 4. Wash again with cold water 5. Cut 3 chunks of ginger, 1 whole anise star, break into many pieces and use half a cinnamon stick, cut one stalk of green onion into big pieces, dried red chillies, 4 spoons of dark soy sauce, 3 spoons of light soy sauce, 1.5 spoons of rice wine, 1.5 spoons brown sugar. 6. Put in brown sugar and mix with oil constantly stirring 11. Once the sugar has melted and incorporated, put all the ribs in and cover uniformly with sugar 12. Add water to the point that ribs are covered and add in all spices and liquids but no eggs. Mix 13. Add eggs now. Turn heat to high and cover 14. Once boiling, switch heat to medium low. Stir occasionally and mind the eggs. Keep covered and let simmer for 1 hour 15. Check up on it every 15 mins and stir 16. After about an hour, use chopsticks to check tenderness of meat 17. Once tender, add salt to taste (third of a spoon is a good benchmark) 18. Simmer for another 15 mins 19. Turn off heat and let settle with lid on
