AND EQUIVALENTS

Learning Outcomes:
After reading this Information Sheet, you must be able to:
1. identify the abbreviations and symbols;
2. explain the conversion factor; and
3. convert weights, measures and equivalents.

Overview:
Conversion is one of the useful skills in cooking using recipes around
the world. Most recipes in commercial kitchens express the ingredients by
weight, while most recipes intended for home cooks express the ingredients by
volume.

Table of Measures and Equivalents

Conversion of °F to °C
Problem: How many degrees Celsius should an oven be set if the recipe
required temperature is 310 °F?

Solution: °C = (°F -32)/1.8 Solution: °C = (°F -32) * 5/9


= (310 – 32)/1.8 = (310 – 32) x5 ÷9
= (278)/1.8 = (278) x5 ÷9
= 154.44°C = 1390 ÷9
Conversion of °F to °C = 154.44°C
Problem: How many degrees Celsius should an oven be set if the recipe
required temperature is 250 °F?

Solution:
°C = (°F -32)/1.8 °C = (°F -32) * 5/9
= (250 – 32)/1.8 = (250 – 32) 5÷9
= (218)/1.8 = (218) 5÷9
= 121.11 °C = 1390÷9
= 121.11 °C
Conversion of °C to °F
Problem:The boiling point of water is 100° Celsius. What is this value on the
Fahrenheit scale?

Solution: °F = (1.8 x °C)+32 Solution: °F = (°C * 9/5) +32


= (1.8 x 100)+32 = (100 x9 ÷5)+32
= (180) + 32 = (900 ÷5) + 32
= 212 °F = (180) + 32
= 212°F

Conversion of °C to °F
Problem: The boiling point of water is 180° Celsius. What is this value on the
Fahrenheit scale?

Solution:
°F = (1.8 x °C) + 32 °F= (°C * 9/5) + 32
= (1.8 x 180) + 32 = (180 x 9÷5) + 32
= (324) + 32 = (1620÷5) + 32
= 356 °F = (324) + 32
= 356 °F

5.65 kg x 1000grams = 5.65 x 1000grams = 5,650 grams

2. Convert 80 oz to lb.
1 lb = 16 oz
80 oz x 1 lb = 80 lb = 5 lb

3. Convert 60 kg to lb.
1 kg = 2.2 lb
60 kg x 2.2 lb = 60 x 2.2 lb = 132 lb

B. Conversion of Solid measurements


Example:
1. Convert 6 cup to Tbsp.
1 cup = 16 Tbsp
6 cup x 16 Tbsp = 6 x 16 Tbsp = 96 Tbsp

2. Convert 10 pinch to tsp.
1 pinch = 1/8 tsp or 0.125 tsp
10 pinch x 0.125 tsp = 10 x 0.125 tsp = 1.25 tsp

3. Convert 25 g to tsp.
1 tsp = 5 g
25 g x 1 tsp = 25 tsp = 5 tsp

C. Conversion of Liquid Measurements

1. Convert 3500 ml to L.
1 L = 1000 ml
3500 ml x _1 L__ = 3500 L = 3.5 L

2. Convert 6 pint to cup


1 pint = 2 cup
6 pint x 2 cup = 6 x 2 cup = 12 cup

3. Convert 4 cup to ml
1 cup = 240 ml
4 cup x 240 ml = 4 x 240 ml = 960 ml
