ABSTRACT

The study was carried out to evaluate the proximate compositions of orange-fleshed

sweet potatoes (OFSP) leaves using different treatments. The samples were cultivated, harvested

after three months. Then collected and subjected to treatments such oven drying, air drying,

ensiling and blanching while fresh samples were collected for composition. All analysis were

carried out in triplicate for all determination and the result was expressed as means of triplicate

determination ± standard deviation. The results obtained from the proximate analysis showed

that moisture content of oven-dried (A1), ensiled (B1), blanched (C1), air-dried (D1) and fresh

sample leaves (E1) were 10.11, 10.38, 14.59, 10.49 and 67.47%, respectively. The protein

content of all the samples were significantly different (P≥0.05) ranging between 10.63 and

35.60% with sample E1 having the least value of 10.63 % and C1 having the highest value of

35.60%. The carbohydrate content of all the samples ranged between 10.63 and 35.60% with

sample E1 having the least value of 10.63% and C1 having the highest value of 35.60%. The

fibre content of all the samples were significantly different (P≥0.05) with values ranging between

2.29 and 45.17%. The ash content of the samples ranged between 4.62 and 12.33% with sample

C1 having the least value of 4.62 % and B1 having the highest value of 12.33%. The fat content

of all the samples were significantly different (P≥0.05) ranging between 2.74 and 5.58% with

sample E1 having the least value of 2.74% and B1 having the highest value of 5.58%. The results

of the study also showed that oven dried, ensiled and blanched samples had higher percentage of

proximate composition needed to supply the essential nutrient needed both for human and animal

when consumed.farmers should be encouraged to dive into propagation and production of OFSP

as it is a staple crop loaded with many nutritional and medical benefit for human and animal use

especially when they are subjected to blanching treatment as it tend to have higher value of

proximate composition.
