QUESTION ONE
How you describe a catering industry. State your answers with appropriate examples. (20 marks)
ANSWER:
Catering industry is any establishment or company that offer accommodation, food and beverage that
far away from home. There are three segments for the catering industry, commercial segment, non-
commercial segment and military segment.
Commercial segment that traditionally considered for profit operation, such as independent caterers,
home-based caterers, hotel caterers and private club catering operations.
Commercial segment such as home-based caterer that offer food and beverage service in their house to
gain profit, this kind of caterers they no need to spend to much cost to get the equipment and production,
they also no need to get license from the local health department and no need to pay taxes and also no
need to rent a restaurant to start a catering business.
Non-commercial segment that more than non-profit operation such as hospital caterers, university and
college caterers and high school caterers.
Non-commercial such as hospital catering is the hospital offer the catering service in the hospital for all
of the staff in the department in the hospital and offer to the passion that wanted to get some dishes in
the hospital.
Military segment is encompassing all of the military food and beverage service for the armed and
diplomatic.
Catering event can categories by two events, which is special event and corporate event, this two
catering event also can category by on-premise catering and off- premise catering.
On-premise is a catering that can held into a restaurant within a reach, such as hospital catering,
university and college caterers, high school caterers and social organization. On-premise catering
that have a lot of advantages like that offer full service catering to the client whatever you only
need the money to pay it. That also have some disadvantages for on-premise catering, which is
they need higher cost to spending for the service and food and beverage, they also have to pay
higher cost for the insurance that include in the service.
However, off-premise catering is a establishment that use outside of the location to offer the food
and beverage service, such as food truck, convention and wedding and supermarket. Off-premise
catering use the other department to offer the food and beverage service so they can spend lower
cost than on-premise catering to doing the catering serving. They can also increase their profit
with using this caterers and gain more customers base from this off-premise catering.
