Adobong Pula, also known as "red adobo," is a Filipino dish made with red ingredients such as pork,

Adobong Pula:

Ingredients:

500 grams of pork belly, cut into cubes

3-4 cloves of garlic, minced

1 medium-sized onion, chopped

3-4 pieces red chili peppers (siling labuyo), chopped (adjust to your spice preference)

2 tablespoons shrimp paste (bagoong alamang)

1/4 cup vinegar

1 tablespoon cooking oil

1/2 cup water

Salt and pepper to taste

Instructions:

Sauté the pork: In a wide, heavy-bottomed pan or a wok, heat the cooking oil over medium heat. Add
the pork cubes and sauté until they start to brown.

Add garlic and onions: Once the pork is slightly browned, add the minced garlic and chopped onions.
Continue to sauté until the onions become translucent.

Add shrimp paste: Stir in the shrimp paste (bagoong alamang) and mix well with the pork, garlic, and
onions. Continue to sauté for a few minutes.

Pour vinegar: Pour in the vinegar and allow it to simmer for a few minutes to remove the strong aroma.
Stir occasionally.

Add water: Add water to the pan, and season with salt and pepper to taste. Stir well.
Simmer: Reduce the heat to low, cover the pan, and let the pork simmer for about 30-40 minutes or until
it becomes tender. Add more water if necessary to prevent it from drying out.

Add chili peppers: Just before serving, add the chopped red chili peppers to give the dish its spiciness.
Stir well.

Serve: Adobong Pula is traditionally served with steamed rice. The combination of the red chili peppers
and shrimp paste gives it a distinctive, spicy, and savory flavor.
