ARROWROOT
Arrowroot is a starchy root vegetable similar to yam, cassava,
sweet potato, and taro.

ANTHOXANTHIN
Anthoxanthins (flavones and flavonols) are a type of flavonoid
pigments in plants.

ANTHOCYANIN
Anthocyanins are colored water-soluble pigments belonging to
the phenolic group.
BLANCH
Blanching is scalding vegetables in boiling water or steam for a
short time.

BRAISE
It's a cooking method were food is sauteed at high
temperature.
BRUSSELS SPROUTS
Is a member of the Gemmifara cultivar group of cabbages
grown for its edible buds.

CAROTENOIDS
Are pigments in plants, algae, and photosynthetic bacteria.

CHOP
Cut (something) into pieces with repeated sharp blows of an axe or knife.

CANNED VEGETABLES
Any canned food that has been hermetically sealed and commercially
processed.

DRIED VEGETABLES
Vegetables that have been dehydrated or dried in order to extend the
shelf life.

DICE
Is always finely chopped, consistent in size, and neat in appearance.

DEEP FRY
Fry (food) in an amount of fat or oil sufficient to cover it completely.

ENOKI
An edible Japanese mushroom, growing in clusters, with slender stems
and small caps.

EGG PLANT
Aubergine or brinjal is a plant species in the nightshade family
Solanaceae.

FINE JULLIENNE
Food (such as meat or vegetables) that has been cut into thin strips.

FINE BRUNOISE
The standard in French cooking and produces small cubes measuring 1/16
by 1/16 by 1/16 by 1/16 inches.

FRUCTOSE
A sweet substance which occurs naturally in fruit and vegetables.

GRATIN
A dish that is topped with cheese, or bread crumbs mixed with bits of
butter, then heated in the oven.
GRILL
Cooking food on a rack over a heat source, usually a charcoal fire.

GLAZE
A sauce that is cooked onto a protein or vegetable so that the sugars
caramelize.

HABANERO
Is a hot variety of chili. Unripe habaneros are green, and they color as
they mature.

HARICOT BEANS
It is a dry white bean that is smaller than many other types of white
beans.

HAMBURG PARSLEY
Hamburg parsley is an off-beat vegetable also known as parsley root.

ITALIAN RED ONION


Grows in a small area of Calabria in southern Italy, Capo Vaticano, near
the city of Tropea.

ITALIAN SWEET PEPPER


The friggitello is a sweet Italian chili pepper of the species Capsicum
annuum.

IVY GOURD
Also known as scarlet gourd, tindora and kowai fruit, is a tropical vine.

JULLIENE
Is a culinary knife cut in which the food item is cut into long thin strips,
similar to matchsticks.

JERUSALEM ARTICHOKES
It is cultivated widely across the temperate zone for its tuber, which is
used as a root vegetable.

JICAMA
Is a nutrient-dense food that is low in calories and high in fiber and
water.

KABOCHA SQUASH
A type of winter squash, a Japanese variety of the species Cucurbita
maxima.

KIDNEY BEANS
The kidney bean is a variety of the common bean. It resembles a human
kidney and thus is named after such.

KOHLRABI
German turnip or turnip cabbage, is a biennial vegetable, a low, stout
cultivar of wild cabbage.

LEAVES VEGETABLES
Leaf vegetables, also called leafy greens, salad greens, pot herbs,
vegetable greens, or simply greens.

LARGE DICE
Is a culinary knife cut measuring 3/4 inch × 3/4 inch × 3/4 inch.

LOZENGE
Slicing fruits and veggies into diamond-shaped pieces measuring around
½ inch by ½ inch by ⅛ inch.

MINCE
The finest level of chopping, and is frequently done using a food
processor.

MUSHROOMS
Mushrooms are fungi but are counted as vegetables.

MEDIUM DICE
Medium dice measures 1/2 inch × 1/2 inch × 1/2 inch, and is a smaller
version of the large dice.

NAPA CABBAGE
Napa cabbage is a type of Chinese cabbage originating near the Beijing
region of China.

NAVY BEANS
It is a dry white bean that is smaller than many other types of white
beans.

NEW POTATOES
Have thin, wispy skins and a crisp, waxy texture.
ONIONS
Also known as the bulb onion or common onion.
OYSTER
Oyster is the common name for a number of different families of salt-
water bivalve molluscs.
OKRA
Is a flowering plant in the mallow family. It has edible green seed pods.
PAYSANNE
A French term that is used to describe vegetables that have been cut into
thin slices.
PROTEIN
Are large, complex molecules that play many critical roles in the body.
PEANUTS
Also known as the groundnut, goober, pindar or monkey nut, is a legume
crop grown mainly for its edible seeds.
QUINOA
Quinoa is a flowering plant in the amaranth family.
ROAST
Cook (food, especially meat) by prolonged exposure to heat in an oven or
over a fire.
ROOTS VEGETABLES
Root vegetables are underground plant parts eaten by humans as food.
RADISH
The radish is an edible root vegetable of the family Brassicaceae that was
domesticated in Asia.
SEED VEGETABLES
Seeds usually grow in pods which are sometimes eaten along with the seeds.
STEM VEGETABLES
Stem vegetables include asparagus and kohlrabi.
SLICE
Means to cut across the grain into thin, uniform pieces.
TOURNE
A method of cutting and peeling root vegetables into oblong, seven-sided
football-like shapes.
TUBERS VEGETABLES
Vegetables which grow underground on the root of a plant.
TOMATOES
The tomato is the edible berry of the plant Solanum lycopersicum.
ULLUCO
Ullucus is a genus of flowering plants in the family Basellaceae, with one
species.
UPLAND CRESS
Barbarea verna is a biennial herb in the family Brassicaceae.
URAD BEAN
Is a bean grown in South Asia. Like its relative, the mung bean.
VARIETY
Are parts of plants that are consumed by humans or other animals as food.
VITAMIN A
Vitamin A by including good sources of beta-carotene in your diet, as the body
can convert this into retinol.
VEGETABLE COMBINATIONS
Serving of food that contains two or more of the required meal components.
WAX GOURD
Is a vine grown for its very large fruit, eaten as a vegetable when mature.
WATERCESS
Is a species of aquatic flowering plant in the cabbage family Brassicaceae.
WITLOOF
A lettuce-like veggie that falls into the chicory category.
XIGUA
Xigua is Chinese for watermelon. Just like the cucumber and zucchini,
watermelon belongs to the cucumber family.
YELLOW PEPPER
The bell pepper is the fruit of plants in the Grossum Group of the species
Capsicum annuum.
YELLOW SQUASH
Summer squash are squashes that are harvested when immature, while the
rind is still tender and edible.
YARDLONG BEAN
The asparagus bean is a legume cultivated for its edible green pods containing
immature seeds.
ZUCCHINI
Is a summer squash, a vining herbaceous plant whose fruit are harvested.
