Introduction
Pan de muerto or pan de los muertos, is a dessert prepared in Mexico in the weeks before the Day of the
Dead. It is based on a simple recipe for sweet bread with aniseed, which varies by region.
Ingredients:
FLOUR 00. 390 g
MILK. 120ml
SUGAR. 90 g
BUTTER. 75 g
EGG YOLK. 2
EGG. 1
ORANGE PEEL. 1
Legend has it that its origin is inspired by a pre-Hispanic ritual, in which the beating heart of a girl was
placed in a pot with amaranth, as a sign of gratitude towards the gods. And that, inspired by this
sacrifice, during the Conquest, the Spanish would then create its first version, using wheat flour to form
the heart and sugar dyed red to make it look like blood.
