VANILLA CUPCAKE

Ingredients:
1 ¼ cup All Purpose Flour
1/3 cup of granulated sugar
2 tbsp baking powder
1 tsp salt
4 egg yolks
1 tbsp vanilla
1 cup oil
1 cup milk
Frosting:
4 egg whites
1 tsp cream of tartar
1 ½ cup of powdered sugar
1/3 cup of granulated sugar

PROCEDURE:
1. Preheat oven to 350°F (176°C) and prepare a cupcake pan with liners.
2. Add the flour, sugar, baking powder and salt to a large mixer bowl and combine. Set aside.
3. Add the milk, vegetable oil, vanilla extract and eggs to a medium sized bowl and combine.
4. Add the wet ingredients to the dry ingredients and beat until well combined.
5. Slowly add the water to the batter and mix on low speed until well combined. Scrape down the
sides of the bowl as needed to make sure everything is well combined. Please note that the batter
will be very thin.
6. Fill the cupcake liners about half way and bake for 15-17 minutes, or until a toothpick comes
out with a few moist crumbs.
7. Remove the cupcakes from oven and allow to cool.
8. To make the frosting Place egg whites in the bowl of and beat using the whisk until frothy.
Add 1/4 cup of the sugar and mix well. Gradually add the remaining cups icing sugar, beating on
low speed and scraping down the sides.
9. Increase the speed to high and continue to beat the mixture until soft peaks form, about 5
minutes. At this stage, the icing will be very thick. Add water, a few drops at a time, to thin it to
the consistency appropriate for the kind of decorating you are doing.
10. Add food coloring to make it colorful.

BUTTER ICING
Ingredients:
½ cup butter
½ cup margarine
1 ½ cup icing sugar
Few drops of yellow food color if desired

Procedure:
1. Cut the chilled butter and margarine into 6 part each.
2. Cream the butter and margarine and gradually add sugar and continue beating.
3. Add few drops of yellow food color if desired
