CHAPTER 2-RRL OSIDO

Banana is one of the most well-known and important fruits in the world. It contains
nutrients such as fiber, potassium and various antioxidants. There are different sizes and types of
banana while its colors usually vary from green, yellow, and sometimes red. Bananas also
promote health benefits mostly in terms of heart and digestive health. With these, bananas can be
a good source of nutrients when paired with a famous Filipino delicacy, polvoron.

Polvoron, on the other hand, is a famous snack or dessert in the Philippines. It is usually
made up of flour, powdered milk, sugar, and butter. Sometimes, roasted rice puffs (pinipig) is
added for extra taste. Nowadays, people already has different recipes with polvoron in it such as
cream polvoron, peanut polvoron, chocolate polvoron, etc. With the advance technology and
skills people have these days, banana and polvoron combined can be made possible.

A recent study from Bestlink College Philippines was conducted last 2020 to make a
healthier version of polvoron. Instead of sugar, taro was used as its replacement. The study states
that “Researchers focused on determining the level of viability of taro polvoron. Polvoron is rich
in cholesterol because it contains a considerable amount of sugar. Hence, the researchers came
up with an idea to make a healthy version of polvoron, that is, taro-flavored polvoron, to enhance
its health benefits because taro can improve digestion, lower blood sugar levels, prevent certain
types of cancers, protect the skin, boost vision, increase circulation, decrease blood pressure, aid
the immune system, and prevent heart disease, as well as support muscles and nerves. The
researchers used the experimental method since the study focuses on the assessment of the
respondents on the characteristics of taro polvoron in terms of appearance, taste, texture, and
nutritional value. After conducting the study, the RESULTS show that taro polvoron is
acceptable. Based on the data that researchers had gathered from the conducted surveys, they
found that their product is accepted by the teachers and students in Bestlink College of the
Philippines. The research study focuses on the level of viability of taro in Bestlink College of the

Another successful study in customizing polvoron recipe was conducted just this year. The
researchers used sweet potato flour and toasted rice powder as the base ingredients in making a polvoron.
The study, “aimed to develop a polvoron made from sweet potato and rice coffee as based ingredients.
This descriptive study utilize mean to determine the level of acceptability of the respondents to the
product. Each sensory quality of the sweet potato and rice coffee polvoron was rated on a Likert scale of
1 to 5. There were 150 respondents who were conveniently selected which composed of 25 household and
25 vendors from Sta.Cruz, Davao del Sur, 25 household and 25 vendors from Sulop, Davao del Sur, and
25 students and 25 faculty/staff from UM Digos College. The respondents’ assessment in terms of
palatability obtained a mean score of 4.63 (SD = 0.688), considered as the most acceptable. Texture
obtained a mean score of 3.87 (SD = 0.665), which described as more acceptable. Aroma obtained a
mean score of 4.72 (SD = 0.490), considered as the most acceptable. Color obtained a mean score of
4.68 (SD = 0.489), considered as the most acceptable and appearance obtained a mean score of 4.80 (SD
= 0.451), considered as the most acceptable. The overall average rating of the product obtained a mean
score of 4.54 (SD = 0.40). Moreover, the product described to be highly acceptable in terms of
palatability, texture, aroma, color and appearance. The data revealed that sweet potato and rice coffee
can be base ingredients of polvoron. Thus, it is recommended that the texture shall be more refined. The
product can be a good input for startup.”

Based on the two research studies presented above, it can be noted that there are many other
ingredients that can be combined with polvoron. This will now depend on the need and modification
requests for the said famous Filipino snack.
