Ginger cookies

2-1/4 cups plus 2 tablespoons all-purpose flour


2 teaspoons baking soda (bicarb of soda)
1 teaspoon ground ginger
1 teaspoon cinnamon
½ teaspoon ground cloves
½ teaspoon salt
¾ cup unsalted butter, softened
1 cup granulated sugar
¼ cup dark molasses
1 large egg
1/2 cup Crystallized Ginger
½ cup coarse raw sugar (turbinado sugar)

preheat 375°
Stir dry. Beat butter and sugar. Beat in molasses and egg. Add dry. Stir in ginger. Chill for easy
handling. Roll balls in turbinado sugar. 8–10 minutes.

4-3/4 cups all-purpose flour

1 cup coarse raw sugar (turbinado sugar)
