You will be responsible for taking drinks orders, getting the drinks, processing payment, and clearing down of these tables. . Take a check pad and a pen. Note down your table numbers and any information on the board . Check over your tables to make sure everything is okay. Does your table have clean glasses, bottle openers etc. When your guests enter the room and sit down, begin pouring wine and water if they have it. White wine is poured into the small wine glass, red is poured into the large wine glass and water goes into any glass that is vacant. Next job is to take a drinks order. Approach the table and nicely ask for the table host. The table host will usually be paying for the entire table drinks so he/she will be your main contact. Take the drinks order by going around the table and writing the order on the check pad, then ask the table host how he/she is paying. Payment and bills will be explained in the next section. . Getting the drinks - there are two main areas to get drinks from. If bar drinks have been ordered e.g. pints, spirits, single bottles of beer or soft drink etc, you must go to the bar and hand over the white copy of your written check. When at the bar, please queue and act professionally. For drinks like bottles of wine/water or buckets of beer then you will get them from Dispense. Some drinks orders will require trips to both bar and Dispense. If the white slip from your order has been taken by the bar and you need to get something from Dispense, hand the pink copy to them. 7. Whenever your tables have drinks and are happy, and payment has been processed, it's time to clear down any empty glasses or bottles. It's important to keep on top of your tables for empty glasses as they can build up and make the table look untidy. Empty glasses are taken to the glasswash area and placed in the racks in order of glass type. All glass racks have to be of the same type and not mixed. Bottles go into the large bottle bin. Payment types Cash When a table is paying cash, wherever you go to get drinks you will be given a till receipt, give the receipt to the host or whoever placed the order with you and take the cash to wherever you got the drinks. Card When a customer would like to make a one-off card payment, take the bill to Dispense and a member of staff will show you how to process the machine. Account A table host may want to start a tab for their drinks instead of paying one at a time. In this case, you must go to Dispense and let the Cashier know that your table want to start a tab. Take the card machine to the table to do a Pre- Authorisation of a credit card. This means that a certain amount which is normally £500, is reserved on the customer's account. When the pre-authorisation has been set up, write the table number at the top of the merchant copy of the receipt from the card machine and give to the cashier. When doing a drinks order on an account, it's imperative to get the docket signed by the table host. If there is no signature, then no drinks will be given by the staff. At the end of the evening, the host will have to pay off their tab with a Completion. Approach the host and ask of they would like to close their tab. If they do, make the cashier aware and they will inform of the next steps. Room Charge To charge to a room, note the customer's name, room number and signature on the drinks order and get them to sign. Grooming standards You are expected to turn up wearing a long-sleeved black shirt buttoned to the top, black tie, long black trousers, black socks, and smart black shoes, If you have long hair, it should be tied back neatly. Nail varnish is not permitted and should be removed before work. Jewellery must be kept to a minimum. Faces to be kept clean shaven or with a neatly shaped beard or moustache. Writing a check When writing an order on a check pad it must be neat and have the following - The drinks order, the payment type, table number, the name of the server and if it's to an account, it must have the table host's signature Example of a written check Table number, method of payment, drinks order, guest signature (if account or room charge), server initials Using The Card Machine New Machine One offmayment Press white button, go 0 "SALE".
