In the above sentence, the missing word (pronoun) in brackets would be that
which is not essential here, so we left it out.
So, what’s changed my life? The book (subject) and that refers to the book.
The thing that helped me most was knowing I wasn't alone.
Another example
My favourite building is the university library, which is surrounded by
fountains.
My favourite building is obviously stated. We know that the speaker likes the
library building of his university. The following clause simply tells us
something extra (more description).
e.g. My friend Andrew plays the bagpipes. He's Scottish, by the way.
3- With NDR clauses, there are commas before and after, and pauses when
wespeak.
My aunt (pause), who has been a widow for twenty years (pause), loves
travelling.

In these two examples, the relative pronouns who and which refer to the
subjects Paul and his last book respectively.
His last book, which I couldn't understand at all, has been a great success.
The relative pronouns who and which in the last two sentences refer to the
objects Paul and his last book. We can re-write the sentence by removing the
relative pronoun without changing the meaning, so that it would be easy to
understand the purpose of the relative pronoun.
