II Tempeh owes its unique flavour to a long and demanding process in producing 10
it. First, soybeans are washed, brought to a boil, soaked overnight, hulled,
cooked for 45 minutes to 1 hour, drained, and cooled. Then, they are mixed
with a fungus known as Rhizopus Oligosporus, commonly known as ‘ragi’
tempeh. Next, the mixture is typically wrapped in banana leaves or plastic bags
and fermented for 24 to 48 hours. During fermentation, the beans bind together 15
with mushroom mycelium that grows from the starter fungus and become a
dense, smooth network of fibres that transform the tempeh into a firm and solid
cake. Thus, the lengthy tempeh-making process has made tempeh a food that
is unique and highly nutritious.
III Tempeh is recognised as one of the superfoods in the culinary world. It is the 20
world’s richest plant-based source of vitamin B12 and is a complete source of
protein. Tempeh is sometimes used as an alternative to meat among
vegetarians because it is rich in fibre, iron, and essential amino acids. These
nutrients are also highly digestible compared to nutrients in other soy-based
products because the fermentation process enables nutrients in tempeh to 25
become more soluble. This aids the process of nutrient absorption in the body
without producing much gas in the stomach. In addition, tempeh is low in
saturated fat, making it an ideal meal for those who are concerned about their
cholesterol level. Hence, the status of tempeh as a superfood is undeniable.
IV Aside from being nutritious, tempeh has its winning points in terms of taste as 30
well. Tempeh is mildly savoury with a nutty, earthy flavour that is often
described as similar to meat and mushrooms much to the delight of meat lovers
and vegetarians alike. The structure and water content of tempeh make it a
neutral base, allowing it to act like a sponge, absorbing flavours from other
ingredients during the cooking process. Therefore, tempeh can be prepared in 35
different cooking ways such as deep-fried, pan-fried, battered, stir-fried, grilled,
steamed, boiled, and simmered. The numerous ways of preparing this dish
make tempeh a versatile ingredient.
V To date, tempeh can be found in recipes across multiple cuisines and food
cultures. From the most sophisticated fine-dining restaurants to the humble 40
stalls by the roadside have used tempeh as a staple in their menu. Tempeh
has definitely won the hearts of many food lovers because of its flavour and
health benefits. This cultured soy-based protein is gradually gaining the
recognition and fame it deserves in the culinary world.

III The effort to produce content can lead to burnout among TikTok influencers.
They are encouraged to upload videos at least 1 to 3 times every day. Although
the average TikTok videos are less than one-minute-long, producing attractive
content portfolio that helps boost user engagement is a complex process. It
takes a significant amount of time and effort to create aesthetic and interactive 35
videos. Influencers feel the need to upload videos frequently as they fear their
popularity will decline. This contributes to burnout. In fact, various influencers
have articulated their intention to quit TikTok. One of the most prominent
influencers on TikTok with over 136.8 million followers, Charli D'Amelio, who is
only 17 years old, stated that the burnout has made her lose creativity and 40
interest in TikTok.
IV Content theft is another important issue that troubles many TikTok influencers.
Although creative freedom is given to all influencers, some may resort to
replicating and reusing content without gaining rightful permission and crediting
the source. The awareness of content theft among influencers is still relatively 45
low as not many cases have been reported. Vipasha Malhotra, a Delhi-based
musician and stand-up comedian, explains that her audio clips were circulated
by TikTok users and influencers outside India without her knowing. Therefore,
stricter policies on content theft need to be implemented in order to safeguard
the influencers’ rights and encourage influencers to be responsible when 50
producing content.
V Influencers put their personal life and identity into the spotlight while promoting
a brand on TikTok. This could compromise their security as many influencers
tend to overlook the safety of their private data when they share their personal
lives to their followers. This action may put themselves in danger when their 55

easily dig up more sensitive information on the influencers as their face is
