TWICE BAKED POTATOES

Ingredients:

3 Big Potatoes (cleaned/washed)

1 tbsp olive oil or any oil

2 tbsp unsalted butter or just butter

¼ tsp ground black pepper

½ cup fried ham or SPAM (minced/cubed/sliced), you can also fry this in the airfryer.

½ cup cream cheese (at room temperature

2 tbsp plain yogurt

2 tbsp freshmilk or evap milk

Salt (to taste)

Paprika

Shredded cheese

Procedure:
1. Brush all sides of potato with oil
2. Bake the potato in Airfryer.
3. Timer at 1 hour @180 degrees Celsius / or until tender
4. Check the potato from time to time with a knife or fork
5. Once done, cut the potatoes in half lengthwise
6. Scoop out the potato, be careful not to damage the shell
7. Mash the potato using a fork or an egg beater
8. 3 big potatoes should give you 1 full cup of potato
9. Mix the butter.
10. Mix the cream cheese.
11. Put the yogurt.
12. Gradually put the milk, until you reach desired consistency
13. Mix the ham or spam
14. Put black pepper, mix.
15. Mix around 6 tbsp shredded cheese.
16. Some ingredients already have salt so you need taste the mixture at this point.
17. Add salt if needed then mix.
18. Mix it some more until you are satisfied with the consistency.
19. Fill the potato shells with the mixture.
20. Top each potato with shredded cheese.
21. Sprinkle with paprika
22. Bake it again in the airfryer. 7 mins @ 180 degrees Celsius
23. And it’s done!
24. Garnish it with spring onion if you want.
25. Enjoy it with your family with some wine or sparkled drinks.
