Fried mee, often referred to as fried noodles, is a popular dish in many Asian cuisines.

There are
numerous variations of this dish, so I'll provide a basic recipe for a simple vegetable fried noodles.
You can modify it by adding your preferred protein or additional ingredients.

Vegetable Fried Mee (Fried Noodles):

Ingredients:

 8 ounces (about 225g) of fresh or dried egg noodles or rice noodles

 2 tablespoons vegetable oil
 2 cloves of garlic, minced
 1 small onion, thinly sliced
 1 cup of mixed vegetables (e.g., bell peppers, broccoli, carrots, snap peas)
 2 tablespoons soy sauce
 1 tablespoon oyster sauce (vegetarian oyster sauce for a vegetarian version)
 Salt and pepper to taste
 Optional protein: Cooked chicken, shrimp, tofu, or scrambled eggs
 Optional garnishes: Sliced green onions, fresh cilantro, or crushed red pepper flakes

Equipment:

 Large wok or skillet

 Wooden spatula or tongs
 Pot for boiling noodles
 Colander
 Cutting board and knife

Instructions:

.
Prepare the Noodles:
.
 If using fresh noodles, you can skip this step. If using dried noodles, follow the package
instructions to cook them until they are al dente. This typically involves boiling them for
about 3-5 minutes.
 Drain the noodles in a colander and rinse them under cold water to stop the cooking
process. Set them aside.
.
Heat the Oil:
.
 Heat the vegetable oil in a large wok or skillet over medium-high heat.
.
Sauté Aromatics:
.
 Add the minced garlic and sliced onions to the hot oil. Sauté for 2-3 minutes until the
onions are translucent and the garlic is fragrant.
.
Stir-Fry Vegetables:
.
 Add the mixed vegetables to the wok. Stir-fry them for about 3-4 minutes until they begin
to soften. You can add a splash of water to help create steam and cook the vegetables
faster if needed.
.
Add Protein (Optional):
.
 If you're including protein like cooked chicken, shrimp, tofu, or scrambled eggs, add it at
this point and stir-fry until it's heated through.
.
Add Noodles:
.
 Add the cooked and drained noodles to the wok. Toss and stir-fry everything together.
.
Add Sauces:
.
 Pour the soy sauce and oyster sauce over the noodles. Stir-fry to combine and coat the
noodles evenly. Taste and adjust the seasoning with salt and pepper if necessary.
.
Serve:
.
 Transfer the fried mee to serving plates. Garnish with your choice of sliced green onions,
fresh cilantro, or crushed red pepper flakes, if desired.

Enjoy your homemade vegetable fried mee! You can customize this dish with your favorite
ingredients and adjust the sauce to your taste.
