Malwani Chicken Curry
Steps
1. Clean and cut chicken in small pieces. Wash and apply salt ,
turmeric & malvani masala. Slice onions, grate coconut & dry
coconut. Clean & chop ginger & garlic. Chop coriander
2. Heat about 1 ltr of oil. Fry onions to a light brown colour. Remove
& keep aside. Fry coconut in the same oil to a light brown colour.
Keep aside. Fry dry coconut in the same oil. Cool it down and
grind to a smooth paste. (1)
3. Heat about 200 ml of oil, saute ginger, garlic. Add spices [ from
poppy seeds --- cinnamon ] grind to a smooth paste. (2)
4. Heat remaining oil. Add paste (1) and fry well. Then add chicken
sear well.add paste (2), saute. Add water & cook until chicken is
tender & gravy is thick.
5. Serve hot garnished with green coriander along with malwani
vadas
