The dancing spoon series:PANEER PAKODA RECIPE.

At Murugappa construction site story: I and biswajit ghosh saab(Udhe


India) was at night duty. One worker found inside the pipe in drunken
condition.We pulled him and report it to Security Deptt. of Godawari
Fertilizers Ltd.(A Murugappa Group Company). After some I was
selected for Alstom T&D India Ltd as an EHS Officer under Mr. Pradipta
Kumar Nandi saab and Yogesh Srivastava Saab.

Lets discuss about some crispy eatable snacks: Paneer Pakora.

INGREDIENTS

for marination:
 ▢1 tsp ginger garlic paste
 ▢½ tsp kashmiri red chilli powder / lal mirch powder
 ▢¾ tsp chaat masala
 ▢1 tsp kasuri methi / dry fenugreek leaves
 ▢¼ tsp salt
 Cubes of paneer/cottage cheese.

for besan batter:


 ▢¾ cup gram flour / besan
 ▢2 tbsp rice flour
 ▢¼ tsp turmeric / haldi
 ▢¼ tsp kashmiri red chilli powder / lal mirch powder
 ▢¼ tsp hing / asafoetida
 ▢¼ tsp chaat masala
 ▢¼ tsp salt
 ▢½ cup water
 ▢oil for frying
INSTRUCTIONS

 firstly, in a large mixing bowl take 1 tsp ginger garlic paste, ½


tsp chilli powder, ¾ tsp chaat masala, 1 tsp kasuri methi and ¼
tsp salt.
 combine well forming a paste.
 now add 9 cubes paneer and rub gently covering masala paste
to paneer. keep aside.
 further, prepare besan batter by taking ¾ cup besan and 2 tbsp
rice flour in a mixing bowl.
 also add ¼ tsp turmeric, ¼ tsp chilli powder, ¼ tsp hing, ¼ tsp
chaat masala and ¼ tsp salt.
 combine all the ingredients well.
 add in ½ cup water and whisk smooth.
 also, add a pinch of baking soda and mix gently.
 dip the marinated paneer into prepared besan batter and coat it
completely.
 furthermore, deep fry in hot oil till they turn golden brown.
 finally, paneer pakora recipe or paneer bajji is ready to serve.

Paneer pakora recipe with step by step :


1. firstly, in a large mixing bowl take 1 tsp ginger garlic paste,
½ tsp chilli powder, ¾ tsp chaat masala, 1 tsp kasuri methi
and ¼ tsp salt.
2. combine well forming a paste.
3. now add cubes of paneer and rub gently covering masala
paste to paneer. keep aside.
4. further, prepare besan batter by taking ¾ cup besan and 2
tbsp rice flour in a mixing bowl.
5. also add ¼ tsp turmeric, ¼ tsp chilli powder, ¼ tsp hing, ¼
tsp chaat masala and ¼ tsp salt.
6. combine all the ingredients well.
7. add in ½ cup water and whisk smooth.
8. make a smooth batter without forming any lumps.
9. also, add a pinch of baking soda and mix gently. do not over
mix as baking soda will lose its property.
10. dip the marinated paneer into prepared besan batter and
coat it completely.
11. furthermore, deep fry in hot oil
12. also stir occasionally and fry on both sides.
13. further, fry the paneer till they turn golden brown.
14. finally, paneer pakora recipe or paneer bajji is ready
to serve.

Points to be noted:

 firstly, press and wipe off excess moisture from paneer, else
it may splutter in oil.
 also using rice flour gives a crispy texture to pakora. you can
replace rice flour with cornflour for extra crispiness.
 additionally, slit the paneer in the center and stuff with spice
mix instead of coating it outside.
 finally, paneer pakora recipe or paneer bajji tastes great
when served hot.
