Executive Summary
Bento is a popular single-portion boxed meal in Japan. Bento, which means “convenience” in Japanese,
originated in China. Bento boxes have been around since the 16th century, and it has been used in Japan
since the early 13th century. Farmers, hunters, and warriors in Japan carried their meals to the fields in
sacks or boxes throughout the 5th century. The design, which was inspired by a farmer’s seed box, usually
includes several compartments for various foods such as rice, vegetables, and fish.
Furthermore, bento spread to other countries such as China, Korea, the Philippines, and others. The meals
in the box were chosen by each country, but the concept of a varied, balanced lunch remained consistent.
Bento then grew in popularity as a food for social and cultural gatherings such as festivals, plays, and
religious holidays. The boxes themselves can be made of lacquered wood or basket material.
Bento was transformed from a meal to a luxury item when the aluminum bento became popular in Japan
during the Taisho era, which began in 1912.
Bento, which means “lunch box” in Japanese, is a boxed meal that is ideal for anyone, especially those
looking for an all-in-one balanced meal with a nutritious portion in one serving. Because it is a pre-
assembled meal, the customer can eat it whenever and wherever they want. The consumer can eat healthy,
guilt-free meals without needing to spend too much time preparing them.
This bento box has an artistic and unique design. Instagrammable presentation that will pique anyone’s
interest. We will also use eco-friendly packaging, such as paper boxes, paper bags, wooden spoons, paper
straws, and paper cups, to avoid any environmental consequences, such as the market’s widespread use of
plastics, and to persuade customers to preserve our environment’s quality and safety, as well as to protect
the Earth from any major harmful problems.

Reaching the satisfaction of our valued customers is our outmost priority. To provide them with quality and
great food that will satisfy their cravings and taste buds while remaining healthy and guilt-free is our mission.

While to become one of the well-known restaurants in the Philippines that serves and offers nutritious food
and service in the next ten years as our vision.

BenTo Go will be a Contemporary Casual Restaurant in the Philippines’ food service sector. Furthermore,
Revfine defines Contemporary casual restaurants as restaurants similar to casual dining restaurants, but
with a greater emphasis on aesthetics in order to appeal to modern customers who may wish to photograph
their meals and dining experience for social media. Many modern casual restaurants have a niche appeal
within the restaurant industry, with a focus on sustainability, obscure food, modernity, and appealing to
younger customers.

CHAPTER I: INTRODUCTION

A. Short Historical Background

Bento is a single-portion boxed meal popular in Japan. Bento originated in


China that means "convenience" in Japanese. It has been used in Japan since the early
13th century, and bento boxes have been around since the 16th century.

Throughout the 5th century, farmers, hunters, and warriors in Japan carried their meals
to the fields in sacks or boxes. The design, which was inspired by a farmer's seed box,
typically has several compartments for different foods such as rice, vegetables, and fish.

In addition, bento then expanded to other countries, including China, Korea,


the Philippines, and others. Each country chose its own meals for the box, but the
concept of a varied, balanced lunch remained consistent. Bento was derived from the
Southern Song Dynasty slang phrase biàndng, which means "convenient." Then, bento
became a popular food for social and cultural gatherings such as festivals, plays, and
religious holidays. The boxes themselves can be made of basket material or lacquered
wood. Bento was transformed from a meal to a luxury item when the aluminum bento
became popular in Japan during the Taisho era, which began in 1912.

Following World War I, Japan faced economic disparities as its industry expanded as a
result of its newfound power in Asia, while farmers and other traditional laborers faced
uncertain crops. Japan's youth have inherited a wealth disparity. The once-simple bento
could no longer be afforded by poor families; instead, wealthy parents sent their children
to school with gleaming lunch boxes carefully filled with nutritious food.

"My mother packed my lunch box with miniature, traditional porcelain dishes and cups
because she was older than the mothers of the other children." Gaku Homma's Folk Art
of Japanese Country Cooking describes the other children's lunches as "modern lunch
boxes with jelly sandwiches and wieners sliced to look like bunnies." The start of the
school meal program brought his mother some relief.

by Japanese-American sugar plantation workers.

much fun to Instagram as they are to eat. Bento recipes—ideas for forming rice balls

and other items. In order to supervise the cooking and servings, professional chefs, as well as assistants
and other employees, will be required in the company.
In addition, the company will provide kitchen supplies and tools for both food preparation and storage. In this
case, the sector relies on a combination of human and machine labor to create the delectable BenTo Go
menu. To meet our customers' costly nutritional needs and desires, the company will take care to produce
fresh, healthy, and high-quality food that will exceed their expectations.
As a result, inventory will be tracked so that the company knows when to place orders and how much of
each ingredient is needed. Customers can expect their BenTo Go bento boxes to include a variety of
mouthwatering and fresh vegetables, tender meats, and a comprehensive package for a gourmet meal that

Grow, Glow food in every portion and deciding a fruit-based beverage of their choice to keep the meals
nutritious and guilt- free.
BenTo Go will be accessible 24 hours a day, seven days a week, so that anyone can order and dine at any
time, including call center agents and other workers who work late at night and students who need to get to
school early in the morning. We will also provide delivery options for those who are unable to visit our store
in person. We will create an easy-to-reach contact number for orders and concerns, as well as online
platforms in Facebook and Instagram for promotions and updates.

We will give free internet with a fast connection for our dine-in customers, as well as a separate section of
the restaurant for those who want a quiet and peaceful environment for studying, business meetings, or
dinners, separate from customers who simply want to chit chat with their family, friends, or acquaintances.

Manufacturing / Production process

Input

Order and Delivery - Our staff will use an automated cash handling system to register
and calculate transactions at the point of sale. The individual can choose from the menu
provided inside the business premises. A number is then given to indicate that their
order is already in process. Meanwhile, our shop can be found on the Food Panda app
for easy delivery for buyers who live a long distance away. It employs a Global
Positioning System to track the buyer's location and to ensure smooth transactions with
all of our menu options available in the app. The delivery may take 20-30 minutes to
arrive at their address.

Process

Washing - All vegetables and fruits are washed to ensure freshness and to remove any
unwanted or unnecessary ingredients.

Cutting - Vegetables, fruits, meats, and seafoods are then sliced to a more bite-size
portion and any unnecessary stems and leaves are removed.

Seasoning - all meat and seafood are then well seasoned for cooking, as are the
vegetables and fruits required for the pasta and other greens that are served fresh and
ready to serve.

Cooking - the meat and seafood are all cooked in a standing oven in a frying pan,
skillet, or deep fryer until the color changes to medium or medium rare, while the shrimp
are cooked until the color changes to orange. For the salmon and calamari, we wait for
it to turn a golden brown color before serving it with whatever dish pairings the customer
prefers.

Beverage - Any of the following methods may be used to extract a specific food product
from fruit, cereals, or liquids: crushing, pounding, or grinding, extraction by heat (direct
or indirect), extraction by solvents, drying, and filtration. Crushing, and grinding are
usually preparatory operations, such as crushing coffee beans or slicing lemons.

Output

Serving - Each dish is served on an assorted bento plate with three portion meals. One
for the go foods segment, one for the glow foods segment, and one for the grow foods
segment.

Packaging - For environmentally friendly packaging and recycling, each bento box is

placed in a cardboard box. We will provide our customer with a paper bag to make

Ingredient Specifications

Every production process starts with sourcing the finest raw materials. The
quality of the final product depends entirely on the quality of the raw materials.
Therefore, it's crucial to have a list of specifications for each element utilized in
production.

These specifications include those for purity, identity, moisture content, and other
factors. Moreover, the right first step to obtaining good quality control should understand
where each batch of ingredients was obtained from and in what condition.

Approved Supplier List

In addition to ingredient specifications, each material must have an approved


supplier list. The list will be reviewed and updated on a regular basis.

The raw material's name, supplier's name, address, and code number should all be
included on the list. It is the Procurement team's responsibility to collaborate with
Quality Assurance to create, review, and update this approved supplier list.

Incoming Goods Inspection
