Saaumyaa’s Dahi Bhindi

Dahi Bhindi is Rajasthani dish, spiced okra cooked in a yogurt sauce. The dish is spicy, tangy, slightly sweet and goes well with
chapatti, parotta, bread and rice.
Ingredients • 5 pcs of Okra (Ladies finger)
• ½ cup of Yogurt
• 1 tablespoon of gram flour powder
• 1 cup of water
• Spices : mustard, cumin, fenugreek, curry leaves, coriander leaves, ¼ teaspoon of turmeric powder,
½ teaspoon of coriander powder, ½ teaspoon of garam masala, ¾ teaspoon of chili powder
• ½ big onion diced & 3 cloves of garlic
Cooking Step #1 : fry okra on oil, add salt. Fry until okra turn dark.

Step #2 : Make a yogurt paste of ½ cup yogurt, 1 tablespoon gram flour powder, with 1 cup water.

Step #3:
• Fry the spices on oil (mustard, cumin, fenugreek)
• Add garlic and onion. Fry until onion turns golden brown
• Add the powders (¼ teaspoon turmeric powder, ½ teaspoon coriander powder, ½ teaspoon
garam masala, ¾ teaspoon chili powder)
• Ensure the paste is well cooked and masala smell is gone
• Add okra to cook with the paste
• Pour the yogurt paste
• Cook on low flame for 4 minutes
• Add salt to taste. Garnish with coriander leaves and curry leaves
• Serve immediately after cooking
