Keto Recipe Cards

Berry Crumble – not sure about this it’s a bit long

For the berries:


4 cups of berries
¼ cup of Sweetest Ding
1 tsp xanthan gum
½ tsp cinnamon

Turn your oven to 190 fanbake. If your berries are frozen, thaw them in the microwave first.
Stir the Sweetest Ding, xanthan gum and ½ tsp cinnamon together. Toss through the berries
until evenly combined. Tip berries into the base of a casserole dish.

For the crumble:


2 cups of Perfect Porridge
2 tbsp Sweetest Ding
2 tbsp melted coconut oil or butter
1 tbsp fibre syrup
1 teaspoon cinnamon

Mix all the crumble ingredients together until well combined and clumps together when
squeezed. Scatter crumble over the berries, leaving some lumps here and there. Bake for
20-30 minutes or until top is golden brown. Serve with natural yogurt or keto ice cream.

Peanut Butter Cookies

½ cup peanut butter


½ cup butter or olivani
½ cup Sweetest Ding
½ tsp baking powder
1 cup Perfect Porridge
1 egg
¼ cup dark chocolate (optional)

Turn your oven to 175 fanbake and line your cookie trap.
Cream the peanut butter and butter / olivani until very pale and fluffy.
Beat in the Sweetest Ding, baking powder and egg until well combined.
Mix in the Perfect Porridge. Fold through the dark chocolate pieces if using.
Bake until golden brown. Leave cookies on the tray to cool and harden.

Chocolate Fudge Balls

Exactly the same as cacao energy balls but remove the cacao nibs and and the dessicated
coconut at the end and add 2 tbsp reduced sugar cranberries to the ingredients please.

Pizza Scrolls
Exactly the same as ham cheese scrolls but include Pizza sauce or tomato paste in the
ingredients and in the directions with the mayo.

Ama’s Zucchini Slice

Ingredients:
4 rashers bacon, diced (optional)
1 onion, diced
375 g / 2 cups grated zucchini
1 cup grated tasty cheese
1 cup Daily Bread
5 eggs, lightly beaten
125 ml melted butter or coconut oil

Put everything except the bacon in the food processor. Blend until coarsely chopped (not
mush). Panfry the chopped bacon. Fold bacon pieces through through the slice batter if
using. Season and add flavours like nutmeg, lemon zest or fresh parsley if you like. Tip into a
lined tray and bake at 180 until the middle is cooked through.
