Food Trucks
Food trends are widespread changes in food preferences. Some trends may be more of a fad while some
become long lasting and at times a permanent fixture in the culture of food. Trends can be set by social
media influencers, chefs or food enthusiasts sharing their passion. Food Trucks are one such trend.
Food Trucks have been growing increasingly popular on the Australian event scene for several years now.
Modern food trucks provide an array of eclectic, gourmet options at a cheaper price than restaurants.
Moving beyond just theme parks and food festivals, these businesses have grown and become a financial
force within the food industry.
You can see them parked at sites across major cities adding a tasty option to culinary hot spots. Their food
is restaurant quality and many experienced chefs have left the stuffy confines of top restaurant kitchens
for the open road cooking their favourite foods! Food trucks for weddings, parties and other events are a
great touch to bring a casual vibe.

Scenario
Food trucks are common throughout the world. Most often associated with street food; they provide
affordable, filling food that is relatively simple to prepare. Food trucks have grown in popularity all around
Australia. Perth’s food truck scene is showing no signs of slowing down and we would like to get involved in
this new trend.

You have been asked by your local Council to design a food truck to operate at local ovals around the
district each week. Firstly, you need to research a variety of different food trucks and investigate what
dishes they offer. Secondly, you will need to design your food truck – signage, menu items, finally you will
need to identify what equipment will be required to successfully operate your truck.

The council has asked that you prepare a suitable dish for your chosen food truck cuisine. It must be
suitable to be eaten sitting or standing and should only be enough for one portion. It needs to be able to
be prepared and served within one hour. Because of the space constraints within the truck you will need to
be able to work safely and hygienically, without supervision.

Task Components & Constraints


With a partner you are required to complete the following:
1. Investigate three different food truck cuisines, include the following information
o A description of the cuisine
o List and describe 3 dishes that are suited to that cuisine and suit being served from a food
truck.
2. Design your own Food Truck
o Decide on the cuisine for your food truck.
o Design a menu with 5 different dishes, including one dessert. Each menu item must have a
well written description of the dish and an explanation of why this is a suitable dish for a
food truck, consider cost and time restraints.
o Design the signage for your Food Truck

3. Identify and explain three challenges/considerations faced by food truck owners.

4. Write a design brief that reflects the reason for your food truck. Your brief should include the
what, who, when, why and where based on the scenario above.

 All aspects of this task are to be completed with a partner.

truck. Use creativity and colour to design your truck sign.
