Sugar Cookie Bars

 1/2 cup unsalted butter softened to room temperature


 4 oz cream cheese
 1 cup white sugar
 2 teaspoons vanilla extract
 1/2 teaspoon almond extract optional
 2 large eggs
 2 1/4 cup all-purpose flour
 2 teaspoons cornstarch
 1 teaspoon baking powder (Gluten-free baking powder)
 1/4 teaspoon salt

Frosting

 1/2 cup unsalted butter


 2 oz cream cheese
 1/4 teaspoon salt
 1/2 teaspoon vanilla extract
 2 - 3 cups powdered sugar
 holiday sprinkles

How to Make Our Easy Christmas Cookies


For Sugar Cookies:

Preheat your oven to 350F degrees. Make sure to be careful and stay safe!
Line a baking pan with aluminum foil and lightly grease it or you can
e v e n l i n e i t w i t h p a r c h m e n t p a p e r.
I n a l a r g e b o w l , b e a t t o g e t h e r t h e b u t t e r, c r e a m c h e e s e , a n d s u g a r u n t i l
fluffy and fully combined. Beat in the vanilla extract, almond extract, and
eggs. Add the eggs in one by one and keep beating.

I n a s e p a r a t e b o w l s i f t t h e f l o u r, c o r n s t a r c h , b a k i n g p o w d e r, a n d s a l t . G i v e
this a good mix. Carefully beat the flour mixture into the butter mixture
about half and a half at a time.
Dust your countertop with flour and spread the cookie dough on it in an
e v e n l a y e r. Ta k e a c i r c u l a r c o o k i e c u t t e r o r a n y t h a t y o u h a v e a t h a n d . C u t
out the cookies!
Arrange the cookies on your baking tray and bake in the preheated oven
f o r 2 2 - 2 5 m i n u t e s o r u n t i l t h e t o p i s s e t . To b e s u r e i n s e r t a t o o t h p i c k i f i t
comes out clean you’re good to go.
C o o l t h e c o o k i e s c o m p l e t e l y, l e a v i n g t h e m i n t h e p a n a s t h e y c o o l . O r
shift them on a cooling rack.
For Frosting:

In a bowl beat the butter until soft, and then mix in the cream cheese.
C o m b i n e t h o r o u g h l y. N e x t , a d d t h e s a l t a n d v a n i l l a e x t r a c t t o t h i s m i x t u r e
and fold it in.

Wi t h t h e m i x e r o n l o w s p e e d b e a t i n t h e p o w d e r e d s u g a r a b o u t 1 / 2 a c u p a t
a time, until the desired sweetness and fluffiness is reached.
Frost the cooled cookie bars, then sprinkle with holiday sprinkles.
Cookie-cutter alternative
Here is a Christmas special tip, if you don’t have any cookie cutters at
h a n d . Yo u c a n s t i l l m a k e t h e s e d e l i c i o u s c o o k i e s ! A n d h e r e i s h o w.

Alternative Method 1:

For this just grab an ice cream scoop and scoop out the cookie dough. The
quantity depends totally on you, the bigger the scoop bigger the cookie.

Empty the scoop directly on the greased baking dish and let it settle (a
little tapping will help!). And there you go an easy way to make cookies
without using cookie cutters.

Alternative Method 2:

In this method take a baking tray with a deeper bottom, grease the baking

Here Are A Few Baking Tips For To Help You Bake The
Best Sugar Cookies Ever!
1. Bake cookies that are about the same size and shape together in
t h e s a m e t r a y. O t h e r w i s e , t h e s m a l l o n e s w i l l b u r n a n d t h e l a r g e
o n e s w o n ’ t f i n i s h b a k i n g a n d w i l l b e u n d e r c o o k e d . We d o n ’ t w a n t
a mess!

2. T h i s i s f o r t h i n n e r, c r i s p i e r s u g a r c o o k i e s . R o l l t h e c o o k i e d o u g h
thinner (about 1/8″) and watch for the edges of the cookies to just
b e g i n n i n g t o t u r n g o l d e n b r o w n t o k n o w t h a t t h e y a r e d o n e . Ta k e
out and cool!

3. T h i s i s f o r i f y o u l o v e t h i c k e r, s o f t e r s u g a r c o o k i e s . R o l l t h e
dough to about 1/4″, and look out for cookies and when they are
just beginning to turn lightly golden around the edges turn the
oven off. Let them cool completely on the cookie rack as they
may break if you try to move them while they’re still warm.
Don’t burn your mouth!
4. Make sure you are using real butter (not margarine or oil/ghee)
and that the butter is softened to room temperature (not melted).
N o r m a l l y, I j u s t l e a v e t h e b u t t e r o u t o n t h e c o u n t e r t h e n i g h t
b e f o r e I a m g o i n g t o m a k e t h e s e . O r i f i t ’s h o t t e r w h e r e y o u l i v e a
few hours before you make them is good too!

5. Same with the cream cheese, make sure it is softened to room


t e m p e r a t u r e , o r e l s e t h e f r o s t i n g w i l l c o m e o u t b u m p y a n d l u m p y.
I t w o n ’ t c o m b i n e i n t o t h e f r o s t i n g p r o p e r l y. M i g h t e v e n l e a v e a n
awkward taste.

6. C h e c k t h e e x p i r a t i o n d a t e o n y o u r b a k i n g p o w d e r. 9 t i m e s o u t o f
1 0 i f b a k e d g o o d s d o n ’ t t u r n o u t r i g h t , i t ’s b e c a u s e t h e
i n g r e d i e n t s w e r e n ’ t f r e s h . H a p p e n s t o m e a l l t h e t i m e a n d i t ’s
always the Baking powder!

7. Pushing the cookie dough evenly into the prepared pan before
b a k i n g i s s o m e t i m e s a l i t t l e t r i c k y. L i g h t l y g r e a s e y o u r h a n d s
with non-stick cooking spray or oil, and then press the dough into
t h e p a n . T h i s w a y i t w o n ’ t s t i c k t o y o u r f i n g e r s . Yo u c a n d u s t
them with some flour too!

8. The cookies should be fully cooled before frosting; otherwise, the


f r o s t i n g w i l l m e l t a n d b e c o m e r u n n y. T h i s w i l l c r e a t e a b i g g e r
mess so just be patient!

9. Add a little cream cheese to your frosting so that is not as sweet.


This is what I do to make it a little less sweet! Feel free to
replace the cream cheese with more butter if you prefer a classic

How to Store & Make-ahead These Christmas Cookies
Store the cookies in an airtight container at room temperature for up to 3
days, or in the fridge for up to 5 days.

Unfrosted cookies can be wrapped tightly in plastic wrap or foil and


frozen for up to 3 months. Thaw in the fridge overnight, and then bring
them to room temperature before frosting and serving. ENJOY!
