CHICKEN FILLET RECIPE

INTRODUCTION:

As a part of our activity in Principle of Food Preparation we choose chicken


fillet to prepare.

Chicken Fillet is a tasty and crispy chicken breast fries. It is a very easy and
simple recipe with tender chicken meat, some spices, sauces and bread
crumbs. The secret of spicing up the flavor for this dish is its sauce, it
definitely add a mouth-watering feeling after your first bite.

There are many methods that can be used to cook chicken fillets. One of the
most used is frying, in which the entire piece is placed in a hot skillet and
cooked until done while developing a brown crust on the outside keeping the
inside tender.

OBJECTIVES:

One of the reason why we choose chicken fillet recipe because chicken breast
have an excellent source of vitamin B, vitamin D, calcium, iron, zinc, and trace
amounts of vitamin A and vitamin C. On the other hand we want to learn how
to prepare it and how much the investment will be if this become the business
of an entrepreneur.

INGREDIENTS AND COSTING:

 ¾ Chicken breast – 40 pesos


 1 cup flour – 15 pesos
 1 cup breadcrumbs- 10 pesos
 1 egg – 8 pesos
 1 Lemon- 20 pesos
 1 Diced carrots- 10pesos
 1 Spring onion – 10 pesos
 1/4 tbs. margarine – 5 pesos
 ½ cups of ketchup- 15pesos
 1 cup of hot sauce- 25 pesos
 1 bell pepper – 10 pesos
 T tsp. salt- 0.00

Total costing: 168 pesos

Procedures:

For chicken fillet:


1. Marinate the chicken breast using your own preference of flavor but we use
lemon, salt and pepper.
2. After marinating the chicken for 30mins, roll it into breadcrumbs, egg, flour
and coat evenly.
3. Lastly, fry them.

For sauce:
1. In a hot sauce pan put 1/4 margarine and dissolve it but be careful not to
burn it.
2. Add sauce, carrots and bell pepper.
3. Add flour
4. Add a cup of water and wait for it to boil.
5. Boil it until you get the desired consistency.
6. Add spring onions.

CHICKEN LOLLIPOP RECIPE

INTRODUCTION:

As a part of our activity in Principle of Food Preparation we choose chicken


lollipop to prepare.

Chicken lollipop is one of the most well-known and popular Chicken appetizers
in restaurants. It was introduced by a group of people who popularized Indo-
Chinese restaurants in India, but as I previously stated, everyone has their
own version of its history.

This Chicken Lollipop Recipe is generally considered as a hors d’œuvre or


appetizer dish. Though not everyone may know, this chicken dish is made from
chicken wings. In the Philippines, Chicken Lollipop is considered as a main
dish and is prepared in a simpler manner compared to the chicken lollipop
dishes of India and other countries. It is served with warm white rice.

OBJECTIVES:

We choose this recipe because this is appetizing and presentable dish which is
not as hard to prepare as you think. The only hard part we think is process of
making the lollipop shape but the cooking part is easy.

INGREDIENTS:

 4 Chicken wings- 40 pesos


 1 Egg- 8 pesos
 1 cup flour- 15 pesos
 1 tsp garlic Paste- 5 pesos
 1 tsp bell pepper- 3 pesos
 1 tsp salt- 0
 ½ cup of ketchup- 15 pesos
 1 pcs. lemon- 10 pesos
 1 cup of cooking oil- 20 pesos
 I tsp lemon- 0.00

Total costing: 116 pesos

DIRECTIONS:

1. Flatten each chicken breast half to 1/4-in. thickness; top with ham and
Swiss cheese. Roll up and tuck in ends; secure with toothpicks.
2. In a shallow bowl, combine the flour, egg, breadcrumbs, pepper; coat
chicken on all sides.
3. Cool chicken mixture. Freeze in freezer containers. To use, partially thaw
in refrigerator overnight. Heat through slowly in a covered skillet, stirring
occasionally, until a thermometer inserted in chicken reads

CHICKEN CORDON BLEU

INTRODUCTION:

As a part of our activity in Principle of Food Preparation we choose chicken


cordon bleu to prepare.

In French ''Cordon Bleu’’ means blue ribbon and that sounds weird, doesn't it?
What it has to do with but ribbon? Maybe it’s tied with blue ribbon? There is
plenty of versions. The other one says that Chicken Cordon Bleu was a winner
of the culinary completion held in France and the prize was a medal with blue
ribbon. Maybe, Louis XV of France gave this award to the chef Dubarre and
could give a name to different dishes. The other story says that this dish was
cooked in Basel while he was looking on the girls with blue ribbons in their
hair playing in the courtyard.

OBJECTIVES:

Chicken Cordon Bleu is not that exotic as it might sound. The ingredients of
the dish can be found in your fridge and the proceeds is rather simple too.
That’s why we choose this dishes to prepare because it is good and the best for
every occasion.

INGREDIENTS AND COSTING:


 2 pcs. chicken breast- 40 pesos
 4 pcs. of hotdog – 0.00
 4 pcs. sliced ham- 0.00
 8 pcs. slicesgrated cheese- 15
 ¼ cup of flour- 15 pesos
 2 pcs.eggs- 16 pesos
 1 cup bread crumbs- 15 pesos
 1 cup vegetable oil- 20 pesos
 1 tsp salt- 0.00
Total costing: 121 pesos

PROCEDURES:

1. Butterfly and flatten each chicken breast using plastic wrap. Marinated
with pepper, salt and lemon and set aside. (10mins)
2. Place ham and cheese. Roll tightly and secure using the plastic wrap.
Place in the freezer for 15 minutes.
3. Remove plastic wrap from chicken breast. Roll lightly in flour, dip in
beaten egg and coat with breadcrumbs. Set aside for 5 minutes.
4. Fry breaded chicken in preheated oil until golden brown.
5. Transfer on a cooling rack to drain excess oil.
6. Slice into serving pieces, transfer on a serving plate and top with parsley.
7. Serve with Creamy Cheese Sauce.

FRIED CHICKEN

chicken or chicken joy to prepare.

OBJECTIVES:

Well, like all other comfort foods out there, there’s something about the fried
chicken that makes it irresistible. This is perhaps similar to the Big Mumma’s
Fried Chicken Deer Park. It puts smiles on people’s faces during the worst of
times and the best of times. What’s even more interesting is that the fried
chicken’s appeal is the same even to children.
INGREDIENTS AND COSTING:

 Vegetable oil of choice, for frying the chicken- 20 pesos
 6 cups all-purpose flour- 15 pesos
 1 tablespoons salt- 0.00
 2 tablespoons ground black pepper- 2 peso
 1 egg- 8 pesos

Total costing: 85 pesos

PROCEDURES:

1. In a large bowl, beat the eggs. In another bowl, combine the salt, pepper,
garlic powder and paprika to make a seasoned salt. Add the flour to a
third bowl.
2. Prepare the chicken by first seasoning each piece of chicken to your taste
with the seasoned salt. Then dip each piece in the egg and drag through
flour until coated well.
3. Fill a large pot or deep fryer half full with oil and heat to 350°F.
4. Place the chicken parts in and fry until dark and crisp.
5. Remove from heat, let sit for 5 minutes to cool and enjoy!
