Standard Recipe
A.Minestrone Soup

INGREDIENTS QUANTITY
Leek 5 gr
Smoked Beef 15 gr
Butter as needed
Onion 10 gr
Potato 20 gr
Carrot 20 gr
Garlic 5 gr
Cabbage 10 gr
Spaggethi as needed
Tomato 2 ea
Tomato Paste as needed
Salt and pepper as needed

Cooking Method :
1. Saute Onion, garlic with butter until flavoury
2. Add Smoked beef, carrot and potato
3. Add tomato paste, and brownstock. Don’t forget to add herbs. Simmer
4. After boil, add tomato concase, spagetthi, and green vegetable.
5. Season it ,
6. Add mozarella as garnish

B.Italian Braised Beef with Green Salad

INGREDIENTS QUANTITY
Butter as needed
Onion 10 gr
Garlic 5 gr
Carrot 50 gr
Brown Stock 200 ml
Olive Oil 1 tbs
Tomato 2 ea
Tomato paste as needed
Salt and pepper as needed
parseley as needed
Beef Leg or Beef Rump 150 gr
Bayleaf as needed
Thyme as needed
Oregano as needed
Rosemary as needed
Tarragon as needed
Cooking Method :
1. In a large dutch oven, heat up 2 tbsp of olive oil.
2. Salt and pepper the meat on both sides.
3. On high heat, sear the beef on each side, about 5 minutes or until you get a
nice caramelization on the meat, then set aside.
4. In the dutch oven add in the onion and garlic and cook for 5 minutes.
5. Add in the tomato paste and cook for 2 minutes.
6. Add in the beef broth, bay leaf, parsley and the basil leaves.
7. Now you put the meat back into the dutch oven.
8. Salt and pepper to taste.
9. Put the cover on the dutch oven and braise in a preheated oven at 350 F for
about 3 hours.

C.Potato Gnocchi Garlic Butter Sauce

INGREDIENTS QUANTITY
Flour 50 gr
Potato 200 gr
Butter as needed
Parmesan as needed
Garlic 20 gr
Herbs and Salt and pepper
Cooking Method :
1. Wash the potatoes, but don’t peel. Boil until tender
2. Peel the potatoes, while they are still hot. Crush it.
3. Prepare a saucepan over medium heat, add warm water and crushed potatoes.
4. Add medium flour, stir together.
5. Add parmesan cheese. Add olive oil, and keep stirring until it doesn’t stick to the pan, remove
from the heat. Set aside.
6. Make small balls, use a fork, add a little motif to the surface of the gnocchi made, make a shape
like gnocchi.
7. Boil water in another large saucepan, add salt and oil.
8. Put the pieces of gnocchi in boiling water.
9. Lift the floating gnocchi.
10. Lift, store in a container that has been given oil / olive oil.

D. Vegetable Fritata

INGREDIENTS QUANTITY
Egg 4 pcs
Spinach 40 gr
Onions 30 gr
Red Paprika 30 gr
Milk 150 ml
Salt As needed
Pepper As needed
Herbs As needed
Feta As garnish
Olive Oil As needed
Cooking Method :
1. Pre heat oven , prepare the ingredients
2. Crack all eggs into a bowl and pour milk, salt, pepper, Herbs , stir it until mixed
completely
3. Warm oil in black pan , saute onion until fragrant , put in red paprika and green bell
pepper , and then put in the mixed egg to the black pan cook until set
4. After set put the frittata to the oven / salamander bake about 5 minute until the top
of frittata golden brown
5. Serve
